I would use the same amount of cornstarch or flour. Mix it it in a saucer with a couple of tablespoons of water to prevent lumping before you add it to the hot stock. You might not even need it if the stew has potatoes.

Once fully cooled and hardened mochi will keep in a cool dry place very well; unless dried 100% mold will be a problem. Keep in the freezer for best storage. Mochi packaged in plastic bags have moisture or oxygen absorbing packets put in too.

If you don't like pudding, you will probably not like tapioca. Take it from someone who has tried tons of slow cooked roasts with different recipes and everytime, I tell my husband to remind me to stick with the basic one which always turns out great. He's absolutely right. I'm sure you have your own basic recipe but this one is my basic. Just remember to always slow cook meat on low. Learned that one the hard way too. Live and learn. Tapioca and roast beef don't sound like such a great combination anyway.

It depends on what kind of pie You are making. If you are using instant tapioca, you need to add it to the fruit or to liquid then let it sit until the tapioca starts to look like it might melt, about 5-10 minutes is usually enough. If you don't do this, it won't dissolve.

If I'm out of tapioca, I use about 3 Tbls. of cornstarch per fruit pie, mix it in with the sugar, sprinkle over fruit. I add a couple of Tbls. butter to blueberry pies.

I always use cornstarch for cream pies, makes a smoother filling. I use 7 Tbls. cornstarch if I am using 4 eggs, 8 Tbls. if I am using 2 eggs with 2 cups liquid.
