2 c Heavy or whipping cream
2 tb Sugar
1/2 c Unsalted butter
1 1/3 lb High quality dark chocolate
-chopped
2 ts Grand Marnier
Coating (see note)

For the ganache or creamy truffle center, slowly bring
cream, sugar and butter to a boil in a heavy pan.
Remove from heat. Add chopped chocolate and Grand
Marnier, stirring slowly until chocolate melts.
Refrigerate several hours until it is hard.

For truffles, pinch off the size you want (about size
of walnut) and roll into balls. Do this quickly so
that the heat of your hands doesn't melt the ganache.

Roll balls in finely grated dark or milk chocolate,
finely chopped nuts, confectioners' sugar, powdered
cocoa or a chocolate coating (see note). Store at room
temperature.

Note: Truffle centers can be dipped in quality
chocolate that has been tempered. (Tempered chocolate
has been slowly heated and cooled so that the fat
content has become stable enough not to melt at room
temperature. This process is tricky, so Freddi Imel
suggests using melted chocolate chips, coating
chocolate or melting pistals available in baking
sections or cake specialty stores).

BITTERSWEET CHOCOLATE COATED TRUFFLES

Amount Measure Ingredient -- Preparation Method

Basic Truffle Recipe:
4 oz Ghirardelli Bittersweet -- Chocolate
2 tbsp Butter -- cut up
2 tbsp Heavy whipping cream
1 1/2 tbsp Liqueur (to 2 Tbsp)
Chocolate Coating for -- Truffles:
4 oz Ghirardelli Bittersweet -- Chocolate
2 tsp Peanut, almond -- or walnut


DIRECTIONS: For Truffles: In double boiler, melt broken chocolate, stirring
constantly. (Or microwave 2 1/2 to 3 minutes on medium.) Remove chocolate from
heat; blend in butter. Stir in cream, then liqueur. Combine with chopped nuts
or candied fruit if desired. Chill 10-15 minutes, stirring frequently until
thick enough to hold a shape. Drop by heaping teaspoon or #70 scoop onto foil
lined baking pan. Shape round, if desires. Cover and freeze 20-30 minutes to
set truffles firm for dipping with chocolate. For a variety of truffles,
repeat the recipes using liqueurs such as Grand Marnier, Amaretto, Kahlua,
Creme de Menthe.

For Coating: Melt chocolate as directed in basic truffle recipe.

Remove from heat and stir in oil. Cool chocolate to 85-90-F for dipping. Dip
cold, firm truffle into melted chocolate, holding with a fork and spooning
with several coats of chocolate. Place each onto foil lined baking pan.
Decorate top with nuts, candied fruit, etc.

Chill at least 2 hours to set chocolate. Roll in Ghirardelli Ground Chocolate,
if desired. Place into tight container and store in cool, dry place to age for

CREAM SHERRY TRUFFLES

8 ounces dark sweet chocolate
2/3 cup heavy cream
2 tablespoons Bristol Cream Sherry
Dipping
16 ounces dark sweet chocolate
1/4 cup vegetable oil
Garnish
2 cups chocolate shavings.

When chocolate and cream ganache have cooled to room temperature, stir in
sherry before refrigerating. Roll dipped truffle in chocolate shavings.

4 oz Chocolate -- semisweet or 4 sq
1/3 c Sour cream
1 c Chocolate wafer crumbs-fine
1/3 c Chocolate wafer crumbs or
1/3 c Sugar -- icing
Garnish
Gold or silver dragees (eyes)
Almonds -- slivered (ears)
Licorice (tails)

In bowl, combine chocolate and sour cream. Stir in 1 cup chocolate
wafer crumbs; mix well. Cover and refrigerate till firm; about 1
hour. Roll scant tablespoonfuls of chocolate mixture in small balls
slightly pointed at end. Roll lightly in icing sugar or chocolate
wafer crumbs. GARNISH: Insert dragees (silver or gold balls) for
eyes, almond slices for ears and small bits of licorice for tails.
Refrigerate until firm, about 2 hours. (Truffles may be stored in
airtight container in fridge for up to 1 week). MAKES: 2 dozen

WHITE CHOCOLATE PECAN TRUFFLES

2 tbsp. heavy cream
3 oz. fine quality white chocolate, chopped
1 tsp. unsalted butter
2 tsp. brandy
3/4 c. pecans, chopped, lightly toasted & cooled

In small saucepan bring cream to boil. Remove from heat. Add chocolate, stirring until completely melted. Add butter, stir until smooth. Stir in brandy and 1/4 cup pecans. Transfer to bowl and chill, covered for 4 hours. Form teaspoons of mixture into balls and roll balls in remaining pecans. Chill in baking pan for 1 hour or until firm. Store covered and chilled for up to 1 week. Makes 16 truffles.

HERSHEY'S WHITE AND DARK CHOCOLATE
TRUFFLE SQUARES

1 2/3 c. (10 oz. pkg.) Hershey's vanilla milk chips
1 tbsp. butter flavor shortening
1/3 c. whipping cream
2 tbsp. butter
1 c. Hershey's semi-sweet chocolate chips
1/2 tsp. vanilla extract

Line square pan, 8 x 8 x 2 inches, with heavy duty foil. In small micro-proof bowl, combine vanilla milk chips and shortening. Microwave at high (100%) for 1 minute or just until chips are melted and smooth when stirred. Pour about half of vanilla mixture into prepared pan; set aside remaining vanilla mixture
In medium micro-proof bowl, combine whipped cream and butter. Microwave at high for 30 seconds to 1 minute, stirring every 30 seconds just until mixture begins to boil. Immediately stir in chocolate chips until completely melted; continue stirring until mixture cools and thickens slightly. Stir in vanilla extract.

Pour into prepared pan, over top of vanilla mixture. Chill 10 minutes. Microwave remaining vanilla chip mixture at high for 20 seconds or just until mixture is fluid; pour and spread evenly over chocolate layer. Before mixture firms up, cut through all layers, scoring into 1 inch squares. Cover; chill until firm. Cut with sharp knife, following score marks. Serve chilled.

My daughter made these today for her boyfriend. They are very easy & very good! We freeze them before we dip them so you don't drop them.

Easy OREO Truffles

3-1/2 doz. or 42 servings, one truffle each
What You Need!
1 pkg. (1 lb. 2 oz.) OREO Cookies, finely crushed, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 pkg. (8 squares each) BAKER'S Semi-Sweet Chocolate, melted
Make It!

MIX 3 cups of the cookie crumbs and the cream cheese until well blended. Shape into 42 (1-inch) balls.

DIP balls in melted chocolate; place on waxed paper-covered baking sheet. (Any leftover melted chocolate can be stored in tightly covered container at room temperature and saved for another use.) Sprinkle with remaining cookie crumbs.

REFRIGERATE 1 hour or until firm. Store any leftover truffles in tightly covered container in refrigerator.

A few drops on mashed potatoes, some corn, risotto, or on an omelette. DO NOT COOK truffle oil, it will destroy the flavor.
It is used for finishing dishes. You only want a few drops, too much won't taste very good.

Ingredients

* 250ml double cream
* 150g caster sugar
* 180g cacao(chocolate), finely grated
* Cocoa powder, for dusting

Method: How to make truffles

1. Heat the cream and sugar in a small pan until almost boiling.

2. Stir in the cacao, then remove the pan from the heat.

3. Transfer the truffle mixture to a plastic container. Cover and place in the refrigerator until cold and firm.

4. To shape the truffles, scoop a teaspoon of the mixture and roll quickly between your palms. Dust the truffles in cocoa powder and store in the fridge until ready to serve.
