All purpose flower has all the leavening in it that may not be good for your guinea pig and it is not a natural flower like the oat flour would be. I do not feel it would make a very healthy treat for the guinea pigs.

Oats have very little natural gluten, a form of protein in grains.....when you overwork wheat dough (out of which most cookies are made) the gluten becomes tough......You must have a clone of the Mrs. Field's recipe, as that's the only cookie recipe that I can think of right off the top of my head that calls for "oat flour, regular oats ground up in a blender" Great recipe, just makes a ton of cookies.......Enjoy the holidays!!!

you could substitute for equal amounts of wheat flour in most recipes up to a third . I use quick cooking oats in muffins and oat bran in in pancakes and muffins but have not used an oat flour but other than bread should be able to use in place of wheat, would work in breads for part of flour but would not develop gluten for kneading by its self.

Oat flour will give you a much more soft, crumbly result; they probably won't hold together. You need to blend non-wheat fibers usually to get the best properties of multiple ones. I would check out a few of the gluten-free sites which sell wheat-alternative flour blends, and find a blend or recommendation for a home-made blend for use in pastry or scones. Being a former chef and now a vegetarian, one thing about oat flour, like rye and whole wheat it is low gluten so the bread will be very hard and chewy if you do not use some wheat flour.

For a non yeast or baking powder recipe, the people form the Appalacian area and I am not using this term in a mean way but th hillbillys of the area make a salt rising bread, you take a few potato slices, cornmeal and some hot water and make a slurry and let it rest over night and this forms a crude type of yeast like leavening.

You drain off the liquid and mix it with the flours and some type of fat or oil, salt and knead it, let it rise and bake it, I have made it a number times, I will give you a link to a good recipe, and it is all totally vegan.

This recipe is like the one I use the starter can be made with water and a natural sweetener to make the fermented base, even make it an give it 2 days to work.

You could use all white or use part wholewheat or as I have done many times use part rolled oats., quick cooking oats, If using the oats allow to soak in wet mixture for a few minutes before mixing with dry. .
