In most cases you can sub any oil for any other oil. Depending on the recipe, you may not want a hint of coconut in your food, however there's no reason you couldn't use it. The only thing that may be an issue is that coconut oil is a solid at room temperature.

Other possible substitutions I might use would be safflower oil or grapeseed oil.

Not only will it work, it will work better than grapeseed or canola oil because it is more stable in high heat conditions such as deep frying.

And I've also found that it adds a pleasant nutty flavor to the chicken, so it is a wonderful choice. :)

super canola oil, almond oil, apricot kernel oil, high-oleic safflower oil or sunflower oil, peanut or soybean oils"

Note that grapeseed oil isn't listed, and sunflower oil is! "Super canola oil" is also listed, but most canola oil sold in stores these days isn't "super canola oil" - it's just regular canola oil, and not as stable under high heat frying conditions.

"medium temperature frying (below 190 degrees Celsius / 375 degrees Fahrenheit) canola, walnut, sunflower or sesame. Use or any of the higher-heat oils for sauces"

This one includes regular canola and sunflower oils, and *not* grapeseed oil. If you're planning on frying at a medium temp, then you could use canola oil.

Grapeseed oil is sometimes used for medium-temp frying since it won't smoke until it hits 485F, but it begins to break down at around 360F and create free radicals, which aren't good for the body. So I don't use it for frying anything unless I want to fry below 360F. I use it mainly for salad dressings, and making flavored herb oils (such as basil & garlic oil) for gift giving.

yeah probably. both are natural oils that will do some good for your skin. olive oil is probably better if you can get it though.

Coconut oil is so good for you. It can protect against heart disease, help with digestion and help the immune system. Its one of the only oils in the world that stays good for you when its heated. Millions of Asians use it daily and they have the lowest rate of heart disease in the world. I use it also as a moisturiser on my face and hair because its natural - no toxic chemicals. I've started using it for all my cooking, even frying eggs, baking cakes etc. I even give it to my dogs.
