ORANGE JUICE SALAD3 sm. pkg. orange Jello

1 lg. can crushed pineapple with juice
2 c. hot water
2 cans mandarin oranges

Dissolve Jello and orange juice in 2 cups hot water. Add rest of ingredients. Put in oblong pan and chill.
OR
APPLE CRISP WITH ORANGE JUICE
4 c. sliced apples
1/4 c. orange juice
1 c. sugar
3/4 c. flour
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Dash of salt
1/3 c. butter
Mound apples in buttered dish and pour orange juice over them. In separate bowl, combine sugar, flour, spices and salt; cut in butter until mixture is crumbly. Sprinkle over apples. Bake at 375 degrees for 45 minutes or until apples are tender and topping is crisp. Serve warm with cream. Makes 4 to 6 6 servings.

CARROTS IN ORANGE JUICE
1 lb. carrots
1/4 tsp. grated orange peel
1/2 c. freshly squeezed orange juice
1 tbsp. brown sugar
2 tsp. cornstarch
1/4 tsp. ground cinnamon
1 tbsp. butter
Peel and cut carrots in half lengthwise, then cut them lengthwise in half again. Cut crosswise into 3 inch lengths. Place carrots in a 1 quart casserole with 2 tablespoons water. Cover and cook on high power 6 to 8 minutes or until tender, stirring halfway through cooking.
Meanwhile, combine orange peel, juice, brown sugar, cornstarch and cinnamon. Cook on high power for 1 minute. Add butter, stir mixture, then continue cooking 1 more minute until mixture is thickened and bubbly. Pour orange sauce over carrots and toss to coat well.

ORANGE JUICE COOKIES WITH ICING
2/3 c. shortening
3/4 c. sugar
1 egg
1/2 c. orange juice
2 tbsp. orange rind
2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
Heat oven to 400 degrees. Mix shortening, sugar and egg thoroughly. Stir in orange juice and rind. Stir dry ingredients together. Blend in. Drop by rounded teaspoon of dough, about 2 inches apart, on ungreased cookie sheet.
Bake 8 to 10 minutes, until light brown on edges. Watch carefully - they burn easily.
ICING:
2 1/2 tbsp. butter, softened
1 1/2 c. confectioners sugar
1 1/2 tbsp. orange juice
2 tsp. orange rind
Blend butter and sugar. Stir in orange juice and rind until smooth

CHICKEN IN ORANGE JUICE
2 lbs. boneless chicken or pork
1 tbsp. butter
1/2 c. orange juice
1/2 c. milk
Cut chicken in chunks and cook in boiling water until done. Drain meat. Melt 1 tablespoon butter in pan. When hot, add 1/2 cup orange juice and 1/2 cup milk. Add meat. Cook, uncovered, stirring often until meat is brown. The orange juice and milk will cook off allowing meat to brown. Serve with hot corn tortilla and salsa. Serves 6.

PORK CHOPS IN ORANGE JUICE
10 pork chops
1 (16 oz.) can orange juice
Oil
Fry pork chops in a little oil brown on both sides. Mix orange juice as said on can. Put chops in pan. Cover with orange juice. Simmer 2-3 hours, low to medium heat. Add more orange juice if needed. Have with mashed potatoes and vegetables.

FISH IN ORANGE JUICE
2 lbs. fresh or frozen Halibut steak or other fish steak
1/2 c. finely chopped onion
2 cloves garlic, minced
2 tbsp. cooking oil
2 tbsp. snipped cilantro or parsley
1 tsp. salt
1/2 tsp. pepper
1/2 c. orange juice
1 tbsp. lemon juice
1 hard boiled egg, cut in wedges
Thaw frozen fish. Arrange fish in a 12 x 7 1/2 inch baking dish. Cook onion and garlic in oil until onions are tender, not brown. Stir in cilantro or parsley, salt, and pepper. Spread mixture over fish. Combine orange juice and lemon juice. Pour over fish. Bake, covered, at 400 degrees for 20-25 minutes or until fish flakes easily when tested with a fork. Arrange egg wedges atop fish. Sprinkle with paprika and garnish with orange slices, if desired.

