3 large tomatoes, peeled, seeded & chopped
1 medium onion, finely chopped
3 TB. butter
1 tsp. salt
1/4 tsp. thyme
prepared 8" pie crust (frozen ones are fine)
1/2 lb. Swiss cheese, diced
3 eggs, well beaten
1 c. half & half
Combine tomatoes, onion, butter, salt & thyme in saucepan, and cook over medium heat until mixture is reduced by half. Place cheese in bottom of crust. Pour tomato mixture over the cheese. Mix eggs and cream and pour over otmatoes. Bake at 425 for 10 min; reduce temp to 375 and bake 35 min, or until set. Let quiche set a few minutes before cutting .... HAPPY MOTHER'S DAY!
Fruit salad is good with this, or a green salad

3 tablespoons soy sauce
2 tablespoons lemon juice
1 tablespoon chili sauce
3/4 teaspoon ground ginger
1 pound uncooked medium shrimp, peeled and deveined
In a bowl, combine the soy sauce, lemon juice, chili sauce and ginger; mix well. Pour half into a large resealable plastic bag; add the shrimp. Seal bag and turn to coat; refrigerate for 2 hours. Cover and refrigerate remaining marinade.
Drain and discard marinade from shrimp. Thread onto metal or soaked wooden skewers. Grill, uncovered, over medium heat for 6-8 minutes or until shrimp turn pink, turning once. Serve with reserved marinade.
1 1/2 cups rice
1/2 cup vermicelli, broken to small pieces
1/4 cup butter
2 1/4 cups water
Brown vermicelli in butter in large pan. Add rice and water. Bring to a boil, then simmer on low for 20 minutes, or until water is absorbed and rice is tender.

3 tablespoons brown sugar

1 tablespoon sesame oil

8 skinless, boneless chicken breast halves - cut into 2 inch pieces
1 (20 ounce) can pineapple chunks, drained
In a shallow glass dish, mix the soy sauce, brown sugar, sherry, sesame oil, ginger, and garlic powder. Stir the chicken pieces and pineapple into the marinade until well coated. Cover, and marinate in the refrigerator at least 2 hours.
Preheat grill to medium-high heat.
Lightly oil the grill grate. Thread chicken and pineapple alternately onto skewers. Grill 15 to 20 minutes, turning occasionally, or until chicken juices run clear.

2 tbsp. minced garlic
2 tbsp. fresh thyme
2 tbsp. rosemary
1 c. olive oil
Juice of 1 lemon.
I have found it pays to tenderize the meat first to lessen the cooking time, or at a BBQ par cook the meat.

Mix all ingredients, except for shrimp, into a large bowl and whisk until well blended. Add shrimp and marinate at least 10 minutes but not more than 30 minutes, stirring once. Drain marinade into a medium size saucepan. Bring to a boil; reduce heat and simmer 3-4 minutes. Meanwhile, thread 6 shrimp on 2 skewers. Cook shrimp 4-6 inches above hot coals 1 1/2 to 2 minutes per side until pink and just barely opaque in center. Serve with hot marinade as a dipping sauce. Yield: 8 servings.
