Try this version of stuffed peppers. I made some a couple of weeks ago and my wife said they were the best she'd ever had. I gave the recipe to a friend who tried it. She told me that even her super picky middle child asked for seconds.Colorful Stuffed Peppers
1 pound ground Beef
2 Cups Salsa
1 Cup Frozen Corn
1 ¼ Cup Water
¾ Teaspoon Ground Cumin
¾ Teaspoon Dried Oregano
1 Teaspoon Salt (I think it needs more)
½ Teapoon black Pepper (I think it needs more)
½ Cup uncooked Instant Rice (I used 1 ½ cup cooked rice)
1 Cup (4 ounces) Shredded Cheddar Cheese - divided
4 medium Green Peppers, halved lengthwise
Sliced canned Jalapeno Peppers for garnish, optional
Crumble beef into a 2-qt microwave-safe dish. Cover and microwave on high for 2 minutes; stir. Cook on high 1-2 minutes or until the meat is no longer pink; drain. Stir in the next seven ingredients.
Cover and heat on high for 3 minutes or until bubbly around the edges. Stir in rice and ½ cup cheese. Cover and let stand for 5 minutes; Stir.
Spoon ½ cup of meat rice mixture into each pepper half. Place on a 12-inch round microwave-safe plate. Cover loosely and cook on high for 8-10 minutes or until peppers are tender, rotating a half turn once. Cover and let stand for 4 minutes. Sprinkle with remaining cheese; top with jalapenos if desired.
Yield: 4 Servings
Editor’s Note: This recipe was tested with an 850-watt microwave.
In addition to the stuffed peppers, just use them in things like spaghetti sauce, meat loaves, or anything else that calls for bell pepper. I have severeal gallon bags full of sliced bell peppers in my freezer. Just pull them out, break them into smaller pieces and toss in the sauce.
