Cheesy Spaghetti Squash
For variety, try adding Italian sausage to this dish.

Ingredients:
3 lb Spaghetti squash
2 tbsp Reduced fat Parmesan cheese
1/2 c Mozzarella cheese
2 Chopped plum tomatoes
1/4 c Chopped fresh parsley

Prep:
Pierce squash several times with a fork or sharp knife to allow steam to escape. Microwave on HIGH for about 10 minutes or until just soft, turning over after 5 minutes. Let stand 5 minutes.

Cut squash in half. Remove and discard seeds. Use a fork to scrape the insides of the squash to form strands; reserve one squash shell. Toss with cheeses, tomatoes and parsley.

Spoon squash back into shell and microwave on HIGH for 2 mintues to heat through.

Makes 6 (1/2 c) servings.

Lady, my mouth is watering just reading your words. I love spaghetti squash. My favorite way of having it dome is with sauce...spaghetti sauce that is and you have marinara sauce too. I would get creative with the other half and make a cream sauce from half and half heated up in a sauce pan with 1 egg yolk( separated) stir in some of the Parmesan cheese until the mix thickens, but not too much or it will paste up on you. I would saute' the other ingredients and sprinkle them over the sauce after it has been poured over the other squash...then enjoy.

Puncture the squash in several places with a fork so it doesn't explode in the oven.

Bake at 350 degrees in a baking dish for about an hour. Then scrape out the spaghetti-like fibers with a fork. Here's a how-to:

A basic tomato sauce works well with it, or any Italian-seasonings with your butter replacement.

Greek Spaghetti Squash

1 spaghetti squash, halved lengthwise and seeded
2 tablespoons vegetable oil
1 onion, chopped
1 clove garlic, minced
1 1/2 cups chopped tomatoes
3/4 cup crumbled feta cheese
3 tablespoons sliced black olives
2 tablespoons chopped fresh basil


Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.

Place spaghetti squash cut sides down on the prepared baking sheet, and bake 30 minutes in the preheated oven, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven, and set aside to cool enough to be easily handled.

Meanwhile, heat oil in a skillet over medium heat. Saute onion in oil until tender. Add garlic, and saute for 2 to 3 minutes. Stir in the tomatoes, and cook only until tomatoes are warm.

Use a large spoon to scoop the stringy pulp from the squash, and place in a medium bowl. Toss with the sauteed vegetables, feta cheese, olives, and basil. Serve warm.

basalmic vinegar is sweeter than other vinegars. you will be fine without the extra sugar, go ahead and use the red wine vinegar. If it is too strong, add a tsp of brown sugar or so, until you get the taste you desire.
