Here's a recipe for Creamy Garlic Mashed Potatoes:
Prep Time: 30 minutes
Yield: 10 to 12 servings

Ingredients
3 1/2 pounds russet potatoes
16 fluid ounces (2 cups) half-and-half
6 cloves garlic, crushed
2 tablespoons kosher salt
6 ounces grated Parmesan
Directions
Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.

Heat the half-and-half and the garlic in a medium saucepan over medium heat until simmering. Remove from heat and set aside.

Remove the potatoes from the heat and drain off the water. Mash and add the garlic-cream mixture, salt, and Parmesan; stir to combine. Let stand for 5 minutes so that mixture thickens and then serve.

Stuffed Baked Potatoes

INGREDIENTS:
4 large baking potatoes, about 2 pounds
4 tablespoons softened butter or margarine
3/4 cup sour cream
3/4 teaspoon salt
1/4 teaspoon white or black pepper
Paprika
shredded Cheddar or Monterey Jack cheese
PREPARATION:
Scrub potatoes and pat dry. Bake in a 350° oven for 45 to 50 minutes or until cooked through and tender. Cut potatoes in half lengthwise; scoop out pulp and mash or put through a ricer. Beat in butter, sour cream, salt and pepper.
Pile potato mixture back into only 6 of the shells.

This is where you wrap them in plastic wrap and foil and freeze them, pull them out when needed and continue.

Sprinkle with shredded cheese then sprinkle with paprika. Bake in a 375° oven for about 25-30 minutes or until cheese is melted and potatoes are heated through.

Peel and dice potatoes into about inch squares. Use red potatoes are best for boiling. When a fork goes easily into them they are done. Drain and add butter and a tiny bit of milk. Careful with the milk too much and the potatoes have a soupy consistence. You want them to be firm so they can peak. This is a very common recipe. If they are Irish use about 2 good size potatoes per person. If they are light eaters one will do. Don't worry about cooking to many they keep well in the fridge. In my family there is never enough gravy or mashed potatoes. but then we are Irish. Use about one pat of butter per potato while mashing. You might ask them if it is the right consistency. You can use an electric mixer to mash the potatoes or a masher. Again add only a tablespoon of milk at a time till you have the right consistency.

Gravy always goes with Mashed potatoes. Take some butter couple of tablespoons in a pot add flour a couple of tablespoons and stir while cooking over a medium temperature. When the mixture forms a ball and becomes golden brown remove from heat. this is called a rue. Add meat drippings and stir in and return to burner. Continue to cook till it reaches desired consistency and remove from burner. The longer you cookgravy the thicker it gets, so it is best to make toward the end. You can buy cans or packets of gravy but homemade taste better. I season my turkey gravy with tarragon, onion, sage and garlic. Easy on the tarragon and sage they are strong. garlic can be strong too. personally I love garlic.

For some reason cranberry sauce is a perfect complementary to Turkey. You can buy it pre-made in a can or make yourself. Just follow the recipes provided. You don't want too much work after all you want to enjoy the holiday too. Hope you have a family that will help.

I am not a great stuffing fan but it is definitely a thanksgiving tradition. I have been told that the brand Stove Top Stuffing is pretty good. this will also give you some time for yourself.

You can look up sweet potato or yam recipe or buy a can and follow it's directions.

You might want to add a green veggie. anything your family likes.

Pumpkin pie is another thanks giving tradition. Again How much do you like to cook. buy a pie if you don't want to be slaving all day in the kitchen.
