1 (18-ounce) package refrigerated cookie dough
1 (8-ounce) package cream cheese, room temperature
1/3 cup sugar
1/2 teaspoon vanilla extract or other flavoring (almond, orange, or lemon)
Fresh blueberries, banana slices, mandarin orange sections, seedless grapes, strawberry halves, kiwifruit (or any other fruit you want), well drained
1/2 cup orange, peach, or apricot preserves
1 tablespoon water
Preheat oven to 375 degrees F. Line an ungreased 14-inch pizza pan with cookie dough cut in 1/8-inch slices, overlapping slightly. Bake 12 minutes or until light brown; remove from oven and cool on a wire rack.
In a medium bowl, combine cream cheese, sugar, and vanilla extract or other flavoring; spread over cookie crust. Arrange fruit over cream cheese layer in any design you want (use your imagination).
In a small saucepan over very low heat, make a glaze by heating preserves and water. Brush glaze over fruit, making sure to cover the fruit that will turn dark. Refrigerate until ready to serve.
Note: This does not keep well, so plan on using it up. You may also use your own sugar cookie recipe in place of the refrigerated dough.
Makes 8 to 10 servings
Mandarin Orange Vinaigrette Recipe
1-1/2 cup extra-virgin Greek olive oil
3/4 cup vinegar
3/4 cup Mandarin juice
2 Tbsp red wine vinegar
2 Tbsp brown sugar
2 Tbsp sugar
Whisk all ingredients together. Serve cold or warm over your choice of green salad. Spinach salad is especially good with this dressing.

Turkey and Mandarin Orange Rolls Recipe
4 (10-inch) flour tortillas
4 ounces fat-free cream cheese, softened
1/3 cup Mandarin oranges, chopped and drained
1/4 teaspoon red pepper
1/4 cup sliced green onions
6 ounces deli turkey, thinly sliced
20 medium spinach leaves, washed and stemmed
In bowl, mix cream cheese, oranges and red pepper. Layer each of the tortillas with a quarter of all the ingredients, leaving a 1-2 inch strip around edges without toppings. First spread cream cheese mix on tortillas, sprinkle with green onions, then layer with turkey and spinach leaves. Roll tightly. Slice ends (without topping) off and discard, and then slice each tortilla in 6 pieces. Refrigerate for up to 8 hours before eating.

Place a medium size stainless steel bowl in freezer.
In another stainless steel bowl mix mascarpone cheese, yokes and sugar until smooth. Add Mandarin syrup, Zest and Absolut Mandrin Vodka to mixture. Blend until well mixed. Place in fridge for 1 hour.
Remove Stainless Steel bowl from the freezer, add heavy whipping cream and whip until soft peaks form. Add sugar and 2 tbs. Absolut Mandrin Vodka and blend well.
Place pack of crapes in microwave for 10 seconds. Remove one crape and place on plate. Place one large spoon of Mascarpone mixture in middle and spread down the middle. Place Mandarin Orange Segments down the middle on top of cream mixture. Roll the crepe up. Garnish with Mandarin Syrup, Whip cream and grated chocolate. Place a Mint sprig along side the crape.
Ingredients: Mascarpone Cream
â€¢ Mandarin Juice, 11/2 cups
â€¢ Absolut Mandrin Vodka, 1/3 cup
â€¢ Mascarpone Cheese, 1 cup

1. Combine the Mandarin Juice and half of the Absolut Mandrin Vodka, set aside.
2. Combine the mascarpone and the remaining Vodka in a large bowl, beat until smooth.
3. In a medium bowl, beat the eggs yolks and 3 tablespoons of the sugar together until smooth.
4. Set over a hot water bath and beat for 3 minutes until light and foamy.
5. Remove from the heat, and without waiting beat this mixture into the mascarpone mixture. Set aside.
6. Whip the cream until the cream holds a firm shape.
7. Fold in Mandarin Zest.
8. In two small additions, fold about 1/3 of the mascarpone mixture into the whipped cream.
9. Then fold the whipped cream into the remaining mascarpone mixture. Set aside.
1. Split the Ladyfingers in half
2. Place in a pan large enough to fit the halved Ladyfingers snugly.
3. Moisten the Ladyfingers with half of the Mandarin Juice mixture.
4. Top with half of the mascarpone mixture, spreading it out evenly.
5. Sprinkle the fresh mandarin segments over the mixture.
6. Top with the other half of the Ladyfingers.
7. Moisten with the remaining Mandarin Juice mixture.
8. Top with the remaining mascarpone mixture, spreading evenly.
9. Sprinkle generously with powdered sugar and Mandarin Zest.
10. Refrigerate, uncovered, for 2 hours.
Roasted Beet & Mandarin Orange Salad
This salad combines the sweet flavor of roasted beets, Mandarin oranges, lightly peppered orange dressing, and mixed greens. If you've never roasted beets before, you're in for a treat.

