When I was working as a chef we did several with port, using dried and fresh fruits like apricots, cherries, blueberries, blackberries and even seedless red grapes.It was used to deglaze the pans with a bit of stock reduced to a syrupy mix, monted with cold butter and the fruits added just before the butter was completly worked in.
For home use you can make a sauce like or similar to duck a la orange with the port for the cut of pork your using, and add either fruit or nothing just serve it as an au jus or thickened sauce.
Ilike the earthiness of both ports, and the sweetness counter the rich taste of the pork itself, my fav was the cherries both dried and a sour hungarian type, I bought in a jar from Honest Ed's World Famous discount store. Done with a roasted or sauted pork tenderloin and served with a nice rich Cabernet you will be in heaven for sure with a dish like that.

once mixed you pour another 2 oz of Dark rum over the top.

You don't need to simmer it in the oven. Infact if you want to reach a really concentrated flavor from the port, I recommend the following.Dump the bottle of port in a pot.
Simmer and reduce by 1/3rd, then taste the reduced flavor and add white sugar to desired sweetness add your peeled pears and simmer for another 1/2 hour or until the pears are done to your liking.
Remove pears and place in a container-At this point you can decide if you want to simmer the sauce a bit more to reach a more syrupy consistency or not. When you are done with the syrup drizzle over the pears and let cool or keep warm-what ever makes you happy. :o)

The BEST chocolate chip cookie recipe EVER!!!Ingredients:
13 oz flour
1 teaspoon baking soda
2 sticks of margarine
3/4 cup of brown sugar
1/2 cup of sugar
1 package instant french vanilla pudding mix
2 eggs
1 teaspoon vanilla
1 bag of chocolate chips (10 oz)
Procedure:
1. Preheat oven to 350
2. Mix flour and baking soda in small bowl, and set aside.
3. In large bowl, cream together the margarine, brown sugar,
and white sugar. Blend until creamy.
4. Beat in the instand pudding mix until completely blended.
5. Stir in the eggs and vanilla.
6. Blend in flour mixture.
7. Stir in the chocolate chips.
8. Portion dough with a scoop or with hands to form small balls.
Place on baking sheet.
9. Bake for 11-12 minutes. When the edges of the cookies
have started to brown, they are done!!

no - there is a big difference between cab & port. port is a strong sweet wine; cab, while a heavy red has a totally different flavor, its usually drier witth lots of tannins. if the recipe calls for port, i would stick to it. the closest thing in a pinch would be a marsala wine or muscat. hope this helps.
