3/4 cup all-purpose flour
1/2 cup quick cooking oats
1/4 cup toasted wheat germ
1/2 cup butter, softened
1 tablespoon orange zest
3/4 cup packed brown sugar
2 eggs
3/4 cup blanched whole almonds
1/2 cup shredded coconut
DIRECTIONS
Preheat oven to 350 degrees F. In large bowl beat flour, oats, butter, wheat germ, orange peel and 1/2 cup of packed brown sugar at low speed until just mixed. Beat at medium speed for 2 minutes (mixture will look dry).
With lightly floured hands, shape mixture into a ball, then pat into 8" by 8" baking pan.
In a small bowl, beat eggs with a 1/4 cup of packed brown sugar, stir in almonds and coconut. Pour evenly over mixture in pan.
Bake 35 minutes or until toothpick comes out clean. Cool in pan on rack. Cut into 6 pieces

¼ cup butter or margarine
1 cup brown sugar
1 egg
½ tsp vanilla
1 cup flour
1 tsp baking powder
¼ tsp salt
1 6 ounce package of chocolate or butterscotch chips
½ cup chopped nuts
Melt butter and beat in the brown sugar. Cool slightly. Add egg and vanilla and beat until mixture is light and fluffy. Stir in flour together with baking powder and salt. Lightly stir in flavored chips and nuts and spread mixture evenly in greased 8 inch pan. Bake in a 350% oven for about 25-30 minutes. Do not over bake. Cool and cut into 1 inch squares

Try this easy Blueberry Cupcake recipe:
1/2 cup butter
2 large eggs
2 cups flour, all-purpose
1/2 teaspoon salt
1 1/4 cups sugar
1/2 cup milk
2 teaspoons baking powder
1 1/2 cups blueberries
Directions
On slow speed, cream butter and sugar.
Add eggs one at a time and mix until blended.
Sift dry ingredients and add alternating with milk.
Mash 1/2 cup blueberries and stir in by hand.
Add rest of blueberries, whole.
Place paper cups into muffin tray and fill up to 2/3 and sprinkle with sugar. Bake 375 F/190 C, 25-30 minutes.
The blueberries will melt and give a really delicious taste. You can substitute with cranberries or diced apples, mixed with a little sugar and cinnamon powder. Make sure the apple pieces are not exposed or they will turn dry during baking

Ingredients:
1/4 cup unbleached flour
1/4 cup packed brown sugar
2 tablespoons unsalted butter, softened
2 tablespoons light corn syrup
2 tablespoons chopped toasted hazelnuts
Directions:
In a medium bowl, combine the flour,brown sugar, butter, corn syrup and nuts. Mix until well blended. Divide the dough into eight pieces and form into balls.
Cover a large baking sheet with parchment paper or coat with nonstick spray. Place the dough 3-inches apart on the prepared baking sheet and press lightly to flatten. Bake at 375-degrees for five to seven minutes, or until lightly browned. The cookies will spread out and be very thin.
Cool on the baking sheet for two minutes. Loosen gently from the pan and drape the cookies, while still warm over the bottom of an eight (4-ounce) custard cups. The cookies will cool quickly and set in a bowl shape. Recipe makes eight servings.

24 circular pretzels
24 milk chocolate candy kisses
One (1.69 ounce) package mini candy-coated chocolates
Preheat oven to 350-degrees.
Directions:
Place pretzels on baking sheets. Unwrap candy kisses and place one in the center of each pretzel. Place in preheated oven one to two minutes, until kisses melt.
Remove from oven and place one candy-coated chocolate in the center of each pretzel. Chill in refrigerator until set.
Recipe makes 24 pretzels.

