6 Cup sugar
2 1/2 Cup milk
1/2 Cup light corn syrup
1/2 Cup butter (or margarine)
Combine pulp, sugar, milk and syrup in large sauce pan. Cook slowly until mixture reaches soft ball stage or 230 degrees. Cool to lukewarm. Stir often. Add butter. Beat well. When mixture begins to thicken, stir in 1 cup chopped nuts. Spread in buttered 8 1/2 x 13 inch pan.

Ingredients
1/2 c shortening
1 c persimmon pulp
2 c all-purpose flour
2 ts baking powder
1/2 ts baking soda
1/2 ts salt
1/2 ts cinnamon
1/2 ts nutmeg
Instructions
Cream shortening in large mixing bowl. Gradually add sugar,
beating well. Add eggs and persimmon, mix well. Sift together flour, baking powder, soda, salt, and spices. Add to creamed mixture, stirring well. Drop dough by Tablespoonfuls onto a greased cookie sheet, 2 inches apart. Bake at 350 for twelve minutes
FROSTING (if desired) 3 cups sifted powered sugar 1 tablespoon butter or margarine, melted 3/4 teaspoon vanilla 3 to 6 tablespoons milk
Combine first three ingredients in small mixing bowl; add milk
slowly until desired spreading consistency is reached.

OMG! I haven't had persimmon's since I moved away from Indiana. We used to go out in the fall to the woods and pick up as many persimmons as we could. Then we would bring them home and make a puree out of them to make several different recipes. We made Persimmon pudding, persimmon cookies and persimmon bread. Here are the recipes:Persimmon Bread
Ingredients:
2 eggs
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
1/2 cup vegetable oil
1 teaspoon ground cinnamon
1 cup persimmon pulp
1/2 cup chopped walnuts
1 teaspoon baking soda
1/2 cup raisins
Directions:
Preheat oven to 325 degrees F (165 degrees C). Oil a 9 x 4 inch pan. In a small bowl, combine flour, cinnamon, salt, nuts, and raisins. In a large bowl, blend eggs, sugar, and oil. Mix baking soda into pulp, and add to sugar mixture. Fold in flour mixture. Pour batter into prepared pan. Bake for 75 minutes, or until tester inserted in the center comes out clean.
Persimmon Cookies
Ingredients:
2 ripe persimmons, pureed
1 teaspoon baking soda
2 cups all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 egg
1 cup white sugar
1/2 cup butter
1 cup raisins
1 cup chopped walnuts
Directions:
Preheat oven to 350 degrees F (180 degrees C). Dissolve baking soda in persimmon pulp and set aside. Sift flour, spices and salt together, set aside. Cream together butter or margarine and sugar until fluffy, beat in egg and persimmon. Stir in dry ingredients. Stir in nuts and raisins. Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes.
Persimmon Pudding
Ingredients:
1/2 teaspoon baking soda
2 cups persimmon pulp
2 1/2 cups white sugar
2 eggs, beaten
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
1 pinch salt
2 1/2 cups milk
4 tablespoons melted butter
Directions:
Preheat oven to 325 degrees F (165 degrees C). Butter one 9x13 inch baking pan. In a mixing bowl, combine persimmon pulp, baking soda, sugar and eggs. Mix well. Add flour, baking powder, cinnamon, vanilla, salt, milk and melted butter. Stir to combine. Pour into baking pan and bake for 55 minutes. The pudding will rise but will fall when removed from oven. Once cooled, keep in the refrigerator. Good warm or cold. Serve with whipped cream.

If you have persimmons they should be soft or else they will be too astringent to use. Freezing the fruit overnight and then thawing softens the fruit and also removes the astringency.If they are not soft you can also do this: wrap them in newspaper or put them in a brown paper bag and leave them sitting at room temperature until they are soft. You can just scrap the pulp from the skin with a spoon

Persimmon Tea Bread2 tbsp. brandy
1 cup golden raisins
1 3/4 cup all purpose flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
3 large eggs
1 cup sugar
1 cup pureed hachiya persimmon (about 2 large)
1/2 cup vegetable oil
1 tsp vanilla extract
Preheat oven to 350 degrees F. Pour brandy over raisins and set aside. Whisk together flour, cinnamon, baking soda, and salt and set aside. In a mixing bowl, beat together eggs, sugar, persimmon pureee, oil, and vanilla. Add dry ingredients and mix until just blended. Stir in raisins and brandy. Pour into a greased 9x5-inch loaf pan, and bake for 60-70 minutes, until a tester comes out clean. Cool on rack 15 minutes, then remove from pan to cool completely.

1 cup chocolate chips
1 cup persimmons
Wash persimmons well. Remove stem. Place in blender with or without skins to make pulp. Mix together all dry ingredients except sugar. Add chocolate chips, nuts and dates to dry ingredients. Stir until all coated.
Cream sugar, shortening, egg together. Add persimmons. Mix well. Stir into first mixture and blend well. Drop by teaspoons onto buttered cookie sheet. Bake 12 to 15 minutes in 350 degree oven.

2 c. persimmon pulp, mixed with 2 tsp. soda
4 c. flour
2 tsp. cinnamon

2 c. raisins
2 c. walnuts
1 (16 oz.) pkg. chocolate chips
Cream sugar, butter and eggs; beat well. Add persimmon pulp. Mix spices with flour and add to egg mixture blending well. Add raisins, nuts and chips. Drop by teaspoonful onto cookie sheet.

2 c. brown sugar
2/3 c. white sugar
