These are just so perfect. Creamy, buttery, and smooth. If you have fresh baby Lima beans, all the better, but frozen are just fine.
INGREDIENTS:
16 ounces frozen baby Lima beans
1/2 to 3/4 cup heavy whipping cream
1 1/2 to 2 tablespoons butter
salt and freshly ground black pepper, to taste
PREPARATION:
Cook the Lima beans in boiling salted water as directed on package. I sometimes add about 1/2 to 1 teaspoon of sugar to the cooking water.
Drain well. Add the cream and butter. Taste and add salt and pepper as desired.

Lima Bean & Pork Chop Casserole

4 loin pork chops, cut 3/4 inch thick
3/4 teaspoon of salt
1 teaspoon of dry mustard
1 teaspoon of sugar
Pepper
1 tablespoon of chopped onion
1/4 cup of water or liquid drained from beans
1/2 cup of tomato puree
1 can baby lima beans (1 lb. 4 oz.) drained

Brown chops on both sides in frying pan. Then remove chops from pan. Add 1/4 teaspoon salt, mustard, sugar, pepper, onion, water and puree to drippings and blend well. Add lima beans, stir until well coated, then put them in 4 individual (or 1 large casserole) and top with pork chops. Sprinkle chops with remaining salt and bake uncovered in a preheated oven, 350ºF. 1 hour 10 minutes.

Lima Bean Casserole

2 c. lima beans, soak in water overnight
2 tbsp. butter
2 tbsp. chopped onion
2 tbsp. brown sugar
Several strips bacon, cut in strips and fried

Drain lima beans and add the rest of the ingredients. Put in casserole and bake 1 1/2 hours at 350 degrees. Check and add water if needed.

Easy Lima Beans
Yields: 6 servings

Baby lima beans are steamed in chicken broth. This is a very tasty lima bean recipe that is also low in fat.

cooking spray
1/2 medium onion, finely chopped 1 1/2 cups chicken broth
1 (16 ounce) package frozen baby lima beans

Heat a large saucepan over medium heat, and spray with cooking spray. Saute onions until soft and translucent. Pour in chicken broth, and bring to a boil. Add lima beans, and enough water just to cover.

Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, until beans are tender.

Baked Lima Beans

1 1/2 c. dried lima beans
5 c. cold water
4 slices bacon, cut in pieces
1/2 c. diced celery
1/2 onion, chopped
1/4 c. green pepper, chopped
2 tbsp. flour
1 (10 oz.) frozen pkg. lima beans, cooked and drained
1 1/2 c. canned tomatoes
2 tsp. salt
1/4 tsp. pepper
2 tbsp. sugar
6 tbsp. dark Karo syrup

If using dried lima beans, soak beans in 3 cups water overnight. Add 2 more cups water and boil until tender, about 30 minutes, and drain.

Fry bacon until slightly brown and add celery, onion and pepper. Cook until tender and bacon is crisp. Add flour and stir, then add the rest of the ingredients. Cook until thick.

Place beans in greased 2 quart casserole and pour remaining ingredients over top. Bake at 350 degrees for 1 hour. Can be made a day ahead and rebaked.

Mmmmm...I love lima beans! My mom would boil them with butter or bacon fat or bacon chunks...delish. They're good steamed too if you're not quite as southern ;-)

We Answered:

We grow butterbeans here where I live and they are most of the time green. Cooked fresh they are wonderful.
We also love dried beans. Baby Lima Beans, pintos beans and red beans.
Use any of these they are all great.

Luscious Lima Bean Soup
1 pound dry lima beans
4 cups water
5 carrots, chopped
1 leek, bulb only, chopped
2 tablespoons minced shallots
2 stalks celery, chopped
4 cubes vegetable bouillon
8 cups water
2 tablespoons olive oil

Bring 4 cups of water to a boil. Add dry lima beans, and boil for 2 to 3 minutes. Remove from heat, and allow the beans to sit, covered, for 1 to 2 hours to soften. Drain and rinse until water runs clear, discarding bean water.
In a soup pot, saute vegetables in olive oil until onions and celery are translucent. Add lima beans, and saute for another 2 to 3 minutes.
In the meantime, bring 4 cups of water to a boil. Add the vegetable bouillon to the boiling water, and stir until dissolved. Add broth to the sauteed vegetables and beans. Add remaining water, and allow soup to simmer over a low flame for 1 to 1-1/2 hours. Serve steaming hot.

Baked Lima Beans

Ingredients
2 cn Lima beans 1 tb Molasses
3/4 c Butter 1 tb Dry mustard
3/4 c Brown sugar 1 c Sour cream
1 ts Salt
Directions
Drain lima beans & put into baking dish. Cut butter over the beans. Mix brown sugar, dry mustard & salt. Sprinkle this mixture over the beans. Stir in molasses & then pour sour cream over all. Bake 1 hour at 350.

Baked Limas with Sour Cream Recipe

Serves/Makes: 6
Ingredients:
1 pound dried baby lima beans
3 teaspoons salt
3/4 cup salted butter
3/4 cup brown sugar
1 tablespoon dry mustard
1 tablespoon molasses
1 cup sour cream
Directions:
Soak limas overnight in water. Drain and cover with fresh water. Add 1-teaspoon salt and cook 40 minutes. Drain and rinse under hot water. Place in medium casserole. Dot with butter.
Mix brown sugar, dry mustard and remaining salt together and sprinkle over beans.
Stir in molasses. Cover with sour cream. Mix lightly and bake at 350 for 1 hour.
