We Answered:RICE WITH PIGEON PEAS AND SPARERIBS
1 1/2 lbs. spareribs
1 1/2 lbs. fresh pigeon peas
4 c. water with 2 tsp. salt to soften the spareribs
3 c. water to soften the pigeon peas
4 tsp. shortening with annatto (achiote)
2 oz. cured ham, diced
1 tomato, chopped
1 onion, chopped
1 green pepper, chopped
2 sweet chili peppers, chopped
1/4 tsp. oregano
6 fresh coriander leaves
3 garlic cloves, chopped
3 1/3 c. rice
1/3 c. tomato sauce
4 tsp. salt
Clean pigeon peas; soak in 4 cups water with 2 teaspoons salt for 15 minutes. Cook in 3 cups of water until the pigeon peas are tender. Cook the spareribs in 4 cups of water with 2 teaspoons salt over low heat for 45 minutes or until tender.
Heat the shortening with the Anniatto in a large kettle over medium heat and brown the cured ham. Add the onions, peppers, tomato sauce. Saute for 3 minutes. Add the spareribs and drained pigeon peas.
Bring the heat to medium high and saute for 3 minutes. Add the rice, 3 cups of the broth in which the spareribs were cooked and 1 cup of water. Season with 4 teaspoons salt and bring to boil over high heat. Reduce the heat to medium and cook uncovered until rice is dry. Turn the rice over and cover until cooked.
PIGEON PEAS SOUP
2 c. pigeon peas, fresh or canned
4 c. chicken stock or water
1/2 lb. fresh beef or chicken, cubed
1 bunch finity soup
1/4 lb. pumpkin
Salt and pepper to taste
1/2 c. tomato puree
1 tsp. sugar
2 onions, sliced
1 med. carrot, cut into rounds
1 clove garlic
Wash pigeon peas and put into boiling water or stock to cook until soft. Add remaining ingredients. Simmer gently until flavors are developed and beef is cooled. Serve immediately

We Answered:Bistec Encebollao -- Use any cut of steak when making this easy beef stew. Serve with white rice and tostones. Water can be used in place of beef stock if desired.
2 pounds beef sirloin steak, sliced thinly across the grain
1/2 cup olive oil
2 tablespoons minced garlic
1 pinch dried oregano
1 (.18 ounce) packet sazon seasoning
2 large white onions, sliced into rings
1/4 cup distilled white vinegar
1 cup beef stock
1 teaspoon salt
In a large resealable bag, combine the steak, olive oil, garlic, oregano, sazon seasoning, onions, vinegar, beef stock, and salt. Seal and shake to mix. Refrigerate for at least 4 hours, or up to a couple of days.
When you are ready to cook, dump the entire contents of the bag into a large deep skillet. Bring to a boil, reduce heat to low, cover and simmer until the beef is fork tender, about 40 minutes.
Jibarito -- Authentic Puerto Rican sandwich that my family can't get enough of. Wonderful because there is NO bread involved!!!
2 cups vegetable oil for frying
1 green plantain, peeled and halved lengthwise
2 tablespoons vegetable oil
1 clove garlic, minced
4 ounces beef skirt steak, cut into thin strips
1/4 medium yellow onion, thinly sliced
1 pinch cumin
1 pinch dried oregano
1 tablespoon mayonnaise
1 slice processed American cheese, cut in half
2 slices tomato
3 leaves lettuce
Heat 2 cups vegetable oil in a large, deep skillet or deep fryer to 350 degrees F. Place plantain halves in the oil and cook 1 to 2 minutes, until they float. Remove from oil and drain on paper towels.
Place plantain halves between 2 cutting boards. Press to flatten. Place the flattened plantains back in the oil and cook for 2-3 minutes, until golden brown. Drain on paper towels.
Heat 2 tablespoons of oil in a large skillet. Add the garlic, skirt steak, onion, cumin and oregano. Cook, stirring frequently, until steak is cooked through.
To serve, spread mayonnaise on one of the plantain slices. Top with cheese, steak and onion mixture, lettuce, and tomato. Place the other plantain half on top to form a sandwich. Cut in half and serve!
Pollo (Chicken) Fricassee from Puerto Rico --
1 pound chicken drumsticks
1 tablespoon adobo seasoning
1/2 (.18 ounce) packet sazon seasoning
1/2 teaspoon salt
5 large red potatoes, peeled and thickly sliced
1 large red bell pepper, seeded and chopped
1 large green bell pepper, seeded and chopped
1 large onion, chopped
5 cloves garlic, minced
1 bunch fresh cilantro, chopped
2 tablespoons olive oil
1/2 cup dry red wine
1 teaspoon ground cumin
1 teaspoon dried oregano
2 fresh or dried bay leaves
Wash the chicken and pat dry; place into a large bowl. Season with adobo seasoning, sazon seasoning, and salt. Place the legs into a slow cooker, and cover with the potato slices.
Puree the red pepper, green pepper, onion, garlic, cilantro, olive oil, wine, cumin, and oregano in a blender. Pour over the chicken and add the bay leaves.
Cook on Low for 6 to 8 hours, until the chicken is easily removed from the bone

We Answered:I'll tell you how my mom makes it.
Half pound for about four people.
1.Fry the rice in canola oil - until it's toasted
2. Add one clove of garlic - minced
3. Half cup of minced onions....
4. Then add half a cup of tomato sauce and the seasoning salt
you can add chicken bouillon.
5. Then add 1 cup of water and then add the peas.
