You can usually buy miso paste in your grocery store or health foods store. Mix it with some vegetable or fish stock in a saucepan and heat until just barely warm (DO NOT BOIL!), and add Wakame seaweed that has been rehydrated (to do this, put some dry wakame in a bowl of lukewarm water until it becomes moist and uncurls, you can find this in the international foods aisle). Then cube up some tofu and add it in to your miso soup! You can also add chopped scallions for some crunch.Melinda Said:

You'd be looking for a savory flavor, so I'd go with miso. That would mean reducing the amount of whatever liquid the recipe calls for. You could try very finely minced mushrooms instead but I'm afraid they would absorb some of that liquid and make the overall texture too dry.Glen Said:

OMG miso katsu sounds awesome-I was going to make pork curry for dinner, but I'm switching to Miso Katsu instead.I do not have a true recipe, but here's my plan:
Prepare the miso sauce in small pan over med-low heat: red miso, sweet mirin wine, dashi (bonito soup base), sugar to taste. Basically a miso "BBQ" sauce.
Then Pan fry pork slices (I pound mine flat first, then dip in flour, egg wash, then Panko bread crumbs; fry in an inch of canola oil-turn once and drain on wire cooling rack
