Lavendar Water: Has anyone ever made this?

We Answered:

Just to clarify things, true rosewater would be part of the distillation process that creates pure essential oils. When the oils(actually esters) separate from the water in the steam, the water that remains is "rosewater". Look for pure hydrosols; they are much different and more dynamic than watered down essential oils.

So, while there are recipes for scenting that are called "lavender water" I think your looking for a hydrosol, very difficult to make at home

I have used lavender buds that were infused with water in cooking, it was the best sorbet I've ever tasted! You just make it like a very strong tea. They should be infused and never boiled because most (not all) of the flavor is in the essential oils that would evaporate with boiling. Using fresh flower buds gives the best flavor.

i need a recipe for mead using 473 ml of raw orange blossom honey.?

We Answered:

Papazian has recipes in his The New Complete Guide to Home Brewing. I would suggest a mead yeast, either sweet or dry. One smack pack should do it. I'd also suggest getting more honey. It takes a couple of years for mead to peak; you want to have enough to make it worth your while after you have waited that long. The procedure is pretty similar to that for wine.

what is filo pastry, rose/orange-blossom water? also, anyone have a good recipe for baking powder biscuits?

We Answered:

Filo (or phyllo) pastry is a very thin, flaky pastry. It is common in Greek and Middle Eastern cooking (if you have ever had baklava, chances are you've had phyllo). If you don't want to make your own, you should be able to find pre-made filo dough at your local supermarket (look in the frozen dessert section, with the puff pastry).

Rose water and orange blossom water are made from distilled water infused with essential oil. They can be found at specialty stores, gourmet markets, and Middle Eastern grocers. Both rose water and orange blossom water are wonderful, exotic additions to desserts, but be careful not to use too much--the flavours can be VERY strong!

Could I substitute strawberries for orange/lemon in dandelion blossom syrup? (recipe inside)??

We Answered:

I suppose that you could - I am not sure how strawberries would taste mixed with the dandelions but I would give it a go.
