Pecan Pesto1 Cup Lime Basil Leaves
1 Cup Sweet Basil Leaves
1/2 Cup Pecans
1/4 Cup Fresh, Grated Parmesan Cheese
2-4 Cloves Garlic
2 Tablespoons or more Olive Oil
Combine all ingredients except olive oil in food processor and process briefly. Add two tablespoons of olive oil and process. If a creamier texture is desired continue adding small amounts of olive oil until the desired consistency is found. Pesto can be spread on crackers, used on pasta and added to sauces. Pesto freezes well. Experiment with other herbs and nuts. Traditional pesto uses sweet basil and pine nuts. Recipe makes one cup of pesto.

Key Lime CakeInstructions
1 bx Duncan Hines Lemon Supreme cake mix 1 ea 4-serving-size box instant lemon pudding mix 1 c water 2/3 c vegetable oil 1 Tb Key lime juice 4 ea eggs For topping: 1 c. confectioners' sugar, 1/2 c. water, 2 Tbs key lime juice. Beat the cake mix, water, oil, lime juice and eggs just until ingredients are blended and no large lumps remain. Pour into greased & floured tube or bundt pan and bake 55 minutes at 350 degrees, or until cake tests done. Cool cake in pan until lukewarm, then poke holes into cake with a large fork. Blend together the topping ingredients thoroghly, then pour topping over all. When cake has cooled completely, turn out onto a serving platter and pour any topping from baking pan

INGREDIENTS
4 tablespoons vegetable oil
6 boneless, skinless chicken breasts
salt and pepper to taste
1 lime, juiced
1/2 cup butter
1/2 teaspoon dried dill weed
DIRECTIONS
Heat oil in a large heavy skillet over medium high heat. Season chicken breasts with salt and pepper. Cook until lightly browned, about 3 minutes on each side. Cover, and reduce heat to low. Cook until no longer pink, and juices run clear, about 10 minutes. Remove chicken from pan, and keep warm.
Drain excess oil from pan. Stir in lime juice, and cook over low heat until it begins to bubble. Stir in butter, 1 tablespoon at a time. Continue stirring until butter becomes opaque, and sauce thickens. Remove from heat, and stir in dill weed. Spoon sauce over chicken, and serve.

Key Lime PieINGREDIENTS
1 (9 inch) prepared graham cracker crust
2 (8 ounce) packages cream cheese, softened
2 (14 ounce) cans low-fat sweetened condensed milk
3/4 cup key lime juice
1 teaspoon grated lime zest
1/4 teaspoon salt
1 cup heavy cream, chilled
1 teaspoon vanilla extract
3 tablespoons confectioners' sugar
DIRECTIONS
To Make Lime Filling: In a large mixing bowl, whip cream cheese until fluffy. Add condensed milk, lime juice, lime rind, and salt. Whip until mixture is smooth. Pour into graham cracker crust. Cover with plastic wrap and chill thoroughly.
To Make Topping: In a medium bowl, whip cream until soft peaks form. Add vanilla or lemon extract and confectioners' sugar. Continue to whip until cream forms stiff peaks. Place topping in a fine-mesh sieve and place sieve over a bowl to catch liquid that drains off. Cover topping tightly with plastic wrap and allow to drain for 2 hours.
Before serving, discard liquid that has drained from topping. Spread topping over pie.
Snapper with Mango Sauce
Ingredients:
For the fish
4 Red Snapper fillets
Olive Oil
Salt to taste
For the sauce
4 tbsp Butter
1 tbsp Lime Juice
1 tbsp Orange Juice
1 tbsp of the juice from Chipotles in Adobo
The Flesh and juice of 1 large Fresh Mango
Salt
To serve
1 Avocado, sliced into thin wedges
2 Limes, quartered
Instructions:
1. Preheat the grill to medium. Brush the fish with a little olive oil, season with salt and cook for 4-5 minutes on each side or until cooked through.
2. Meanwhile, make the sauce by melting the butter in a small saucepan. Chop the mango flesh finely and add to the pan together with the remaining sauce ingredients. Heat gently and simmer for one minute stirring frequently.
3. To serve - Place the fish on a warmed serving platter, pour the mango sauce over the filets, and garnish with avocado slices and lime wedges. Serve immediately.
Caribbean Grilled Chicken
Ingredients:
180ml/6fl.oz. Vegetable Oil
The Juice of 3 Limes
6 Garlic Cloves, chopped
1½ teasp Black Pepper
1 teasp Hot Pepper Sauce (check ingredient label)
3 teasp freshly chopped Oregano
1 Bay Leaf, crumbled
1½ tbsp Freshly Chopped Coriander
4 Large boneless Chicken Breasts
Instructions:
1. Place the oil, lime juice, and seasonings in a bowl and mix well.
2. Place the chicken in a shallow dish and pour the marinade over the chicken. Mix to coat well then cover and refrigerate for 2 to 3 hours.
3. Preheat the grill to hot and cook the breasts for 12-15 minutes on each side, basting with the marinade from time to time. Serve hot.
Citrus Garlic Marinade for Pork
Ingredients:
180ml/6fl.oz. Lime Juice
120ml/4fl.oz. Fresh Orange Juice
60ml/2fl.oz. Olive Oil
2 Garlic Cloves, chopped
25g/1oz Coarse Sea Salt
1 teasp Black Pepper
2 Bay Leaves, crumbled
Instructions:
1. Place all the ingredients in a bowl and mix well. Use to marinate pork.
Khmer Coconut Pork Skewers
Ingredients :
1 stalk Lemon Grass, thinly sliced
1 large Onion, chopped
5 Garlic Cloves, chopped
The grated Zest of 1 Lime
1/2 teasp Ground Turmeric
90ml/3fl.oz. Water
25g/2oz freshly grated Coconut or unsweetened Desiccated Coconut
1 tbsp Sugar
1/2 teasp Salt
400g/14oz Lean Pork, cut into 2.5cm/1-inch cubes
Instructions :
1. Place the lemon grass, shallots, garlic, lime zest, turmeric and water in a food processor and process to a paste.
2. Transfer the lemon grass paste to a mixing bowl together with the coconut, sugar and salt and mix well.
3. Add the pork and mix to coat well. Cover with clingfilm and leave to marinate for at least an hour at room temperature.
4. Preheat the grill to hot. Thread the pork cubes onto skewers and cook for 15-20 minutes, turning frequently and basting with the marinade. Serve immediately.
Also very good on the barbecue.
Avacado Lime Shrimp Salad
INGREDIENTS (Nutrition)
1 1/4 pounds cooked deveined shelled shrimp, tail shells removed
3 avocados - peeled, pitted and diced
1 bunch green onion tops, chopped
3 large red tomatoes, diced
1 large yellow tomato, diced
1 bell pepper (any color), chopped
1/2 bunch cilantro, chopped
2 tablespoons fresh lime juice
salt and ground black pepper to taste
DIRECTIONS
Cut the shrimp into 2 or 3 pieces and place in a large bowl; add the avocado, green onion, red and yellow tomatoes, bell pepper, cilantro, and lime juice; mix. Season with salt and pepper. Refrigerate at least 15 minutes before serving.
Guacamole
2 avacados
1 - 2 limes
salt
2-3 fresh jalapeno (minced)
Pit and peel avacado. Mash in bowl. Add juice of one lime, and if it wasn't enough for your taste, add juice of another. Stir in jalapeno and salt to taste.
You can garnish with cilantro, tomato and black olive

