Potato Cakes GF1/2lb. cooked potatoes
2 oz buckwheat, other flour, or tofu
1/2 oz butter
1/4 tsp salt
1/4 tsp baking powder
milk
Put the flour, salt and baking powder into a bowl, mixing well, then add the sieved potatoes and the melted butter. Mix to a smooth dough, adding a little milk if required. Place on a floured board and knead, shape and cut into triangles, cook on a hot greased griddle until brown on both sides.
Buckwheat Cakes
7 oz of buckwheat
13 fl oz water
4 oz cottage cheese
4 oz cornflakes or crushed Ryvita
2 eggs
1 tsp sugar
1/2 tsp salt
2 Tsp milk free margarine
Boil the water and salt, tip in the buckwheat stirring until it returns to the boil, lower the heat and cook until it thickens - 15-20 mins. Add the butter, cover and allow to cool. When the mixture has cooled add the cheese eggs and sugar and mix well. Form into cakes, roll in the crushed cornflakes or Ryvita and fry until golden.
Chocolate Hazelnut Cake GF
6 eggs
250 gm sugar (caster, preferably)
250 gm ground hazelnuts
120 gm unsalted butter
Cream butter and sugar until fluffy, then add yolks of eggs and stir until mixture is light, smooth and creamy. Add ground hazelnuts and stiffly-beaten egg whites. Bake slowly in a round spring-form tin with separate bottom; 1 hour at regulo 4 (175 degrees C). Greaseproof paper in the bottom of the tin will prevent it sticking. When cold cut in half, spread with apricot jam or orange jelly. Replace the halves, cover with plain chocolate and decorate with hazelnuts, cherries or peel.
Engadiner Nutcake GF
Dough:
300g finely milled rice
50g buckwheat flour
160g butter
3 Tsp yoghurt, water or sour milk
100g honey
vanilla
Filling:
300g dates, cooked in 3 Tsp water
250g walnuts
250ml cream
Line tin with pastry. Mix dates and cream till caramel-like and add nuts. Cover with dough, bake and glaze with yoghurt.
Peanutty Cookies GF
1 1/2 cups ground peanuts
2/3 cup arrowroot
1/2 cup peanut butter
1/2 cup honey
1/4 cup peanut oil
1 egg
finely chopped peanuts
Combine the peanuts and arrowroot in a large bowl and set aside. In a food processor or blender, combine the peanut butter, honey, oil and egg. Blend for 30 seconds. Pour into the bowl with the ground peanut mixture, mix well, and chill for one hour. Pince off walnut size pieces of dough and roll between your palm into balls. Roll in chopped peanuts to coat, place about 2" apart on oiled cookie sheets, press each ball lightly to flatten. Bake at 325 degrees F for 18 to 20 minutes, until lightly brown. Cool on wire racks and store in airtight containers.
Oatmeal Patty Cakes
1 1/4 cups water
2/3 cup rolled oats
1/4 cup raisins
1/4 tsp cinnamon
2 tsp walnut oil
2 Tsp apple butter (see fruit butter recipe below)
2 Tsp chopped pecans
Combine the water, oats, raisins, and cinnamon in a saucepan, bring to the boil, then reduce heat, and simmer for 5 minutes. Stir frequently, stir in oil and leave to stand for 5 minutes. Divide the mixture into 2 large or 4 small mounds on a plate, flatten each mound into a patty with the back of spoon, spread the top of each with apple butter and sprinkle with nuts.
Buckwheat Breakfast Cake GF
1 2/3 cups water
1/2 cup raisins
1/2 pound pitted dates, chopped.
1/3 oil
2 Tsp lemon juice or vinegar or 1 tsp vitamin C crystals
1 cup buckwheat flour
1 cup arrowroot
1 tsp baking soda or powder?
1 tsp ground cinnamon
1/2 cup chopped walnuts.
Combine water, raisins and dates in a 3 quart saucepan. Boil for 10 minutes, then set aside to cool. Stir in the oil and lemon juice or vinegar or vitamin C crystals. Into a medium bowl, sift the flour, arrowroot, baking soda and cinnamon. Stir the flour mixture into the saucepan, mix well, stir in the walnuts. Spread batter into an oiled 8" or 9" square baking pan. Bake at 400 degrees F for 20 minutes, or until the top is firm when touched.

IngredientsAmount Ingredient Preparation
1 1/2 cups flour all-purpose
1/2 cup whole wheat flour
1/2 cup sugar
1/4 teaspoon salt
2 tablespoons butter or margarine, softened
2/3 cup milk
1 x salt for the tops, optional
Directions
Preheat the oven to 325.
In a large bowl or in the food processor, combine the flours, sugar, and salt.
Cut the butter into the flour until the mixture resembles coarse meal.
Blend in the milk slowly, using only enough to form a dough that will hold together in a cohesive ball.
Divide the dough into 2 equal portions for rolling.
On a floured surface or pastry cloth, roll the crackers thin, 1/16 to 1/8 inch.
If desired, lightly sprinkle the tops with salt and gently roll over the dough with your rolling pin.
With a sharp knife, cut the crackers into 2-inch squares.
Transfer them to an ungreased baking sheet.
Prick each cracker in 2 or 3 places with the tines of a fork.
Bake for 20 to 25 minutes, or until the crackers are lightly browned.
Cool on a rack.

You can substitute whole-wheat pastry flour for the white flour in most recipes. Whole-wheat pastry flour is more finely ground than regular whole-wheat flour, so you won't notice too much of a change from recipes made with white flour.Here are my daughter's favorite banana muffins:
1/2 c. applesauce
2 eggs
3 mashed ripe bananas
1 c. sugar
1 t. vanilla
2 c. whole-wheat pastry flour
1 t. baking soda
1/4 t. salt
1 t. cinnamon
1/4 t nutmeg
1 c. sour milk (use 1 T lime juice or cider vinegar, then add milk to make 1 c. Stir and let sit for a few minutes to thicken)
1/2 c. each chopped nuts and dried unsweetened coconut (optional)
Mix first 5 ingredients. Mix next 5 ingredients together. Stir half of flour mixture into banana mixture, then add half the milk, then stir in remaining dry ingredients and milk. Stir in nuts and coconut (optional).
Pour into buttered loaf pan or muffin tins. Bake at 350 degrees.
9x5 loaf - about 1 hour
24 regular muffins - 18-20 minutes
48 mini-muffins - 12-14 minutes
