Makes: About 8 (1-cup) jars or 128 servings, 1 Tbsp. each
Ingredients :
4-1/2 cups prepared fruit (buy about 3 lb. fully ripe nectarines)
1/4 cup fresh lemon juice
7-1/2 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine
1 pouch Fruit Pectin
PROCEDURE :
Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
PIT and finely chop nectarines. Measure exactly 4-1/2 cups prepared fruit into 6- or 8-qt. saucepot. Stir in lemon juice.
Stir sugar into prepared fruit in saucepot. Add butter to reducing foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in pectin. Return to full rolling boil and boil 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
Ladle immediately into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger.
(If lids spring back, lids are not sealed and further refrigeration is necessary.)

Measure Ingredient4 larges Ripe nectarines, pitted and thinly sliced
1½ cup Blueberries
1 cup Sugar
2 tablespoons Cornstarch
1 teaspoon Vanilla
2 9" pie shells, store-bought
1 Egg, beaten
Sugar for glaze
In a large bowl, combine nectarine slices, berries, sugar, cornstarch and vanilla. Stir until fruit is coated. Pour filling into one of the pie shells and invert the second shell over it. Crimp edges and press with fork to seal. Cut holes in top crust so steam can escape. Place a baking sheet on lower rack of oven to catch juices. Set pie on middle rack and bake at 350'F. for 45 minutes. Brush top crust with beaten egg and sprinkle with sugar; return to oven for 15 minutes
My dad taught me this when i was little and it has been one of my faves since, my partner loves it too. YUMMY!!! enjoy ^_^

PEACH POUND CAKE1 tablespoon flour
2 tablespoons brown sugar, packed
1/4 teaspoon nutmeg
1 cup sliced peaches in syrup, drained
1 cup granulated sugar
2 1/2 cup unbleached flour
1 teaspoon baking powder
1/2 teaspoon baking soda
8 ounces sour cream
2 egg whites, whipped
1 tsp vanilla
Preheat oven at 325°F.
Grease and flour a 12-cup Bundt pan; set aside.
In a mixing bowl, stir together 1 tablespoon flour, brown sugar, and nutmeg. Add peaches, mixing until covered with flour-sugar mixture. Layer peach mixture on bottom of pan.
In a mixing bowl, mix sugar, flour, baking powder and baking soda. In a separate bowl, mix sour cream, egg whites and vanilla.
Mix dry and wet ingredients together, stirring just until moistened. Spread batter evenly over peach mixture.
Bake one hour.

Grilled Nectarines4 nectarines, ripe, washed and dried
1 tablespoon olive oil, or vegetable oil
2 tablespoons fruit preserves
1. Preheat grill.
2. Cut nectarines in half and remove pits. Brush cut sides of fruit with oil.
3. Place fruit cut-side-down on grill and cook until lightly browned, about 5 minutes.
4. Turn fruit over and spoon some preserves into each cavity.
Grill until tender but not mushy, about 5 minutes longer.
