My favorite way to use marshmallows is in Rocky Road Brownies. But you can use them in tons of ways. You can dip them in melted chocolate for Chocolate Covered Marshmallows. Don't forget to serve Hot Cocoa topped with Marshmallows.Rocky Road Brownies:
1 box (1 lb 6.5 oz) Betty Crocker® Original Supreme brownie mix
1/3 cup vegetable oil
1/4 cup water
2 eggs or 3 eggs
1 bag (12 oz) semisweet chocolate chips (2 cups)
1 1/2 to 2 cups miniature marshmallows
1 1/2 cups chopped peanuts
1. Heat oven to 350°F. Grease bottom only of 13x9-inch pan with shortening or cooking spray. In medium bowl, stir brownie mix, pouch of chocolate syrup, oil, water and 2 eggs for fudgelike (or 3 eggs for cakelike brownies), using spoon, until well blended. Stir 1 cup of the chocolate chips into batter. Spread in pan.
2. Bake 28 to 30 minutes or until toothpick inserted 2 inches from side of pan comes out clean or almost clean.
3. Immediately after removing from oven, sprinkle with 1 1/2 to 2 cups miniature marshmallows, remaining 1 cup chocolate chips and the peanuts. (For softer marshmallows, cover pan with cookie sheet about 2 minutes.) Cool completely, about 2 hours. For 20 brownies, cut into 5 rows by 4 rows with knife dipped in hot water. Store tightly covered

Mallow Popcorn Balls:
1/4 cup (1/2 stick) butter or margarine
40 JET-PUFFED Marshmallows
1/2 tsp. vanilla
1/4 tsp. salt
3 qt. (12 cups) popped popcorn
MELT butter in 3-quart saucepan on low heat. Add marshmallows, vanilla and salt; cook until marshmallows are completely melted and mixture is well blended, stirring constantly.
PLACE popcorn in large bowl. Pour marshmallow mixture over popcorn; mix lightly to coat.
SHAPE mixture into 10 (3-inch) balls with lightly greased hands. Place on sheets of wax paper; let stand until firm. Store in airtight container at room temperature.

Marshmallow brownieINGREDIENTS
1 cup butterscotch chips
1/2 cup butter
1 1/2 cups all-purpose flour
2/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs
2 cups miniature marshmallows
2 cups milk chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
Melt butterscotch morsels and margarine in a large bowl in microwave. Stir the mixture well and let it cool to lukewarm.
While the liquid mixture is cooling, mix flour, brown sugar, baking powder, salt, vanilla, and eggs into the butterscotch mixture; mix well. Fold in marshmallows and chocolate morsels.
Spread batter into a lightly greased 9x13 inch pan.
Bake 25 minutes. Be careful not to overcook.
Chocolate Marshmallow Candy
INGREDIENTS
1/2 cup butter
1 (14 ounce) can sweetened condensed milk
1 (6 ounce) package butterscotch chips
1 (12 ounce) package chocolate chips
1 cup chopped pecans
1 (10.5 ounce) package miniature marshmallows
1 teaspoon vanilla extract
DIRECTIONS
In a saucepan, combine butter and sweetened condensed milk. Bring to a boil, then remove from heat. Stir in chocolate chips and butterscotch chips until melted. Stir in nuts, marshmallows and vanilla. Drop by spoonfuls onto waxed paper.
Marshmallow Cake
INGREDIENTS
1/2 (10.5 ounce) package marshmallows
1/2 cup milk
1 (8 ounce) package cream cheese, softened
1 egg yolk
1/2 lemon, juiced
1 cup heavy cream
1 (9 inch) prepared graham cracker crust
DIRECTIONS
In a saucepan on low heat, combine marshmallows and milk. Cook until marshmallows are melted, and mixture starts to boil. Remove from heat.
In a large bowl, beat cream cheese until smooth. Stir in egg yolk. Fold in 1/3 of the melted marshmallow mixture, then quickly fold in remaining marshmallow until no streaks remain. Stir in lemon juice.
In a large bowl, beat cream until soft peaks form. Fold the whipped cream into the cream cheese mixture until no streaks remain. Spread into graham crust. Refrigerate for 3 hours.
Peanut butter marshmallow bars
INGREDIENTS
1/2 cup Butter Flavor All-Vegetable Shortening, plus additional for greasing
1/4 cup firmly packed light brown sugar
1/2 cup Extra Crunchy Peanut Butter
1/4 cup granulated sugar
1 egg
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup Creamy Peanut Butter
4 cups miniature marshmallows
1/2 cup chocolate flavored syrup
DIRECTIONS
Preheat oven to 350 degrees. Grease 13x9x2-inch glass baking dish with shortening.
For cookie base, combine brown sugar, shortening, Extra Crunchy Peanut Butter, granulated sugar and egg in a large bowl. Beat at medium speed of electric mixer until well blended.
Combine flour, baking powder and salt. Add gradually to creamed mixture at low speed. Beat until well blended. Cover. Refrigerate for 15 minutes. Press chilled cookie base into prepared dish. Bake for 20 minutes or until light brown. Do not over-bake. Cool 2-3 minutes.
For topping, place Creamy Peanut Butter in microwave-safe measuring cup. Microwave at HIGH for 1 minute. Pour over baked surface. Spread to cover. Cover with marshmallows. Drizzle chocolate syrup over marshmallows. Return to oven. Bake 5 minutes or until marshmallows are light brown. Do not over-bake. Loosen from sides of dish with knife. Remove dish to cooling rack. Cool completely. Cut with sharp greased knife into bars about 2x2 inches.

1 C chopped walnuts
1 1/2 tsp. vanilla
In heavy saucepan over low heat, melt chips with sweetened condensed milk and salt. Remove from heat; stir in walnuts and vanilla. Spread evenly into aluminum foil lined 8 or 9 inch square pan. Chill 2 hours or until firm. Turn fudge onto cutting board; peel off foil and cut into squares. Store loosely covered at room temperature.

To make marshmallows at home, combine 3 tablespoons of gelatin (a professional-grade concentrated gelatin would be a good choice, but generally is available only to the food industry) with 1/2 cup of cold water and let it stand for an hour. In the meantime, heat 2 cups of sugar, 3/4 cup light corn syrup, 1/2 cup of water, and 1/4 teaspoon of salt. Bring it to a boil and cook until the firm-ball stage (244°F; 117°C). Remove from the heat and pour it slowly over the gelatin, beating it constantly in a stand mixer. Beat it for a good 15 minutes. When it’s thick but still warm, add 2 tablespoons of vanilla or other flavoring (mint, strawberry, orange, flower water, etc.), if desired. Spread the mixture in a pan that has been lightly dusted with cornstarch. Let it dry for 12 hours, then cut it into squares with scissors dusted with cornstarch, and store them in an airtight container.No-Bake Fruit Balls

2 cups Miniature Marshmallows
2 cups HONEY MAID Graham Cracker Crumbs
1/2 cup chopped red maraschino cherries
1/2 cup chopped green maraschino cherries
1 can (14 oz.) sweetened condensed milk
1/2 cup chopped Pecans
3 cups FLAKE Coconut
COMBINE marshmallows, cracker crumbs, cherries, sweetened condensed milk and pecans; mix well.
SHAPE dough evenly into 5 dozen balls, each about 1 inch in diameter. Roll balls in coconut until evenly coated.
REFRIGERATE 3 hours or until firm. Store in airtight container in refrigerator.
