as far as I know about the wintermelon tea(I grew up drinking it in the summer), it is a rather complicated process to make the tea-sugar brick that you use to make the tea. You might want to just go to a big asian market and get the brick to dissolve at home or get it canned/bottled.Carl Said:

Winter Melon SoupINGREDIENTS:
1 cup winter melon (1/2 pound)
Water to boil winter melon
2 cups chicken broth
4 Chinese dried black mushrooms
2 - 3 slices ginger
1/4 cup cooked ham, diced
Salt and pepper to taste
1 green onion, green part only, washed and cut on the diagonal into 1-inch pieces
PREPARATION:
1. Wash the winter melon, remove the green skin, seeds, and the pulp. Cut into 2-inch pieces.
2. Reconstitute the Chinese dried mushrooms by soaking in hot water for 20 - 30 minutes until softened. Squeeze out any excess water.
3. Place the winter melon in a pot of water, bring to a boil, and simmer for approximately 20 minutes or until the winter melon is tender.
4. Add the chicken broth, mushrooms, ginger and cooked ham. Add seasonings as desired. Simmer for about 20 minutes. Add green onion for garnish. Serve hot.

CANTALOUPE JELLY2 1/2 pounds peeled and diced cantaloupe
2 1/2 cups granulated sugar
1/2 teaspoon vanilla extract
1 peel of tangerine or orange
Place cantaloupe covered with sugar in a covered bowl and put in refrigerator for 24 hours. Drain the cantaloupe, pouring off the sugar and liquid in a large saucepan. Bring to a boil over medium flame and boil for 5 minutes.
Add diced cantaloupe, vanilla extract and peel. Insert candy thermometer and simmer, stirring occasionally until the thermometer reaches jelly temperature. Pour into sterilized jars; seal with wax and store in cool place. Makes about 2 pints.

HONEYDEW JAM
3 cups honeydew melon pieces
3 cups sugar
3 tablespoons lemon juice
1 tablespoon chopped candied ginger
Combine in a pan the melon pieces, sugar, lemon juice and candied ginger. Let stand until a syrup forms (about 2 hours). Bring to a boil and boil for two minutes, stirring constantly. Reduce heat and simmer, stirring frequently
until mixture is thickened and the melon is translucent (about 45 minutes). Pour into hot, sterilized jars (see following directions for sterilization instructions). Keep in refrigerator for up to four weeks; in freezer for up to
six months. Yield: 4 half-pints.
STERILIZATION OF EMPTY JARS
To sterilize empty jars, place them right side up on the rack in a boiling-water canner. Fill the canner and jars with hot (not boiling) water to 1 inch above the tops of the jars. Boil 10 minutes at altitudes of less than 1,000 feet. At higher elevations, boil 1 additional minute for
each additional 1,000 feet elevation. Remove and drain hot sterilized jars one at a time as filled.
