If you want an entree, you can make Chicken Sorrentino. It's Chicken Cutlet with Prosciutto, Mozzarella, Eggplant, and a Marsala or Marinara Sauce. Here's a recipe from cooks.com:CHICKEN SORRENTINO
1 lb. chicken breast
6 tbsp. olive oil
2-4 slices eggplant
2 oz. (2 slices) smoked ham
8 oz. marinara sauce
4 oz. Mozzarella cheese, shredded
Preheat oven to 350 degrees.
Saute chicken breast in olive oil. Salt and pepper to taste. Set aside.
In same pan, saute eggplant until tender. Set aside.
In same pan, saute ham for about 1 minute.
To assemble in oven dish: place chicken with a layer of eggplant, ham, and cheese. Bake for 15 minutes. Serve with linguini lightly tossed with olive oil. Serves 2.

My favorite recipe site is www.epicurious.com. Go there and type "prosciutto" in the search box and you'll find loads of recipes. The best part is that each recipe is reviewed by site users. It's really terrific.This recipe below won't help you for dinner, but it's terrific for parties. You can make it ahead and freeze, then just slice and bake when guests arrive. Savory and tasty! And easy!
Prosciutto Pinwheels
Pinwheels can be made in advance, wrapped and unbaked, and frozen up to three months. Bake shortly before serving. Since this recipe uses half a package of puff pastry, doubling is easy. (This recipe makes about 4 dozen pinwheels).
All purpose flour for rolling
1 sheet (from 17 oz package) frozen puff pastry, thawed
5 ounces pecorino cheese, graded (about 1 ½ cups)
¼ pound prosciutto, thinly sliced
On a clean, lightly floured surface, roll the sheet of puff pastry into a 1/8 inch thick rectangle, about 10 by 14 inches. Sprinkle with half the grated cheese. Top with a single layer of sliced prosciutto and sprinkle with remaining cheese. Starting with the longest edge, roll pastry into a tight log. Transfer to a baking sheet and freeze 45 minutes or until firm enough to slice.
Preheat oven to 425 degree. Slice log into ¼ inch thick slices; place on baking sheet, and bake 5 minutes. Reduce oven temperature to 375 and continue baking until golden brown and cooked through, about 15 minutes. Cool on a wire rack and serve.

Quick, Easy -N- Fast Fettuccine Alfredo With Peas and Prosciutto Recipe3 1/2 C. chicken broth
2 C. milk
3/4 lb. dried fettuccine
1 1/2 C. (10 oz. package) frozen petite peas
1 oz. thin-sliced prosciutto
1 1/2 t. cornstarch
1 C. sour cream
1/2 C. grated Parmesan cheese
1/4 t. freshly grated nutmeg or ground nutmeg
salt and pepper
In a 5- to 6-quart pan, combine broth, milk and fettuccine (break fettuccine if necessary to fit into pan). Cover and bring to a boil over high heat, stirring occasionally. Reduce heat to medium-high and cook, uncovered, stirring often to separate noodles, for 5 minutes. Add peas and stir occasionally until pasta is tender to bite, 2 to 4 minutes longer.
Meanwhile, separate prosciutto slices and cut crosswise into 1/4 -inch-wide strips.
In a small bowl, mix cornstarch with 2 tablespoons water until smooth. Add to pasta mixture and stir until it boils and thickens. Add sour cream, Parmesan cheese, nutmeg, and salt and pepper to taste. Stir until well-blended and heated through, about 1 minute. Stir in prosciutto. Spoon onto plates.
Makes 4 servings.

You could use a veggie bacon analog, or a seaweed such as dulse or laver. If you saute dulse leaves in a dry fry pan, they will crisp up a bit and have a salty flavor, similar to bacon or proscuitto. I toss it in pasta dishes alot. Laver can also be toasted, and has a chewier texture that is more "meat like" There are quite a few sea vegetables that have great texture and flavor. They are available at most health food stores or asian markets. Kudos to you for supporting your veggie friends! Many just dismiss the whole notion. Good on you!Jeff Said:

Creamy Prosciutto Pasta1 package (9 ounces) refrigerated fettuccine or refrigerated linguine
1/2 pound sliced fresh mushrooms
1 small onion, chopped
1 tablespoon butter
1 package (10 ounces) fresh baby spinach
1 jar (15 ounces) Alfredo sauce
1/3 pound thinly sliced prosciutto, chopped
Directions
Cook fettuccine according to package directions. Meanwhile, in a
large saucepan, saute mushrooms and onion in butter until tender.
Add spinach. Bring to a boil. Reduce heat; cook just until spinach
is wilted.
Stir in Alfredo sauce and prosciutto; cook for 1-2 minutes or until
heated through. Drain pasta; add to sauce and toss to coat. Yield: 4
servings.

For the prosciutto and/or salami, I like an antipasti pasta salad. Add ins - marinated artichoke hearts, cubed mozzarella, sun-dried or cherry tomatoes, vinaigrette or Italian dressing.Prosciutto wrapped asparagus.
Prosciutto wrapped around melon slices.
Add prosciutto to a beef braciole w pine nuts, bread crumbs & parmesan.
Watermelon squares wrapped w prosciutto and drizzled w balsamic.
Watermelon salad w prosciutto, feta, and balsamic.
I also use prosciutto in place of ham (w mozzarella cheese) in chicken cordon blue.