4 small beets
2 teaspoons olive oil
1/2 teaspoon McCormickÂ® Gourmet CollectionÂ® Coarse Grind Black Pepper , divided
1/4 cup orange juice

1 teaspoon McCormickÂ® Gourmet CollectionÂ® Parsley Flakes
1/8 teaspoon McCormickÂ® Gourmet CollectionÂ® Garlic Powder
1/4 teaspoon salt
4 cups mixed greens
1/2 cup mandarin orange sections, drained
1/4 cup coarsely chopped walnuts, toasted
1. Preheat oven to 375Â°F. Trim beets, leaving 1" of stems and roots; wash. Place beets, 2 teaspoons olive oil, and 1/4 teaspoon black pepper in a self-closing plastic bag. Toss to coat beets. MANDARIN ORANGE PUFFS
1 lb softened cream cheese - 2 c powdered sugar - 1/4 c diced Mandarin orange segments - 1/2 c Snow's Citrus Court Mandarin Orange syrup - 1 t Mandarin orange zest - 1/2 t orange extract - 1 lb fresh phyllo dough, cut into 3" strips - 2 T melted butter - Mandarin orange segments. Powdered sugar.
Filling: Mix cream cheese and powdered sugar. Add diced orange setments, syrup, zest and extract. Mix well. Chill for at least 2 hours.
Assembly: Butter and layer two phyllo dough strips. Place a spoonful of the filling in the lower corner of the strip. Top filling with a Mandarin orange segment. Fold phyllo dough like a flag and butter the resulting triangle. Bake at 350 degrees until golden brown, about 10 minutes. Cool, drizzle with Snow's Citrus Court mandarin Orange Syrup, dust with powdered sugar. ENJOY!!!
MANDARIN ORANGE CHEESE CAKE
Fills a 12 inch spring-form pan:
CRUST: 2 c graham cracker crumbs (1 package, 10 graham crackers makes 1 c crumbs) 2/3 c sugar, 1/2 c crushed almonds or English walnuts, 1/2 c crushed dried Mandarin peel, 1/4 pound melted butter. Blend all ingredients in order given. Press on bottom and sides of spring mold pan. Crust is not "wet" but should press firmly into the pan.
1 lb cream cheese, 3/4 c sugar, 3 medium eggs, 1 t vanilla, 1/2 t orange extract. Cream cheese, add sugar, beat until light, add eggs one at a time, blend in vanilla and orange extract.
Pour into crust, bake at 300 degrees F for one hour, or until a testing pick comes out clean. Cool on a rack.
Drizzle Snow's Citrus Court Mandarin Orange Syrup on a plate, place piece of cheese cake on top of syrup, drizzle more syrup on top of cheese cake, garnish with round of fresh Mandarin orange and sprig of fresh mint.

We Answered:I have a very good recipe...but it doesn't take that much orange juice. It won't use your oranges up very fast. Still, it is very good and you do have the fresh orange juice.

4 boneless, skinless chicken breast halves, cut into 1-inch cubes
2 tablespoons Chinese rice wine or dry sherry
1 tablespoon cornstarch
1/3 cup orange juice*
2 tablespoons dark soy sauce
1 teaspoon sesame oil
1 teaspoon brown sugar
1/4 teaspoon chile paste
1 clove garlic, minced
1 slice ginger, minced
Oil for stir-frying, as needed
Place the cubed chicken in a bowl, and add the marinade ingredients. Marinate the chicken for 30 minutes.
While the chicken is marinating, prepare the sauce ingredients and the garlic and ginger.
Heat the wok and add oil. When oil is ready, add the garlic and ginger and stir-fry until aromatic.
Add the chicken and stir-fry until it changes color. Push up to the sides of the wok, making a well in the middle. Add the sauce.
Combine the sauce and the chicken. Stir-fry for another minute and serve hot.

We Answered:Here's a sort of orange mousse/custard recipe:
small can mandarin oranges
1/2 oz butter
3 level teasp cornflour.
Strain the oranges, add juice of the lemon, strain mandarin oranges, add that juice to the rest. Make up to a pint with some water. Mix cornflour with a little of the juice and put rest on to heat. Add cornflour stir until boiling. Boil for 3 mins. Add egg yolk and cook gently. Stir in butter and orange sections. Add sugar to taste. Beat egg white until it stiffens and fold it into mixture. Leave to cool in dishes or in scooped out oranges.