No-Fry Spicy Potato Skins

Ingredients:
4 large russet potatoes
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon ground black pepper
1-1/2 teaspoons chili powder
1-1/2 teaspoons curry powder
1-1/2 teaspoons ground coriander seed
Directions:
Preheat the oven to 400 degrees.
Bake the potatoes for 1 hour. Remove the potatoes from the oven, but keep the oven on. Slice the potatoes in half lengthwise, and let them cool for 10 minutes. Scoop out most of the potato flesh, leaving about 1/4 inch of flesh against the potato skin (you can save the potato flesh for another use, like mashed potatoes) . Cut each potato half crosswise into three pieces. Place the olive oil in a small cup. Dip each potato piece into the olive oil and place it on a baking sheet. Repeat this with the remaining potato pieces.
Combine the salt and the spices and sprinkle the mixture over the potatoes. Bake the potato skins for 15 minutes or until they are crispy and brown. Serve them immediately. Makes 24 servings

3/4 cup Asiago cheese, or Parmesan, grated, plus extra for sprinkling
1 cup all-purpose white flour
1 tablespoon butter
1/2 teaspoon cayenne pepper
Two large egg
Four large egg whites
1 tablespoon olive oil
1/2 teaspoon salt
1 cup water
Directions:
Lightly coat two baking sheets with nonstick cooking spray or line with parchment paper. Preheat oven to 425-degrees.
In a medium-sized saucepan, combine water, butter, oil, salt and cayenne; bring to a boil over medium heat. Remove from heat and add flour all at once. Stir with a wooden spoon until it forms a smooth paste. Return the mixture to low heat and cook, stirring, for about three minutes, to dry the paste slightly. Remove from heat and cool for two minutes.
Lightly whisk together eggs and three-fourths of the whites. With a wooden spoon, beat one-fourth of the egg mixture into the flour paste until absorbed. Repeat with three more additions of the egg mixture, until the paste is smoother and glossy. Stir in the cheese.
Using a pastry bag or spoon, drop 1-inch mounds 1-1/2 inches apart on the prepared baking sheets. Lightly beat the remaining egg white and brush it over each puff. Sprinkle with cheese. Bake, one sheet at a time, for 20 to 25 minutes, or until the puffs are firm and well browned. Serve warm. Recipe makes four servings.

Almond Paste10 oz dried blanched almonds
1 cup powdered sugar
1/2 cup granulated sugar (can use Spenda for cooking )
1/4 cup Brown Sugar (can use Spenda Brown Sugar)
1/4 cup kayro syrup
1-2 cup water
1-3 teasoon honey (i say 2)
Make a sugar syrup by placing the water, gran & brown sugar, honey and kayro syrup in a saucepan. Stir it to combine. Bring it to a boil and let it boil for a few moments. Let it cool. stir it so it does not stick together until next step
put almonds in a food processor, make them a fine dusty almond mixture. Add the powdered sugar, blend together a 30 seconds. With the food processor running low speed, slowly add the syrup until the mixture forms a paste.
Store the almond paste tightly in a mason jar in the refrigerator. If harden, heat in micro to make soft

These brownies taste so good, it is hard to believe they only have about 2 grams of fat per serving. Most people are pleasantly surprised by how good low fat brownies can taste.To make this recipe you will need the following ingredients:
1/2 cup unsweetened applesauce
1 1/2 cup flour
1/3-1/2 cup baking cocoa powder
1/2 tsp. salt
1 egg
2 egg whites
1 1/2 cup sugar
1 tsp. vanilla
1/4 cup mini semisweet chocolate chips
Preheat your oven to 350. In a large bowl, beat the eggs until frothy. Add the sugar, applesauce, and vanilla extract, and stir until the sugar is dissolved. Then combine the flour, cocoa, and salt and add the flour mixture and chocolate chips to the egg mixture. Stir it just until the dry ingredients are moistened. Pour the batter into a 11x7 baking dish coated with nonstick spray. Bake 30 minutes. Cool in the pan on a rack. Enjoy!

Here are some variations you may want to try:
Leave out the chocolate chips and instead sprinkle crushed candy canes or other crushed candy on top. I used crushed mint candy canes, and it gave the brownies a subtle mint flavor!
Another hint: Cut the bars smaller. Not only do you get more servings, but each brownie has less fat per serving. (If you cut them smaller, don't make the mistake of thinking you can eat twice as many!)
