I am almost transitioned. I do vegan brown rice protein shakes and vegan meal replacement shakes with berries and soy, almond or coconut milk to ensure that I'm getting B12 and protein and raw sugar (no honey - honey's not vegan). You can even add kale or spinach to the shake if you like the taste with fruit.Ideas for breakfast: whole wheat bagels or cinnamon raisin bagels with low-sugar jam or soy margarine, oatmeal with raw flax seeds (soak 'em overnight if you don't like the crunch), soy yogurt, organic granola bars.
Lunch: bake a potato, top with black (Adzuki) or red beans and salsa or pureed avocado (if you add Tofutti sour cream, lemon, and a little soy milk to the avocado, you got guacamole). Kashi makes good vegan pizzas so does Amy's Organic line if you don't want to cook. Amy's also makes delish vegan soups, too. Tabouleh is a vegan staple. You can put in pita bread and put avocado and romaine lettuce in it. Three-bean salad is good, too. Vegetarian black bean soup and minestrone soup is good, too.
Snacks: soy yogurt, fruit, fruit salad, broccoli and cauliflower dipped in tahini, raw (not roasted or salted) nuts, raisins, applesauce.
Dinner: Cube a yam, garlic, tomato, drizzle sesame oil or extra virgin olive oil over it and bake for 40 minutes. Vegetarian Source makes vegan black pepper steak which is to die for. Good with a baked potato and spinach salad.
Quinoa, cous cous, brown rice, soaked barley, whole grain bread, tofu, Adzuki beans, red beans, white beans, edamame and tofu are all staples for vegans.
Vegetarian stir fry sauce with tofu and vegetables is good.
Most importantly, try to eat a wide variety of vegetables and fruits. There are even edible flowers! Try to eat produce in season.
Most importantly don't beat yourself up if you slip and eat something that has a trace of egg whites, milk or bovine in it. You're human and haven't been a vegetarian all your life, so you may make mistakes. Just keep trying.
In terms of take-out: Burger King makes veggie burgers, just order it with no mayo and no cheese and a side salad.
Olive Garden: linguine with marinara sauce, salad.
Chinese take out: Steamed broccoli, rice, Singapore Noodles with no eggs and meat, bean curd, vegetable low mein, vegetable fried rice with no egg.
If you live in the city, you can google vegetarian restaurants, you'd be surprised at what you'd find.
Shop at Whole Foods, Trader Joe's and the vegetarian section of your local market.
Also pick up Vegetarian Times magazine. Or get a subscription - lot of good recipes. Endless recipes for vegans!

Whole Foods, Sprouts, Trader Joe's, and local farmer's markets for produce! :)I like the little veggie shreds as a cheese substitute. They aren't totally disgusting and taste like cheese. I also like almond milk as a milk substitute.
I would suggest that you start taking a daily vitamin if you aren't already :)

Butter/margerine - vegan butter, you can get this is any health store or in the butter section of some grocery stores. it will say dairy free.Eggs - egg replacer - you can buy it at any health store. Or you could use oil or apple sauce.
Powdered milk - You can buy soya milk powder.
It would be easier to go find a vegan recipe:)

The great thing about most recipes is that you don't have to really follow them. I only look at recipes for ideas and then do my own thing. Peanut butter tastes better than Tahini in my opinion. The tomato paste is supposed to be thick so the tomato sauce wouldn't work. You could use ketchup or like others have said, cook the tomato sauce to reduce it. Personally if I were to do that, I'd add some tapioca to thicken it. Tapioca is a great thickener in sauces and takes on the flavor of what it is cooked with. Don't be afraid to experiment when you cook. I usually add onions and mushrooms to a lot of things too and frozen vegetables too some.Gary Said:

this is the closest i could find. i guess you could form it however you wanted to, and omit the tomato to make it white.Tempeh and White Bean Sausage
1 pound tempeh, crumbled into bite-size pieces
4 teaspoons Bragg Liquid Aminos or tamari (or soy sauce for that matter)
1 cup cooked white beans
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon fennel seed, crushed
1 heaping tbsp chopped fresh thyme
1 heaping teaspoon chopped fresh sage (about 5 leaves)
Pinch of ground cayenne pepper
Pinch of ground nutmeg
1 tablespoon tomato paste
1/4 cup plain bread crumbs
Dash of salt
A few dashes fresh black pepper
Place the tempeh into a saucepan and just barely cover with water (it’s okay, even preferable, if some of the tempeh is peeking out of the water). Add 1 tsp of Bragg, cover and bring to a boil. Simmer for about 15 minutes, or until most of the water is absorbed. Drain any remaining water and transfer the tempeh to a large bowl. Add the white beans, give a quick stir, and set aside. This will heat the beans just for a bit for easier mashing and cool the tempeh down just a bit for easier handling.
Give the saucepan a quick rinse and dry. Sauté the garlic and fennel seed in 1 tbsp olive oil over low heat, just until fragrant (about 1 minute). Add the remainer of the spices and stir constantly for 30 seconds. Add to the tempeh mixture along with the tomato paste and remaining tbsp of Bragg.
Mash everything together with a potato masher or strong fork, until it’s just a bit chunky and there are no whole beans left (you don’t want it pureed, you should still be able to see the beans). Add the bread crumbs and combine well with a fork. Taste for salt and spices and adjust to your liking. Let sit for about 15 minutes to allow flavors to meld.
Form into patties, using about 3 tablespoons worth of the mix (you can use a quarter-cup measuring cup filled three-quarters full to make the patties consistent in size). Heat the remaining 2 tablespoons of olive oil over medium heat. Cook the patties until brown, about 3 minutes each side. You may need to add a little more oil when you flip them over.

Not in all things , but for Pumpkin bread or muffins use (for 4 eggs) 1 cup applesauce Plus 2 teaspoon Baking Powder ...For the future , It is worth it to buy a box of Ener-G and keep it at home , I use it often and it lasts a very long time....

CHIP ..I want to say , I Like Pumpkin Bread and Muffins ( Pumpkin anything really ) and have made these Many times using the Applesauce/baking Powder and it has always worked Great!!
