This is how I brew tea, Southern style.

8 regular size tea bags or 4 family size and
4 cups of water heated in the microwave for 5 minutes. Be careful that your tea doesn't boil over in the microwave or you'll have a mess. Steep after boiling for at least another 30 min. for a good tea taste

While that's workin make a simple syrup of 2 cups sugar and 2 cups water. Put in sauce pan on med. stiring occasionally until sugar is totally disolved.

Strain the tea bags and pour the tea into a 1 gal. pitcher and add the simple syrup, finish filling up the pitcher with water and stir. The sugar is already disolved in the simple syrup. You can also add the sugar when the tea is hot but sometimes you're left with really sweet tea at the bottom of the pitcher.

Some people only add 1 1/2 cups of sugar, it's all about your preference.

Pour over ice and enjoy!!

I absolutely LOVE this tea, I just started making this one a couple months ago and cannot stop! (This recipe is for a pot, rather than a cup, you can reduce amount of each ingredient if it is only for yourself).

Cinnamon Apple Tea
1 1/2 cups boiling water
6 Cinnamon Apple tea bags
3 tablespoons sugar
1 1/2 cups cold water
1 cup grape juice
2 teaspoons lemon juice
Club soda, chilled, optional

In teapot, pour boiling water over teabags; cover and steep 5 minutes. Remove bags; stir in sugar and cool. In pitcher, combine tea, cold water and juices. If you wish, serve in ice-filled glasses with a splash of soda. Garnish with lemon slices.

We Answered:

I am a former chef and worked in a number of 5 star hotels were we derve "High Teas", the scones are really not much more than a tea biscuit in the US and Canada, only instead of water you use cream or milk in them, raisins or currants are nice even dried cranberries.

As the first lady said about sandwiches things like, cucumber, smoked salmon, egg salad, chicken salad, watercress, soft cheeses, ham and tuna, the thing is to make them bite size, even flattening the bread with a rolling pin to make it almost like a cracker, you can use white or brown bread.

Other pastrys like small tarts, tea cakes, cream puffs, cookies and puff pastrys, they are served on a 3/4 tiered plate so you can pick and choose your favorites, as for teas, you can have a selection of black, green and herbal teas, various ones for your guests to sample, try a good coffee store for them and get some different ones. You can make the sandwiches ahead and wrap them up on a plate and then put them on your serving platters at the time of service, the same with the sweets, I would buy them, making the sandwiches is enough work, just make sure they are about the same size as the sandwiches.

Have the teas ready or make sure you have plenty of hot water, milk, lemon, sugar and sweetener for those who would like it, set it out buffet style for that, just make sure to do as much ahead of time and even setting tables is a good idea. As for clotted cream unlees you want to spend a fortune on little bottles, my suggestion is buy a full fat sour cream, and a half of a half pint of whipping cream combine the two the day before and let it sit on the counter until you retire for the night, refrig it and it will be firm like Devonshire cream the next day (you can use the rest with some milk for your scones), also jams and preserves are serve for the scones, choose ones you like 2 or 3 is fine.

We did this in 3 of the Canadain hotels I was with, in Singapore and in Jamaica also.

Slippery Elm tea is good for soothing your throat, as well as chamomile tea. Put honey into the tea -- raw honey has antibacterial properties.

If your sore throat lasts more than a couple of days you should have a throat culture done to see if it is strep.

I guess your best bet for a sugar substitute would be honey.
Just make sun tea outside with your organic tea. Using a clear glass gallon jar or Sun Tea Jar, fill with water, use 6-8 small bags, or 2-4 large bags of tea. It depends how strong you want your tea and how strong the tea is anyway. Some are stronger than others. If it comes out too strong, that's all right. Just add more water to your glass when placing over the ice. If it isn't warm enough where you live to do so, then steep in water that is brought ALMOST to the boiling point. Steep is to let the tea bag, leaves, tea ball set in the water for a set amount of time. Most teas suggest 1-5 minutes, depending upon the strength and such. Steep for as long as the herb suppliers suggest. Cool, sweeten and have it served over ice.
