INGREDIENTS* 6 small red potatoes, scrubbed
* 1 clove garlic, peeled
* 4 tomatillos
* 1/4 cup butter
* 1/4 cup milk
* salt and pepper to taste
DIRECTIONS
1. Bring a large pot of salted water to a boil. Add the potatoes and garlic. Boil the potatoes with the skin on until tender, about 15 minutes. Peel the paper skin off the tomatillos, and rinse them. Place them in with the potatoes during the last 5 minutes of boiling. Drain.
2. Transfer potatoes and tomatillos to a large bowl. Add butter and milk, and mash with a potato masher. Adjust amount of milk and butter to achieve desired consistency. Season with salt and pepper.
Caribean style sofritos
INGREDIENTS
* 2 green bell peppers, cut into 1/4 inch cubes
* 2 red bell peppers, cut into 1/4 inch cubes
* 1 orange bell pepper, cut into 1/4 inch cubes
* 1 yellow bell pepper, cut into 1/4 inch cubes
* 10 tomatoes, cored and coarsely chopped
* 1 bunch green onions, chopped
* 1 1/2 bunches fresh cilantro leaves, chopped
* 6 fresh tomatillos, husks removed
* 1 cup chopped garlic
DIRECTIONS
1. Place the green, red, orange, and yellow bell peppers in a blender or bowl of a food processor. Add the tomatoes, green onions, cilantro, tomatillos, and garlic. Blend or pulse according to your preference to make a chunky or smooth mixture. Refrigerate in a covered container up to 5 days, or freeze up to 45 days.
Cook's Tip
Freeze the sofrito in resealable plastic bags and use as needed, or spoon into ice cube trays to freeze in portions.

AUTHENTIC)
1 dozen tomatillos (soaked and cleaned)
half dozen dried chilies (anchos or the smaller variety of dried chile pods)
half cup onion
cilantro
salt and pepper
Boil chilies and tomatillos in saucepan for about 15 minutes. Process or blend and add onion and cilantro, blend slightly more. Salt and pepper to taste.
This seems like it's too simple, but this is a regional recipe from Mexico and it's great. Very simple and delicious. It has a dark brownish roasted color and people would never guess it was made from tomatillos. You can add a tomato if you want to tame the heat.

In a medium bowl, combine Tomatillo, chiles, onion, cilantro, lemon juice, lemon zest, lime juice, salt, and pepper. Cover and refrigerate, at least 1 hour and better a day or two, to allow the flavors to mix.

Tomatillo Sauce recipe1 pound tomatillos
4 scallions
2 to 4 serrano chiles
1 teaspoon Mexican lime juice
1/2 teaspoon salt, or to taste
1/2 teaspoon granulated sugar (optional)

NOTE: Do not add cilantro if the sauce is going to be used as an enchilada sauce.
Place the tomatillos and chiles in a pot and cover with water. Bring water to boil over medium heat. If you use high heat, the tomatillos can easily disintegrate if the water is allowed to boil too swiftly. When the tomatillos and chiles have become quite soft, about 5 to 10 minutes, discard the water and place them in a blender. Add onions, lime juice and salt; blend, using pulses, until the sauce is roughly chopped. Taste the sauce and add the sugar, if necessary, and the cilantro, if desired. If the sauce is to be used in enchiladas, blend it for about 15 seconds or until it is smooth.
