1/4 cup lemon juice
1 1/2 tablespoons low sodium tamari sauce
1 1/2 teaspoons paprika (for color)
dash of hot sauce (optional)
Throw all the ingredients into a blender and blend until creamy. Warm sauce gently over low heat and pour over corn chips. Or drizzle it over chips and bake them, covered, for 10-15 minutes in a 375*F oven.

Nutritional Yeast - by Allison TylerHave you tried Nutritional Yeast? It’s not the leavening yeast that makes bread rise (nutritional yeast contains no live enzymes) and it’s not Brewer’s yeast either. It is a condiment/ingredient and dietary supplement (rich in minerals, B vitamins - particularly B12 - and protein) that has a nutty, slightly sweet flavor that many describe as cheese-like. It’s animal-free, dairy-free, sugar-free and Kosher.
You can use it to add flavor and nutritional value in recipes for sauces and gravies; mix it into scrambled eggs or tofu; keep it in a shaker to sprinkle on salads, popcorn, pasta, baked potatoes or sandwich fillings; add it to casseroles or beans; etc., etc.
There are a number of brands, but I recommend only Red Star Vegetarian Support Formula T6635+ Nutritional Yeast. Its manufacturing process guarantees it is the only proven, reliable vegan source of Vitamin B12. You can find the yeast at many health food stores in flaked or powdered form – both have a yellow coloring. Store it in a cool, dry place or refrigerate it. It keeps indefinitely.
One caveat - adults shouldn’t eat more than 3 tablespoons of nutritional yeast per day – more may cause an increase in uric acid in the bloodstream, putting stress on the kidneys and/or contributing to gall stones or gout in certain individuals. One serving (approximately 3 tablespoons) of nutritional yeast contains 47 calories, 8 grams of protein, 5 mg of sodium, 5 carbohydrates, 4 grams of fiber and less than 1 gram of fat.

As mentioned above, most health food stores carry nutritional yeast. You can also order it online from The Dixie Diner – they do sell Red Star brand but list it on their site as T6635. This is also a great site to order a myriad of soy products from. The Mail Order Catalog carries Red Star brand as well. Call them at 1-800-695-2241 to order.

Yield: 3 servings
2 8 oz pkgs cream cheese, soft
2 Jars old English cheese
1 c Grated cheddar
Juice & scrapping of one

1 ts Salt
½ c Sweet pickles, chopped
1 c Chopped macadamia nuts
Blend cheeses, add remaining ingredients less 1/2 the nuts. Shape into a ball, add remaining nuts and parsley around the ball. Refrigerate several hours before serving.
Italian nut cheese

4 oz Mascarpone or cream cheese; softened (1/2 cup)

MAKES 1 1/4 CUPS LACTO Serve this cheese on celery, cucumber slices, Belgian endive spears or crackers. Look for mascarpone cheese in specialty cheese stores, Italian markets or gourmet shops. In medium bowl, combine both cheeses, walnuts and pepper and mix well. Pipe or spread about 2 teaspoons cheese mixture onto vegetables and arrange in concentric circles on colorful round platter. Sprinkle with paprika. Serve immediately or cover and chill up to 1 hour before serving.
Cheese and Nut Log
INGREDIENTS:
1 1/2 cups shredded Cheddar cheese
1 (8 ounce) package cream cheese, softened
2 green onions, finely chopped
1/4 small red bell pepper, diced
1 clove garlic, minced
2 teaspoons Worcestershire sauce
4 ounces blue cheese, crumbled
2 tablespoons milk
1/3 cup chopped pistachio nuts

DIRECTIONS:
In a small bowl, mix the Cheddar cheese and 1/2 the cream cheese with an electric mixer until well blended. Mix in the green onions, red bell peppers, garlic and Worcestershire sauce. Chill in the refrigerator 30 minutes.
In a small bowl, mix the blue cheese, milk and remaining cream cheese with the electric mixer until well blended.
Shape the chilled Cheddar cheese mixture into an 8 inch log. Spread the blue cheese mixture evenly over the top and sides of the log. Cover with pistachio nuts. Chill in the refrigerator 2 to 3 hours before serving.

Many vegan recipes contain nutritional yeast because it has a cheese-like flavor and is high in protein. You can actually produce a similar color and texture in cooked foods by blending corn until it is smooth! However, there are thousand of vegan recipes out there that don't use nutritional yeast at all. Look for recipes at http://www.fatfreevegan.com. If they only use 1 or 2 Tbsp of yeast, just omit it. If they call for more, try the blended corn replacement.Olga Said:

Butter would be fine. But 4 Tbsp of nutritional yeast makes me think that this is an important part of the recipe and is needed to impart a strong taste to the dish, so you may find it is not as flavourful as it should be, use a really strong cheese and maybe it will be just the same.Danielle Said:

I'm not sure why you'd want to leave out the NT, but you can replace it with powdered sunflower seeds or cashew nuts without any problem except that the sauce won't be quite as cheesy and (of course) you'll not have all the nutrition that the yeast adds.Try the recipe at this link and substitute powdered sunflower seeds for the NT, they'll add flavors that the cashews don't have.

Just think of it as a vegan Parmesan cheese.
If your an ovo-vegetarian like me you can add a little to your scrambled eggs for added cheesy flavor.
