Fried Beef Tripe

1 lb. beef tripe
4 cups of water
1 clove garlic, sliced
1/2 tsp. coriander
1/2 tsp. salt
Sweet soy sauce
1/4 cup peanut or corn oil

Wash beef tripe well and then cook it in water for about an hour, or until it softens. Cut the tripe into 2-inch squares, and set it aside.

Grind the garlic, coriander and salt into a paste. Mix paste with the tripe squares and let it stand for approximately 30 minutes.

Heat the oil in wok or frying pan, and stir fry the tripe over medium heat for about 10 minutes, or until it is brown and somewhat crisp. Pour a little bit of sweet soy sauce.

Best served hot or at room temperature with other dishes.

Tripe In Tomato Sauce (Trippa Alla Trevisana)I


900g/2 lb honeycomb tripe
3 tablespoons olive oil
2 medium onions, chopped
2 cloves garlic, finely chopped
3 tablespoons chopped flat-leaf parsley
400g/14 oz can chopped tomatoes
salt and freshly ground black pepper chopped parsley, to garnish

1 Rinse the tripe well. Place in a large saucepan, cover with cold water and bring to the boil. Drain, rinse and pat dry with kitchen paper. Cut the tripe into strips approzimately 7.5x1cm/3x1/2 in.
2 Heat the oil in a heavy-based saucepan. Add the onions and cook gently for about 10 minutes, until transparent. Stir in the garlic and cook for a few seconds, then add the tripe, parsley and wine, stir well and simmer for 2 minutes. Add the tomatoes and salt and pepper to taste. Cover and simmer gently over a low heat for 1-1/2 to 2 hours, until the tripe is tender, adding a little water if the sauce looks too dry and testing the tripe occasionally after 1 hour. Transfer to a warm serving dish and sprinkle with parsley.

Philadelphia Pepper Pot

Ingredients

¼ cup diced onion
¼ cup diced celery
¼ cup diced capsicum
4 tabs butter
4 tabs flour
5 cups chicken stock
1 cup pre-cooked and sliced honeycomb tripe
1 ½ cups potato cubes
1 teas ground black pepper
1 teas salt
½ cup heavy cream
Method

Cook vegetables in the butter until done.
Add flour gradually and stir until well mixed.
Add all other ingredients except cream.
Cover and simmer for an hour.
Correct seasoning.
Add cream just before serving.

Butter-poached Tripe

Ingredients

3 lbs(1.4ks) tripe
¾ lb(340 grms) butter
3 garlic cloves peeled
3 tabs snipped chives
1 teas salt
¼ teas cracked pepper pinch dried oregano (or a sprig of fresh)
2 green capsicums trimmed and minced
1 large onion peeled and minced
16 cherry tomatoes washed and stemmed
1 cup home-made tomato sauce

Method
Rinse and clean the tripe and cut into strips. Melt the butter in a heavy, tightly-lidded pot. Push the garlic through a press into the butter with the chives,salt and pepper and oreganoMix well into the butter with the tripe. Cover tightly and simmer slowly for 1 ½ hours. Add the tomatoes, minced peppers and onion and tomato sauce. Stir gently until well mixed. Cover and cook slowly for a further 2 ½ hours.

Tripe Stew With Dumplings

Ingredients


1 ½ ks (3 lbs)tripe
1 bottle dry white wine
2 carrots
2 green peppers
1 large onion
3 sticks celery
1 teas peppercorns
1 teas salt3 cups strong chicken stock
4 ½ tabs cornflour
3 cups prepared biscuit (dumpling) dough


Method


Rinse the tripe and cut into 7cm squares
Marinade for 24 hours in a glass or enamel vessel with the wine, pepper and salt and the vegetables prepared and cut into slivers
Pour into a large casserole, cover and bake in an oven preheated to 250 deg F(slow) for 2 ½ hours.
.Meanwhile , mix the cornflour into some of the cold stock.
Heat the remainder and thicken with the cornflour.
Add to the casserole and continue cooking a further 2 hours
.Increase the oven heat to hot (400 deg F).
Make the dough into about 12 balls and place on top of the tripe in a single layer.
Cover and cook for 10 mins.
Uncover and allow the dumplings to brown a little.
Turn carefully to allow them to brown on the other side

Beef Tripe Soup
(Soto Babat)
Ingredients:
1¼ lb. beef tripe, cleaned and washed well
½ lb. beef, boiled in 5 cups water until tender and cut in ¼-inch cubes (optional)
12 cups water
4 cups beef broth
1 inch ginger root, peeled and sliced lengthwise
4 cloves garlic, peeled and sliced
1 Tbs. distilled white vinegar
6 oz. giant white radish, peeled and diced in ½-inch cubes
5 sprigs celery leaf, chopped
1 Tbs. fried shallots

Instructions:
Rinse tripe well under running water until very clean. Bring water to a boil in a stockpot, add tripe and simmer until soft (approximately 2 hours). Strain water and cool tripe in ice water. Cit in pieces approximately 1 inch x ½ inch.
Bring beef stock, ginger, garlic and vinegar to a boil in a large stockpot. Add tripe, radish, and beef cubes (optional). Simmer until vegetables are soft. Garnish with celery leaf and fried shallots.

You have to braise it they steam it to reheat it and finish it, I am a former chef and have seen it made and eat here in Canada, you could never get tripe tender in a steamer, I get it at my favourite dim sum places here in Toronto ON.
