You can thaw them out and seperate them so they're not patties and use them for your casserole. But, the patties come seasoned and unseasoned. If you're are the seasoned kind, adjust the seasoning in your casserole recipe so it doesn't turn out too spicy or salty.

Ingredients
5 large potatoes
1/3-1/2 cup fresh lemon juice
2 heads garlic
1 tablespoon dried oregano
1 pinch sugar
2-3 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
feta cheese (optional)
Directions
1Peel and chop potatoes into large chunks.
2Crush garlic, and to it add lemon juice, oregano, olive oil, salt and pepper and sugar.
3Place all ingredients in a deep baking dish with cover and mix to coat.
4Bake for 1 hour at 350 degrees, basting several times with juices in pan.
5Uncover pan for the last 10 minutes to allow the potatoes to crisp up.
6Sprinkle with feta cheese and serve.

Gratin Potatoes:

Using a baking dish, distribute sliced potatoes in a layer followed by a layer of shredded cheese. Repeat untill the dish is full. Fill the dish halfway with milk. Cover the dish with aluminum foil (just to keep it from boiling over and leaving a mess in your oven). Cook at about 350° for an hour, stirring every ten or fifteen minutes. Let cool for 20 mins.

Rosemary Potatoes:

Use small red potatoes. Preheat the oven to about 300°. Wash potatoes and cut in half. Coat the bottom of a baking dish with a thin layer of olive oil followed by a sprinkle of rosemary. Evenly distribute the potato halves in a single layer in the dish. Sprinkle a light layer of olive oil over the potatoes, and a generous amount of rosemary. Put in the oven to cook for 20-30 mins. Turn potatoes over after about 10-15 mins. Watch them closely to make sure they don't burn. Cook untill golden brown.

Easy one is boiled cabbage and potatoes. Fast, easy, and cheap. Toss in a tad bit of garlic, maybe some onions if you so desire, salt and pepper to taste.

Twice baked potatoes would be something else to give a try. Bake the potato, let them somewhat cool down. Cut in half and scoop out the insides and mash them with some margarine, salt and pepper, any spices you might like to add, with a touch of soy milk or dairy if you use dairy. Sprinkle some of those fake bacon bits on them or maybe some soy cheese or real cheese if you do dairy. Place back into the skins, place under the broiler to brown them. Cheap to fix and a great side dish.

Edit: I found some links that I am adding from a potato company and cooking site that if you tweak on some of them will be totally vegetarian.

you could smash them and make mashed potatoes, there are also potato pancakes. They are probably too cooked (done) for potato soup.

Potato Pancakes are good with Pork Chops
INGREDIENTS
5 pounds potatoes, peeled
1 onion
3 eggs, beaten
2 1/2 cups dry pancake mix
2 teaspoons salt
1 teaspoon ground black pepper
1 tablespoon vegetable oil


DIRECTIONS
In a food processor grate potatoes and onion. In a large bowl combine potatoes, onions, eggs, pancake mix, salt and pepper.
Heat oil in a large skillet over medium heat. Spoon potatoes into skillet and cook as you would pancakes, for 3 to 4 minutes on each side.

You could smash them and serve with Bacon Bits (real) and cheese...you could even add Broccoli.
