Pomegranate Sorbet in Champagne
MAKES ABOUT 4 CUPS

Look for large, heavy pomegranates to yield dark red juice. Serve the sorbet in shallow bowls in a pool of Champagne or pass glasses of Champagne alongside.

POMEGRANATE SORBET
7 large pomegranates-- 6 halved crosswise, plus 1 peeled and separated into seeds, for garnish
3/4 cup plus 1 tablespoon sugar
2 teaspoons fresh lemon juice
Chilled brut Champagne, for serving
Candied Clementines

Using a large citrus juicer, ream 12 of the pomegranate halves to yield 2 cups of juice. Strain the juice if necessary to remove any seeds or white pith.

2. In a small saucepan, combine the sugar with 1/2 cup plus 2 tablespoons water. Simmer the syrup over moderate heat until thick and reduced to 3/4 cup, about 5 minutes. Let cool to room temperature. Stir the syrup and lemon juice into the pomegranate juice. Transfer the mixture to an ice cream maker and freeze according to the manufacturer's instructions. While the sorbet is churning, chill a stainless steel bowl in the freezer. As soon as the sorbet is done, transfer it to the chilled bowl.

3. To serve, scoop the pomegranate sorbet into chilled dessert bowls or Champagne saucers. Pour Champagne around the sorbet, garnish with 3 or 4 Candied Clementines and sprinkle with the pomegranate seeds.

MAKE AHEAD The pomegranate juice can be frozen for up to 1 month. The pomegranate sorbet can be frozen, covered, for up to 2 days.

Pomegranate Champagne Cocktail

Though very simple, this cocktail offers a festive color and bright taste should you want to enliven your champagne. Pomegranate juice is available in most natural foods stores.

1 part pomegranate juice
3 parts dry champagne or sparkling wine
Dash of Campari
Pomegranate seeds, for garnish (optional)

Mix together first three ingredients and pour into chilled champagne flutes or martini glasses. Optional: Float pomegranate seeds on top.

[Note: If you are unable to find good-quality champagnes locally, this can be an option for enlivening a not-so-wonderful bottle.]

Citrus Pomegranate Chicken over Whole Wheat Couscous

Ingredients:
1 (3 1/2 to 4 pound) chicken , cut into 8 pieces, skin removed
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons olive oil
1 medium onion , chopped
2 cloves garlic , minced
2 teaspoons cumin seeds
1 teaspoon garam masala
1 1/2 tablespoons all-purpose flour
1 can (14 1/2 ounces) chicken broth
1/2 cup dried apricots , halved
1 tablespoon grated lemon zest
2 teaspoons minced, peeled fresh ginger
1 cup whole wheat couscous , cooked according to package directions
1 cup pomegranate seeds (fresh or packaged)
Preheat oven to 375°. Sprinkle chicken pieces with salt and pepper.

In a 5-quart Dutch oven, heat oil over medium-high heat. Add chicken to Dutch oven in batches and cook until golden brown, about 5 minutes per side. Transfer chicken pieces to a plate.

Add onion and garlic to Dutch oven and cook, stirring frequently, until softened, 2 to 3 minutes. Add cumin and garam masala and cook, stirring, until fragrant, about 1 minute; stir in flour, then 1/2 cup water, chicken broth, apricots, lemon zest, and ginger. Bring sauce to a boil, stirring; return chicken to Dutch oven. Cover and bake until chicken is cooked through and tender, about 40 minutes. Serve chicken over couscous; spoon sauce over and sprinkle with pomegranate seeds.

I have the best pomegranite seed salad recipe!

Toss mixed greens, almonds, a soft goat cheese like a chevre, and pomegranite seeds together with a vinaigrette. (You can make your own, so easy! Just mix a little olive oil, some apple cider or balsamic vinegar, and salt and pepper together). Finish with a little salt and pepper and enjoy!!

Also, you can crush the seeds and make a pom juice, mix that with some vodka and lime juice, and make pomegranite martinis. Yum!

Or, substitute them for other fruits while making scones.

strain the seeds from the juice....mix with lots of iced vodka in a big jug with slices of lime, lemon & orange....sit out on your porch in full view of the neighbours and have a party !

you can also add the juice to the bottle as the vodka will preserve it !!....so you can store it up for future use if you dont drink it all now

Chicken with Walnut, Onion, and Pomegranate Sauce Recipe
Chicken


Ingredients:
1/2 stick (1/4 cup) unsalted butter
2 1/2- to 3-pound chicken, cut into serving pieces
2 onions, sliced thin
1 teaspoon ground cinnamon
2 cups coarsely ground toasted walnuts
1 pomegranate (about 8 to 10 ounces), halved and squeezed gently to yield enough seeds and juice to measure about 2/3 cup
1/2 cup tomato sauce
1 1/2 cups chicken broth
1 tablespoon plus 1 teaspoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespon unsulfured molasses


Directions:
Fesenjan (Persian-Style Chicken with Walnut, Onion, and Pomegranate Sauce)

In a large heavy skillet heat the butter over moderately high heat until the foam subsides, in it saute the chicken, patted dry, turning it once, for 15 minutes, or until it is browned on all sides, and transfer it to a plate. Add the onion to the skillet and cook it over moderately low heat, scraping up the brown bits, for 10 minutes, or until it is golden and softened. Stir in the cinnamon and cook the mixture, stirring, for 1 minute. Stir in the walnuts and cook the mixture, stirring, for 1 minute. Stir in the pomegranate seeds and juice, tomato sauce, broth, lemon juice, salt, pepper, and molasses, bring the mixture to a boil, and simmer it for 3 minutes. Add the chicken and any juices that have accumulated on the plate and simmer the mixture, covered, for 15 to 20 minutes, or until the chicken is cooked through.

Yield: 4 to 6 servings
Difficulty: Easy

pomegranate liquor is almost bransd new..grenadine was a syrup made from them but this new item is a true liquor. it is mostly used for color but does impart some flavor..heres the hurricane
1.5 ounces light rum
1.5 ounces dark rum
1 ounce orange juice
2 oz pomagranate liquor
1 ounce fresh lime juice (NOT Rose's or RealLime)
1 teaspoon superfine sugar

Cherries with stems, and orange slice to garnish
Ice cubes