Mandarin Orange Cheesecake RecipeIngredients
Crust:
1 cup graham cracker crumbs (250 mL)
3/4 cup almonds, toasted and coarsely ground (175 mL)
1/4 cup unsalted butter, melted (50 mL)
Filling:
3 packages (each 8 ounces/250 g) cream cheese, softened
1/2 cup unsalted butter, softened (125 mL)
1 cup granulated sugar (250 mL)
4 eggs
1/2 cup sour cream (125 mL)
1-1/2 Tbsp orange zest (22 mL)
1/4 cup orange juice concentrate (50 mL)
1 tsp vanilla (5 mL)
1 can (10 ounces/300 mL) mandarin orange segments, drained
Topping:
1-1/2 cup sour cream (375 mL)
2 Tbsp granulated sugar (25 mL)
2 Tbsp fresh orange juice (25 mL)
Decoration:
1/2 cup whipping cream (125 mL)
2 Tbsp granulated sugar (25 mL)
Instructions
Preheat oven to 350 degrees F./180 degrees C. Prepare pan: 9-inch (23 cm) cheesecake pan, ungreased, or springform pan with 3-inch (7.5 cm) sides, greased.
Crust:
In a medium bowl, combine graham cracker crumbs, almonds and butter. Press into bottom of cheesecake pan and freeze.
Filling:
In a large mixer bowl, beat cream cheese, butter and sugar on medium-high speed for 3 minutes. Add eggs, one at a time, beating after each addition. Mix in sour cream, orange zest, orange juice concentrate and vanilla. Fold orange segments into batter. Pour over frozen crust. Bake in preheated oven for 45 to 55 minutes or until the top is light brown and the center has a slight jiggle to it. Cool on the counter for 10 minutes (do not turn the oven off). The cake will sink slightly.
Topping:
In a small bowl, combine sour cream, sugar and orange juice. Pour into center of cooled cake and spread out to edges. Bake for 5 minutes more. Cool on a rack for 2 hours. Cover and refrigerate for at least 6 hours before decorating or serving.
Decoration:
In a well-chilled bowl, whip cream on medium-high speed until soft peaks form. With the mixer still running, sprinkle sugar into cream and continue whipping until firm peaks form. Ice top of cake or pipe a border around cake, if desired.
Tips:
Fresh mandarin oranges are usually available in November and December for the peak holiday baking season. Store in the refrigerator as they spoil quickly, and wash well before zesting.

• Crepes, 1 package of 10
• Heavy Whipping Cream, 2 cups

• Dark Chocolate, ¼ lbs for garnish
• Snow’s Citrus Court Mandarin Syrup for garnish
• Mint leaf, for garnish.
Place a medium size stainless steel bowl in freezer.
In another stainless steel bowl mix mascarpone cheese, yokes and sugar until smooth. Add Mandarin syrup, Zest and Absolut Mandrin Vodka to mixture. Blend until well mixed. Place in fridge for 1 hour.
Remove Stainless Steel bowl from the freezer, add heavy whipping cream and whip until soft peaks form. Add sugar and 2 tbs. Absolut Mandrin Vodka and blend well.
To assemble:
Place pack of crapes in microwave for 10 seconds. Remove one crape and place on plate. Place one large spoon of Mascarpone mixture in middle and spread down the middle. Place Mandarin Orange Segments down the middle on top of cream mixture. Roll the crepe up. Garnish with Mandarin Syrup, Whip cream and grated chocolate. Place a Mint sprig along side the crepe.

• Mandarin Juice, 11/2 cups
• Absolut Mandrin Vodka, 1/3 cup
• Mascarpone Cheese, 1 cup
• Egg Yolks, 3
• Superfine Sugar, 3 tablespoons
• Heavy Cream, 2 cups
• Mandarin Zest, 2 tablespoons
+ + 1 tablespoon for garnish
• Powered Sugar, enough to garnish
• Ladyfingers, 1 package of 24
• Fresh Mandarin Segments, 2 oranges or 1 large can
1. Combine the Mandarin Juice and half of the Absolut Mandrin Vodka, set aside.
2. Combine the mascarpone and the remaining Vodka in a large bowl, beat until smooth.
3. In a medium bowl, beat the eggs yolks and 3 tablespoons of the sugar together until smooth.
4. Set over a hot water bath and beat for 3 minutes until light and foamy.
5. Remove from the heat, and without waiting beat this mixture into the mascarpone mixture. Set aside.
6. Whip the cream until the cream holds a firm shape.
7. Fold in Mandarin Zest.
8. In two small additions, fold about 1/3 of the mascarpone mixture into the whipped cream.
9. Then fold the whipped cream into the remaining mascarpone mixture. Set aside.
Directions: Assembly
1. Split the Ladyfingers in half
2. Place in a pan large enough to fit the halved Ladyfingers snugly.
3. Moisten the Ladyfingers with half of the Mandarin Juice mixture.
4. Top with half of the mascarpone mixture, spreading it out evenly.
5. Sprinkle the fresh mandarin segments over the mixture.
6. Top with the other half of the Ladyfingers.
7. Moisten with the remaining Mandarin Juice mixture.
8. Top with the remaining mascarpone mixture, spreading evenly.
9. Sprinkle generously with powdered sugar and Mandarin Zest.

Coat chicken with mixture of flour, salt and pepper. Heat butter in skillet, add chicken and brown both sides. Drain sections and more juice if necessary to make 1 cup orange juice. Mix together orange juice, brown sugar, vinegar, basil, garlic and nutmeg. Add to skillet. Cover and simmer 20 to 25 minutes or until chicken is tender. Add orange sections and simmer covered 5 minutes longer.
