You can use your blender but you may find that this mixture is too dry for the blender so you will most likely need to add the extra oil that the recipe mentions just to get it to move around in the blender.

Alternatively, you could try adding a couple of tablespoons of room temperature chicken or vegetable broth before adding extra oil. This may help the mixture move around better without having to make it too oily.

INGREDIENTS
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
3/4 cup milk
2 medium potatoes, peeled and sliced
2 small onions, sliced
3 bacon strips, cooked and crumbled


DIRECTIONS
In a saucepan, melt butter. Stir in flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
In a greased 1-qt. baking dish, layer the potatoes and onions. Pour white sauce over the top. Cover and bake at 350 degrees F for 65-75 minutes or until potatoes are tender. Sprinkle with bacon.

Pancetta Frittata
Ingredients
8 ounces pancetta, diced
6 ounces shallots, peeled and thinly sliced
12 eggs
1/4 teaspoon kosher salt
fresh ground black pepper
4 ounces gruyere cheese, grated
2 tablespoons minced fresh flat-leaf parsley
1 tablespoon olive oil, plus more for drizzling
8 ounces mixed salad greens
1 tablespoon fresh lemon juice
Directions
1In fry pan over medium-high heat, cook pancetta until crisp, 5-7 minutes. Transfer to paper towel-lined plate.
2Pour off all but 1 tbsp fat from pan; return pan to medium heat. Cook shallots until tender, 5-7 minutes. Remove from heat.
3In large bowl, whisk eggs, salt, pepper, cheese, and parsley. Stir in pancetta and shallots. In deep half of frittata pan over medium-low heat, warm 1 tablespoons of oil. Add eggs; cook until they begin to set, 8-10 minutes. Stir occasionally with rubber spatula during first 2 minutes of cooking. Place shallow pan upside down on top of deep pan; flip frittata into shallow pan. Cook, covered, unti eggs are completely set, 7-10 minutes. Shake pan to loosen frittata; slide it onto serving plate.
4Let stand 10 minutes. In bowl, toss salad greens with lemon juice and drizzle of olive oil. Cut frittata in slices.

com has always stated you and use 'bacon' if you do not
want to purchase the pancetta.

and Yes I have used it, tried pancetta once - tooooo costly for me.
