PESTO PASTA SALAD1 (9 oz.) pkg. fresh pasta
1 sm. jar pesto sauce (or make your own)
2 tomatoes
1 c. spinach
2 tbsp. lemon juice
Pine nuts
1 red onion
Parmesan cheese, to taste, about 1/4 c.
Chop tomatoes and spinach. Dice onion. Grate Parmesan cheese. Quick cook pasta and drain. Toss with pesto. Add chopped spinach, tomato, onion and drizzle with lemon juice. Toss together and sprinkle with Parmesan cheese. Can be served warm or at room temperature.

ITALIAN FRUIT COOKIES1/2 c. (1/4 lb.) butter
2 c. sugar
1 1/2 tsp. anise extract
6 eggs
5 c. unsifted flour
1 tbsp. baking powder
1/2 tsp. salt
1 1/2 c. diced mixed candied fruit or
3/4 c. candied fruit & 3/4 c. whole pine nuts (pignoli)
Cream butter and sugar in a large bowl. Blend in anise extract and eggs. Mix together the flour, baking powder and salt; gradually mix into butter and egg mixture. Chill dough 1 hour. Divide dough into 4 equal parts.
Taking 1 portion of dough at a time, roll out on a floured board to make a rectangle 12 inches long and 8 inches wide. Sprinkle surface of dough evenly with 1/3 of the candied fruit or nuts. Starting with the wide side of the rectangle, roll dough tightly to make a long compact loaf. Place rolls on lightly greased baking sheets (2 loaves to a baking sheet). Bake in 375 degree oven for 25-30 minutes, until lightly browned.
Remove from oven, let cool on pans for 5 minutes, cut in diagonal slices, 1/2 inch thick. Lay slices, cut side down, close together on the baking sheets and return to the 375 degree oven for 16-18 minutes, until lightly toasted. Cool on racks and store in airtight containers or freeze. Makes about 6.

SPINACH AND BASIL SALAD WITH PINE NUTDRESSING
1 1/4 c. pine nuts, toasted (about 6 1/2 oz.)
1/2 beaten egg
2 tsp. minced shallot or green onion
3/4 tsp. fresh lemon juice
1/2 c. olive oil
3 tbsp. balsamic or red wine vinegar
Salt and freshly ground pepper
1 1/4 lbs. spinach, stemmed
1 sm. bunch basil, stemmed
3 tbsp. (about) water (optional)
1 (4 oz.) piece Parmesan cheese, cut into shavings with vegetable peeler
Puree 1/2 cup pine nuts in processor. Add egg, shallot and lemon juice and puree. Gradually add oil and vinegar alternately through feed tube and blend until smooth. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
Toss spinach and basil in large bowl. Divide greens among plates. Thin dressing with water if desired. Spoon enough dressing over greens to season to taste and toss. Top with cheese and remaining pine nuts.

Basil Pine Nut SoupThis soup can be prepared at the last minute and is full of nutritious ingredients.
4 coriander seeds, crushed
1¼ cups ground pine nuts
1 whole clove
2 cups chicken stock
2 basil leaves
6 green onions, chopped
1½ cups milk
3 Tbs butter
½ cup light cream
Saute the coriander seeds, clove and onions in the butter for 2-3 minutes over low heat. Combine the sauteed mixture, pine nuts and stock and simmer gently for 10 minutes. Add the milk and cream and heat thoroughly. Serve. If you have the ingredients on hand this should take no more than 20-25 minutes to completely prepare.
