Use EarthBalance instead of butter (it works great) and raw sugar instead of regular sugar. If your recipe calls for shortening, you can use veggie shortening, but sugar cookies taste better with butter/EarthBalance.Your cookies WILL NOT taste the same without vanilla. You might want to jazz them up a bit by adding cinnamon to the batter.
This is my favorite recipe (it uses eggs though, so it won't be vegan)
Ingredients
* 1 1/2 cups butter, softened
* 2 cups white sugar
* 4 eggs
* 1 teaspoon vanilla extract
* 5 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon salt
Directions
1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight). (Edit: I've baked them with and without chill time, and they taste the same)
2. Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
3. Bake 6 to 8 minutes in preheated oven. Cool completely.

If you make these cookies, you can take the unbaked cookies (already cut out) and press each side into a mixture of sugar and cinnamon for a DELICIOUS cinnamon-y crust (not overpowering, and not quite like a snickerdoodle, just delicious)

Except for the molasses and honey, you can't buy the portions of ingredients listed at a normal grocery store. You'll have to purchase them in bulk or in a container. You can use the molasses sugar instead of brown sugar since there is molasses in this recipe and you are using molasses sugar instead. I think that it will be fine. You might have to add a tiny bit of water to make up for the apple sauce and the liquid molasses. Just make it first and see if it is needed.
I think liquid molasses is called Treacle in England
