Chicken Wild Rice Soup
Preparation time: 30 minutes
Cooking time: 15 minutes
You Will Need
1 package (6 ounces) long grain and wild rice mix
1/2 pound boneless skinless chicken breasts, cubed
1/2 pound sliced fresh mushrooms
1 1/4 cups chopped onions
2 garlic cloves, minced
1 tablespoon canola oil
2 cans (14 1/2 ounces each) chicken broth
1/2 teaspoon dried tarragon
1/4 teaspoon dried thyme
1/8 teaspoon pepper
2 tablespoons cornstarch
1 can (12 ounces) evaporated milk
6 tablespoons sliced green onions
What to Do
1. Prepare rice mix according to package directions, omitting butter. Meanwhile, in a large saucepan, sautÃ© the chicken, mushrooms, onions and garlic in oil until chicken is no longer pink and vegetables are tender.
2. Add the prepared rice, broth, tarragon, thyme, and pepper; bring to a boil. Combine cornstarch and evaporated milk until smooth; stir into rice mixture. Return to a boil; cook for 1-2 minutes or until slightly thickened. Garnish with green onions.

Original recipe yield: 4 servings
2 (6 ounce) packages uncooked long grain and wild rice
2 cups cooked, cubed chicken breast meat
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4 ounce) jar diced pimento peppers, drained
1 cup shredded Cheddar cheese, divided
Preheat oven to 300 degrees F (150 degrees C). Prepare rice according to package directions.
In a medium bowl, toss together the cooked chicken, prepared rice, soup, pimientos, and onion. Transfer to a lightly greased 9x13 inch baking dish. Stir in 1/2 cup of the cheese, then sprinkle the other 1/2 cup of cheese on top.
Place in preheated oven briefly, to melt.

1/3 c. wild rice
1/4 c. butter
12 oz. pkg. of fresh mushrooms (or can)
1/4 c. flour
2 c. chicken broth
2 c. half & half (I use 2 tbsp. butter plus 1 c. milk minus 2 tbsp. milk is equal to 1 c. of half & half)
I also add water chestnuts, carrots, and celery. I also seem to add alot more rice than what the recipe calls for.
Cook wild rice until tender. Melt 1/4 cup butter in saucepan. Stir in the flour and half & half and stir constantly until thick. Brown onion and sliced mushrooms in fry pan. Add. Add cooked wild rice.
WILD RICE SOUP WITH CHICKEN

3 c. cooked wild rice
1 c. chopped celery
1/2 c. chopped green pepper
1 c. minced carrot
1/2 c. chopped onion
Dash of garlic powder
Salt and pepper
1/4 c. butter
1 (8 oz.) can mushrooms
2 cans cream of chicken soup
2 cans cream of mushroom soup
1 1/4 c. chicken broth
4 c. chicken, cooked and cubed
1 (4 oz.) pkg. slivered almonds
Milk - for desired consistency
Prepare wild rice using "Basic Oven Method" (below) with water and bouillon. Meanwhile, stir together soups and add at least 1 cup chicken broth. Set aside.
Melt butter and saute celery, mushrooms and carrot; cook 1 minute more. Combine sauteed vegetables, soup mixture, chicken and wild rice. Add milk to reach desired consistency. Simmer 30 minutes. Do not boil! Garnish with slivered almonds. Serves 8 to 10.
WILD RICE BASIC OVEN METHOD:
1 c. raw wild rice
3 c. boiling water
2 tsp. butter
3 tsp. chicken bouillon
1 tsp. salt, if not using bouillon
Rinse wild rice with cold water 3 times, discarding what floats. (I suggest soaking overnight before baking.) Put rice, water, bouillon or salt in a 2 quart covered baking dish. Cover and bake at 350 degrees for 1 1/2 hours. Check after 1 hour and if quite dry, add more water and fluff with a fork. Place reserve rice in a plastic bag and seal and freeze. A double recipe saves prep time and it freezes well.

Cranberry Apple Wild Rice Casserole
Creamy Wild Rice Soup Mix
5 cups hot water
14 oz. seasoned breadcrumbs
1/2 cup dried cranberries
1 large unpeeled, chopped Granny Smith apple
2 cups cooked, cubed turkey or chicken
Salt and pepper to taste
Prepare soup as directed on package with water; cook 30 minutes. Place breadcrumbs into bowl, add cranberries, apple and meat. Lightly beat eggs; pour over dry mixture. Mix well. Pour soup over stuffing mixture. Mix thoroughly and place in a large greased baking dish; season to taste. Bake, covered, at 350Â° for 1 hour. Remove cover for last 15 minutes. Makes 4-5 servings.

Church Supper Chicken and Wild Rice Hot Dish
1/4 cup unsalted butter
1/2 cup chopped onion
1/4 cup all-purpose flour
1-1/2 cups chicken stock
1-1/2 cups half-and-half cream
1 teaspoon salt
1/2 teaspoon fresh-ground black pepper
1/4 teaspoon fresh-grated nutmeg
1/4 cup dried mushrooms, such as morels or porcini
3 cups diced cooked chicken
2 tablespoons chopped fresh parsley
3 cups cooked wild rice
1 cup grated brick, Muenster or other mild white cheese
Preheat the oven to 350 degrees Fahrenheit. Heat the butter in a large skillet over medium heat. Add the onion and saute it until it is translucent, 5 to 7 minutes. Sprinkle on the flour and stir to blend it in. Pour in the stock and half-and-half cream, and bring just to a simmer, whisking frequently. Simmer gently for 5 minutes, whisking often, then add the salt, pepper and nutmeg. Stir in the dried mushrooms, chicken and parsley.
Lightly oil, or spray with cooking spray, a 2-quart casserole dish. Spread the wild rice in the bottom of the casserole. Spoon in the chicken mixture, then sprinkle the cheese over the top. Bake for 30 minutes, or until the casserole is hot and bubbling. Serve hot.

So it's a box stuffing mix, right?
I think there are 2 problems with box mixes of stuffing; first, they don't have any way to incorporate real vegetable content, sauteed onions, for example - and 2, they tend to lack texture. And that's what I would concentrate on - add some vegetable content; maybe just some sauteed onions and celery, and them something for some crunch. Finely chopped water chestnuts, maybe? Now I've never done a boxed wild rice stuffing, so maybe the texture issue isn't there with the rice.

1/4 c. slivered almonds
1/4 c. celery, chopped fine
1/4 c. green scallions, chopped
3 tbsp. balsamic vinegar
1/4 c. apricots, chopped (optional)
Mix all ingredients except vinegar. Toss in vinegar. Let marinate for at least 15 minutes.
WILD RICE SALAD (COLD)
1 lb. wild rice, cooked with salt & dried onion
2 c. of both chopped broccoli & cauliflower
1/4 c. onion, chopped
1 pkg. crab legs (6); or 8 oz. frozen or fresh crab legs, cut into 1/4 inch
3 c. prepared Hidden Valley ranch dressing
1 c. mild tomato relish or red hamburger relish
2 tsp. lemon juice
2 tbsp. sugar
Mix all and add crab last.
This is a good keeper and is good with frozen fruit salad, sweet breads or rolls.
Shrimp can be substituted.
COLD WILD RICE SALAD
2/3 c. wild rice
1 c. chopped cold chicken
1 to 1 1/2 c. halved seedless grapes
1 to 1 1/2 tsp. Lawry's seasoning salt
1 c. Miracle Whip
Cook and chill wild rice and combine with chicken and grapes. Toss lightly with Lawry's seasoning salt and Miracle Whip. Chill and serve.