Lemon Lime Cake1 (18.25 ounce) package lemon cake mix
1 (3 ounce) package instant lemon pudding mix
3/4 cup water
1/2 cup vegetable oil
4 eggs
1/2 to 1 teaspoon lemon extract
5 to 6 tablespoons key lime juice
1 1/2 cups confectioners sugar
3 tablespoons key lime juice
Preheat oven to 350 degrees F. Lightly grease one 9x13 inch cake pan or one 10 inch bundt pan, or spray with Baker's Joy, which is my answer to most everything!
In a large bowl stir together; lemon cake mix, lemon instant pudding, water, oil, eggs, lemon extract and 5 or 6 tablespoons key lime juice, mixing well. Pour batter into prepared pan.
Bake at 350 degrees F for 45 minutes, or until cake tests done. Pour key lime glaze over cake while still warm.
To make the glaze, stir together the confectioner's sugar and 3 tablespoons of the key lime juice (or more if necessary), and spoon the glaze over warm cake.
Or a Kiwi Lime Pie
1 cup graham cracker crumbs
3 tbsp. butter, melted
1 14-oz. can sweetened condensed milk
4 egg yolks
1/3 cup lime juice
Thin chocolate cookie wafers
1 kiwi, peeled and sliced
Directions
Heat the oven to 350 degrees. Mix the graham cracker crumbs and butter in a bowl. Firmly press the crumbs against the bottom and sides of a 9-inch pie pan. Bake for 5 minutes.
In another bowl, stir the sweetened condensed milk, egg yolks and lime juice until well mixed. Pour the mixture into the crust and bake for 15 minutes or until an inserted knife comes out clean.
Once the pie cools, push cookie wafers into the filling along the edge. Top with kiwi slices arranged to resemble a shamrock. Serves 8.

KEY LIME PIE2 (14 oz.) cans sweetened condensed milk
2 egg yolks, beaten
3/4 c. Key Lime juice
1/2 c. whipping cream
1 (9 inch) pre-baked pie shell or graham cracker shell
Combine condensed milk and beaten egg yolks; gradually add Key Lime juice. Fill pie shell with the mixture. Bake at 350 degrees for 8-10 minutes. Do not allow to brown. Chill for at least 2 hours.
Whip the cream and garnish the chilled pie with a rosette of whipped cream before serving.
