Wow this was tough - I barely got one recipe for ya:LIKE WATER FOR CHOCOLATE - ROSE QUAIL RECIPE
1/2 dozen red rose buds
1/2 cup of slivered almonds
2 garlic cloves
2 tablespoons of butter
2 tablespoons honey
2 tablespoons cornmeal
2 tablespoons anis
Chop the roses into small pieces and grind in blender with the almonds and garlic. Melt the butter and add honey. Stir the rose, garlic and almond mixture into the honey and butter. Add the cornmeal and anis. The mixture will be a thick paste. Use a spoon to spread onto the chicken. Bake the chicken as usual, basting if the coating gets too dry. The rose petals and anise will infuse the chicken with wonderful flavor.
Use additional rose buds or petals as a garnish when presenting the chicken.

Try Kheer (indian rice pudding). You add rose water to that.There is also a persian style rice pudding that calls for it as well.
I dont have a recipe quickly right off hand but you can google it.
I also add it sometimes to my Baklava syrup (also persian)
Edit: Most Persian deserts call for rose water. See desert names below. Google for a recipe. I cant give them all :)

Bastani Akbar-Mashti: vanilla ice-cream with thick cream and rosewater
The Sholeh Zard is SOOOO yummy

Ingredients
1 bunch water spinach, or 2 bunches regular spinach
2 tablespoons fish sauce
1 tablespoon brown bean sauce
1 tablespoon palm sugar or brown sugar
1/4 cup vegetable oil
2 tablespoons chopped garlic
Directions
Clean spinach in several changes of cold water and drain well. If using
water spinach, trim and discard the bottom 2 inches of the woody ends. Cut remaining stems into 2
inch lengths and place in a bowl. Cut leafy top portions into 2 inch lengths and place in another
bowl. If using regular spinach, trim and discard stems. Set aside.
Combine fish sauce, bean sauce, and palm sugar in a small bowl and set aside.
Heat oil in a wok, swirling to coat the surface, add the garlic and stir-fry for 10 seconds. Add the
spinach stems, if using water spinach, toss to combine with the garlic and cook 1 minute. Add
reserved fish sauce mixture, toss to combine with the garlic, and add leafy portions of water
spinach, or all of regular spinach. Toss spinach quickly until it begins to wilt, then transfer to a
serving platter. Serve warm.
