I recently just made quinoa myself, for the first time & was happy to find that I loved it too! And it's really, really GOOD for you - so that's a plus! I did mine as a savory side dish to roasted chicken. I put just a half a tablespoon of butter in a sauce pan & melted it, added about a 1/2 cup of chopped onion, a cup of sliced baby portabella mushrooms, and simmered until the they were soft - about 10 minutes. Then I added a can of chicken broth, (you could use veggie broth instead), 1 generous cup of quinoa that I had rinsed well & soaked for about 30 minutes, and a teaspoon of thyme. Oh - and some salt & pepper. Then I just simmered it until the liquid was absorbed - I'd guess it took about 20 minutes & it was SO good! lol! I can't wait to make it again! I like the salad idea - especially the lime & cumin dressing - I will have to try that! I hope this helps!Theodore Said:

The way I've been doing it is to saute some sliced portabello mushrooms and onions in a bit of butter or olive oil (both have worked fine, but the olive oil is obviously healthier! lol!) Then add some salt and pepper, some minced or dried thyme, some chicken broth and your quinoa (it's about 1 cup quinoa to 2 cups liquid)....let simmer until the liquid is gone and serve! Well, try this approach.Sauteed diced onions, mushrooms, garlic and sun dried tomatoes in olive oil until onions begin to brown.. Make the quinoa and then stir in the veggies.

Found this from an old magazineQuinoa with sun-dried tomatoes
1 c quinoa
1 tsp butter
8 sun-dried tomatoes (not oil-packed),diced
2 shallots, minced
1 clove garlic,minced
2c water
pinch of cayenne pepper ,
2Tbsp chopped fresh parsley ,
salt & freshly ground black pepper
Place quinoa in a fine-meshed sieve and rinse under warm running water for
1 min. Set aside.
Heat butter in a heavy, med. saucepan over med. heat. Add tomatoes,
shallots and garlic and saute for 3-5 mins, or till shallots are softened.
Add stock or water and bring to a boil. Stir quinoa and cayenne, return
to a boil, then reduce heat to low and simmer, covered, for about 30 mins,
or until liquid is absorbed. Let sit for 5 mins, and fluff grains with a
fork to separate. Stir in fresh parsley and season with salt and pepper.
Serves : 4

Quinoa en Salpicon
2 c Raw quinoa
8 c ;Water
1 c Peeled, seeded cucumber diced
1 c Seeded and diced tomato
1/2 c Finely sliced scallions both green & white parts
1/3 c Chopped fresh Italian parsley
1/3 c Chopped fresh mint leaves
VINAIGRETTE
1/4 c Fresh lime juice
1/4 ts Ground white pepper
1 Fresh chile; seeded & minced
1 ts Coarse salt
1/2 c Olive oil
Rinse quinoa under running water and drain. Place the quinoa and water in a large saucepan, cover, and bring to a boil over high heat; this should take about 5 minutes. Remove the cover and lower the heat; simmer 10 minutes longer. Drain the quinoa and cool.
While the quinoa is cooking, make the vinaigrette. In a bowl, whisk together the lime juice, pepper, chile and salt. Gradually add olive oil, stirring constantly. Set aside.
When the grain has cooled, assemble the salad. In a bowl, place the quinoa with the cucumber, tomato, scallions, parsley and mint. Toss to mix the ingredients, then add the vinaigrette and toss thoroughly.
Season to taste with salt and white pepper.
Yield: 6 to 8 servings.

Excellent grain. A complete protein.Quinoa With Toasted Almonds and Dried Cranberries
Ingredients:
* 1 cup quinoa
* 1/2 cup sliced blanched almonds
* 1 veggie cube
* 1 1/2 cups boiling water
* 1/4 tsp salt
* 1 cinnamon stick
* 1/2 cup dried cranberries
Directions
On medium heat, stir and toast the sliced almonds until golden
Remove from pan
Stir and toast the quinoa until dry and turning color
Transfer toasted quinoa, toasted almonds, and cranberries to 2 qt saucepan
Add boiling water, veggie cube, salt, and cinnamon stick
Bring back to boil
Cover, turn the heat to simmer, cook for 20 minutes
Remove from heat and allow to sit five minutes with lid on
Fluff gently with a fork and serve.

Pistachio Pepper Quinoa
serves four
1 C. quinoa
2 C. water
1/2 t. salt
3 mildly hot peppers (ie: Aneheim)
2 green bell peppers
Pepper to taste
1/3 C. raw pistachios
1 clove garlic
1 T. extra virgin olive oil
1 T. water
Garnish
1 T. finely diced red bell pepper
1. Put quinoa grains into a fine mesh strainer and rinse under cold running water for 1 to 2 minutes to remove the saponin residue.
Put rinsed quinoa into a 2-quart saucepan. Add water and salt, cover pot, and bring to a boil over high heat.
2. Turn heat down to low and steam for 15 to 20 minutes. Turn off heat and allow cooked quinoa to stand for 10 minutes without lifting the cover.
3. Wash green bell peppers and put them on a baking sheet. Place them under the broiler 3" from the heat source. Turn every 5 minutes until darkened on all sides.
Plunge peppers into a bowl of cold water in the sink.
4. When cool enough to handle, rub skins off with the fingers. Cut all peppers open and remove core and seeds. Put peppers into a food processor.
5. Add pepper, pistachios, garlic, olive oil and water. Process to a chunky consistency.
6. Put cooked quinoa on platter or in a large bowl and spoon the pepper sauce over. Garnish with diced red bell pepper.
