Make a batter and dip the peppers in the batter and fry them. (Clean and seed the peppers first to cut down on the heat if you can't tolerate the heat.) Serve with Ranch dressing or marinara sauce.

Also, you can slice the peppers and put them in a jar. Bring enough vinegar to cover them. Pour the vinegar over the peppers and let cool. Then, tightly cap. You can use this to season food while you are cooking, or you can use it as a sauce to give zip to cooked soups, vegetables, etc.

Slice the peppers lengthwise. Fill with cream cheese. Put two halves back together with the cream cheese holding them together. Then, wrap with cut bacon slices. Broil or grill until bacon is cooked.

Carne Guisada
1 1/2 lbs stew meat
1 medium onion (chopped)
1 (14 ounce) can diced tomatoes
1 (6 ounce) can jalapenos (chopped)
1 teaspoon ground cumin
1 garlic clove (minced)
1 dash salt
1 dash pepper (may substitute cayenne if desired for heat)

1. Brown stew meat in oil over medium-high heat. Add onions and saute for 5 minutes. Add canned tomatoes, jalapenos, cumin, garlic, salt and pepper. Reduce heat to low, cover and simmer for 1 hour.
2. Serve on warm flour tortillas.

Absolutely you can replace the red chilies with serranos. Serranos are on the hot side for most palates, but I personally love them. Not sure if they would be hotter than "red chilies", as there are several types of "chilies" and it would depend upon which one you used. 4 serrano peppers may make your dish too spicy, so if you are sensitive to a lot of heat, you may want to scale the amount down to 2 (serranos are hotter than a jalapeno, but not as spicy as Cheyenne).

OOH yummy my favorite
cabbage salsa

If you can attain at least one tomato...and a splash of vinegar and salt
then in a bowl chop your cabbage and slice up the carrots thin and the chlies and dice the tomato. Toss some salt and the vinegar, not too much. Allow to meld and chill.

Per the vinegar I usually use pickled jalapenos for it but with fresh I may have to add the vinegar
Serve with chips

Also goes fabulous with fish, serve in soft corn tortillas and serve with white rice cooked in chicken broth and with cilantro and oregano
