INGREDIENTS
1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese


DIRECTIONS
In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

Taco Dip
1 pkg taco seasoning
1 24oz container sour cream

Mix together until well blended

Ranch Dip
1 16 oz container cottage cheese
1 16 oz container sour cream
3/4 cup original Hidden Valley Ranch
mix together and serve

Chili Cheese Dip
1 16oz pkg velveeta
1 can chili with beans
1/2 cup salsa
cut cheese into chunks and pour chili over it. Heat until cheese is melted and mix. Add in salsa and serve.

You can actually fill a tortilla with almost any kind of filling you would put in a sandwich (ham and cheese, roasted vegetables, etc.) and roll it, burrito-style, into a wrap. You can also, of course make a burrito with it or, if the tortillas are small, roll them up with meat and cheese and deep-fry them to make chimichangas.

Deep-Fried Tortilla Chips
serves 2-4

These crisp, puffed fried flour tortilla chips are a decadent alternative to store-bought. As with any deep frying, be sure not to fill the pot more than halfway up its sides with oil, or it risks boiling over and igniting.

Vegetable oil
8 small flour tortillas, quartered
Salt to taste

1. Fill a large, heavy pot 3-5 inches deep with oil for frying. Bring the oil to between 370 and 380F over medium-high heat, then reduce the heat to maintain that temperature.

2. Meanwhile, cut the tortillas in half, and the halves in half again. When the oil is at the right temperature, gently add the tortilla quarters to the pot one by one, working in two batches so as not to crowd the pot.

3. Fry the tortilla wedges, flipping them over frequently with the slotted spoon, until they're golden brown, about 5 minutes. Remove the chips to a wire rack or paper bag to drain. Salt to taste while they're still hot.

Fried Tortilla Chips
Ingredients
8 corn tortillas
salad oil

Directions
1 Arrange 8 corn tortillas in a stack and cut into 6 equal wedges.
2 Pour about 1/2 inch salad oil in a deep 2 or 3-quart pan and set on medium-high to high heat.
3 When oil is hot enough to make a piece of tortilla sizzle, add tortilla pieces, a handful at a time, and stir to separate.
4 Cook until crisp (1 to 1-1/2 minutes); lift from oil with slotted spoon and drain on paper towels.

Tangy Fruit Salsa with Cinnamon Chips

Cinnamon chips:
1 tablespoon sugar
1/4 teaspoon ground cinnamon
4 7-inch flour tortillas

Preheat oven to 400 degrees F.
Combine sugar and cinnamon in a shaker or small bowl.
Lightly spray tortillas with water then sprinkle with cinnamon-sugar mixture.
Cut each tortilla into 8 wedges and place in single layer on cookie sheet.
Bake 8–10 minutes or until lightly browned and crisp.
Remove to cooking rack and cool completely.

Salsa:
1 cup frozen raspberries
2 peaches, peeled and chopped or 1 15-ounce can peaches, drained and chopped
2 kiwifruits, peeled, sliced and quartered
1 teaspoon lime zest
2 teaspoons lime juice
1 teaspoon sugar

Place all ingredients in bowl. Mix gently. Serve with cinnamon chips.

Makes 8 servings

2 whole pineapples
2 large clusters green seedless grapes and several clusters Champagne grapes
6 oranges, peeled and sliced into wheels
1 cantaloupe, cut into cubes or balled
1 honeydew melon, cut into cubes or balled
24 long stemmed strawberries
6 to 8 kiwi, peeled and sliced
2 cups blueberries
Red Leaf lettuce, to line silver tray
French Cream, recipe follows

French Cream:
1 (8-ounce) package cream cheese
1 cup powdered sugar
1 cup whipping cream
1/4 cup granulated sugar
1 lemon, zested and juiced
Pineapple juice

Soften cream cheese and then whip with powdered sugar. Whip cream and sugar together until it forms soft peaks. Combine beaten cream cheese, whipped cream, lemon juice and zest; continue to beat, adding just enough pineapple juice to achieve desired consistency. Serve with fresh fruit tray or fruit salad.
