Vegetable oil, as long as it is unsaturated, isn't particularly bad for you. It is the partially-hydrogenated vegetable shortening that you have to worry about. Having said that, most olive oils have rather distinctive tastes, and while they can certainly be substituted for vegetable oil in cooking, I wouldn't use it for most baked goods, in which the flavor may not be very appealing. You could use something like canola oil or Enova instead.Joe Said:

I will try to be a bit less verbose than the 1st poster.MOST savory dishes that call for cooking with oil, I will use olive oil. A few exceptions. I don't deep fry with olive oil because of the low smoke point (I use canola or corn or peanut). I don't cook at high temperatures (Like cooking chinese in a wok) I use peanut oil for high heat cooking. So, yes it is true that olive oil does not take high heat well. Keep in mind that ALL oil when brought to a smoke point will break down to the point of being unhealthy and unpleasant to eat.
Almost any dish that requires vegetable oil (aside from the two instances mentioned above) , I will use olive. As far as recipies, pick any Mediterranean recipe and olive oil is the oil of choice in it.
