Try this traditional Labanese dish....***Chicken Shawarma***
1/2 cup malt vinegar
1/4 cup plain yogurt
1 tablespoon vegetable oil
salt and pepper to taste
1 teaspoon mixed spice
1/4 teaspoon freshly ground cardamom
8 skinless, boneless chicken thighs
1/2 cup tahini
1/4 cup plain yogurt
1/2 teaspoon minced garlic
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon chopped fresh parsley
salt and pepper to taste
4 medium tomatoes, thinly sliced
1/2 cup sliced onion
4 cups shredded lettuce
8 pita bread rounds
DIRECTIONS
In a glass baking dish, mix together the malt vinegar, 1/4 cup yogurt, vegetable oil, mixed spice, cardamom, salt and pepper. Place the chicken thighs into the mixture and turn to coat. Cover and marinate in the refrigerator for at least 4 hours or overnight.
Preheat the oven to 350 degrees F (175 degrees C). In a small bowl, mix together the tahini, 1/4 cup yogurt, garlic, lemon juice, olive oil, and parsley. Season with salt and pepper, taste, and adjust flavors if desired. Cover and refrigerate.
Cover the chicken and bake in the marinade for 30 minutes, turning once. Uncover, and cook for an additional 5 to 10 minutes, or until chicken is browned and cooked through. Remove from the dish, and cut into slices.
Place sliced chicken, tomato, onion, and lettuce onto pita breads. Roll up, and top with the tahini sauce.

I find some salads quite hard to eat, especially green salads. With the following tahini salad dressing recipe, I could eat a panda's raw green bamboo salad it's so delicious!TAHINI DRESSING
Ingredients
1/3 cup well-stirred tahini (Middle Eastern sesame paste)
1/3 cup water
1/4 cup plus 1 tablespoon fresh lemon juice
2 garlic cloves, chopped
3/4 teaspoon salt
1/4 teaspoon sugar (optional)
Method
Blend all ingredients in a blender until smooth.

I use tahini to make a really tasty salad dressing, I like it best on a spinach salad. Just make a small amount the first time to see if you like it.1/3 cup of freshly squeezed orange juice
2 tbs of tahini
Mix together with a fork, you can also add some rice vinegar to taste.

Green Beans with Tahini2 1/2 lbs green beans (fresh or frozen)
2 teaspoons salt, to taste
5 tablespoons olive oil
2 teaspoons mustard seeds
8-9 cloves garlic, crushed
1 inch ginger, crushed
3 tablespoons tahini
4 tablespoons cilantro, chopped
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 tablespoon fresh lemon juice
Cut beans 1 inch long. Steam until crisp and tender, about 6-8 minutes. Heat oil in a skillet on medium heat and add mustard seeds. When they pop, turn heat low and add garlic and ginger. Add rest of ingredients. Mix well and heat through. Serve warm.

Don't use sesame oil...it's too strong. Here is a recipe for making hummus without tahini:1 can garbanzo beans/chickepeas
1/4 cup olive oil
1 tablespoon lemon juice
1 teaspoon cumin
In a food processor, blend all ingredients together until smooth and creamy.
Serve immediately with pita bread, pita chips, or veggies.

peanut butter. it has the same texture, and similar flavor to tahini.
