Lavender Pizza with Cherry Tomatoes

1 Recipe Lavender Pizza Dough (see below)
Flour
2 Tb Fine Olive Oil
1 c Coarsely grated Mozzarella cheese (approximately 4 oz)
2 - 4 oz Sliced Aged Asiago cheese
1 ½ c Cherry Tomatoes cut in half (Use Yellow tomatoes or mix colors)
½ c Thinly Sliced Yellow Bell Peppers



Make the pizza dough and let rise.

Thirty minutes before baking, place a pizza stone on the bottom shelf of the oven and set oven to 500 degrees.
On a floured surface, divide the dough into 2 pieces and form into round balls. (Put one dough ball aside.) On the floured surface with your hands pat out and stretch dough evenly into a 9-inch round, keeping hands flat. (Do not handle dough more than necessary. If dough is sticky, dust it lightly with flour.)
Dust baker's peel with flour and carefully transfer inch round. Jerk peel once or twice and, if dough is sticking, lift dough and sprinkle flour underneath it, reshaping dough if necessary. Brush olive oil over dough leaving a 1-inch border and sprinkle with Mozzarella cheese. Arrange tomato halves and pepper strips over Mozzarella, then add slices of Asiago on top.
Line up far edge of peel with far edge of stone and tilt peel, jerking it gently to start pizza moving. Once edge of pizza touches stone, quickly pull back peel to completely transfer pizza to stone. Bake pizza until dough is crisp and brown, about 8 to 12 minutes, and transfer with peel to a cutting board.
Cut pizza into slices and serve immediately. Make a second pizza with the remaining ingredients.

Makes 2 9-inch pizzas.


Lavender Pizza Dough
Equipment needed: 2 mixing bowls
2 tsp Active Dry Yeast
¾ c plus 2 Tb Lukewarm water (110 degrees)
2 c Unbleached bread flour
2 Tb Olive oil
½ tsp Sea salt
1-2 tsp dried Lavender (be sure to experiment and find out if you like a lot or a little of the dried Lavender in your crust)



In a bowl, combine the yeast, ¼ cup warm water, and ¼ cup flour. Let it stand for 30 minutes. Add the remaining 1 ¾ cup flour, ½ cup plus 2 tablespoons warm water, olive oil, salt, and lavender. Mix the dough thoroughly and turn out onto a floured surface. Knead until smooth, elastic, and a bit tacky to the touch, 7 to 8 minutes. Place in an oiled bowl and turn to cover with oil. Cover with plastic wrap and let the dough rise in the refrigerator overnight. (This is very important to get the true taste of lavender in the dough.) The next day, let it come to room temperature and proceed with the recipe.



Lavender Biscotti
A home-made lavender treat!
Equipment needed: Cookie sheets, 1 small and 1 large mixing bowl, whisk or hand beater

2 c All-purpose flour
2 tsp Baking powder
¼ tsp Salt
½ c Coarsely chopped macadamia nuts
2 Lg Eggs
½ C Granulated sugar
3 tsp Dried lavender flowers
¼ c Melted butter
2 Tb Honey
1 Tb Lemon rind
Juice of 1 lemon
3 Tb Milk
½ tsp Vanilla or lemon extract

Optional: melted chocolate for dipping



Preheat oven to 325 degrees. In large bowl combine all dry ingredients, lavender and nuts. In a separate bowl, whisk together eggs, sugar, butter, honey, lemon, lemon rind, milk, and vanilla (may use beater on slow instead of the whisk). Add to flour mixture. Stir well. Dough will be soft and sticky. Spoon onto cookie sheet into 2 "log" shapes: approximately 2 " wide. Bake 35 minutes until golden. Remove from oven. Cool 10 minutes. Place on board, cut into 1" wide slices. Place on sides on cookie sheets. Return to oven cook 20 minutes longer, turning once. Cool on rack. Optional to dip or decorate with melted chocolate.

3 tablespoons fresh mint leaves
2-3 tablespoons fresh lavender blossoms or 1 tablespoon dried lavender blossoms
6 cups boiling water
1 liter ginger ale, chilled
1 cup purple grape juice
GARNISH
mint leaf ice cube
thinly sliced orange (or lemons)
lavender flowers
mint sprig
Directions
1MINT LEAF ICE CUBES: To make the mint leaf ice cubes, place one whole mint leaf in each ice cube tray compartment. Fill the tray with water and freeze until completely solid.
2TEA/PUNCH: Place the fresh mint leaves and lavender in a teapot, pour the boiling water over the leaves and brew for 10 minutes. Allow tea to cool completely.
3Strain the tea and add the ginger ale, grape juice and ice cubes. (Fyi: Add the ginger ale just before serving.)
4If serving in a punch bowl, float lavender buds and mint sprigs on top. Garnish each serving with an orange or lemon slice, if desired.
5Don't forget to show off your newly acquired purple tongue!
6Approximately 12 cups.

just as with herbs, the dried stuff is more concentrated. If I remember right the calculation for fresh 3 Tbls and for dried would be 1 Tbls

75g dark brown sugar
2 tbsp dried sweet lavender flowers
1 egg
2 tbsp milk
1 tsp vanilla extract
80g oatmeal
210g plain flour
3/4 tsp baking powder
160g plain chocolate chips

Lavender Chocolate Chip Cookies Preparation:

Method:

Pound the lavender flowers in a pestle and mortar until nicely crumbled. Cream together the butte, sugar and lavender flowers until light and creamy then add the egg, milk and vanilla. Cream together until smooth.

Meanwhile, sift the flour and baking powder into a separate bowl then blend in the oatmeal. Add the chocolate chips to the dry mixture then stir into the liquid mixture. Combine to form a soft dough then drop the batter by the heaped teaspoon onto lightly-greased baking trays. Place in an oven pre-heated to 170°C and bake for about 12 minutes, or until lightly golden.

Remove from the oven and allow to cool on the baking tray for 5 minutes then transfer to a wire rack to cool completely.

Green Tea Chocolate Cake - Japanese Desert

Here is another green tea recipe that I have found along with Green Tea Cookies and Green Tea Ice Cream.
Green Tea Chocolate Cake

INGREDIENTS:

4 eggs
1 3/4 cup flour
1 1/2 cup sugar
3/4 cup butter
2 tbsps maccha powder (green tea powder)
1 tbsp chocolate chips


PREPARATION:

Put butter in a bowl and stir well until soften. Add sugar in the bowl and mix well. Whisk eggs in another bowl. Mix eggs and butter mixture together. Shift flour and green tea powder together. Add flour in the egg and butter mixture and mix. Add chocolate chips in the bowl and mix together. Spread some batter and place baking wax paper inside of a medium loaf pan. Pour batter into the pan. Bake in preheated 360F oven for 35 minutes.

*Makes 4 servings

* Scant 1 cup cream
* 2 pounds white chocolate, finely chopped
* 5 green tea bags
* Green candy food coloring (optional)
* 4 ounces candied ginger, finely sliced

Preparation:

1. Heat the cream in a medium saucepan over medium heat until it starts to simmer and bubble around the edges. Immediately remove from the heat and insert the teabags. Cover the saucepan with clingwrap to intensify the steeping, and let sit for 15 minutes.

2. Meanwhile, melt 1 pound white chocolate over a double boiler or in the microwave.

3. After the tea has steeped for 15 minutes, remove the tea bags and squeeze them over the cream to extract as much flavor as possible. Combine the cream and the melted chocolate in a bowl, stirring gently with a whisk until entirely incorporated. If desired, add a few drops of green candy food coloring. Cover the bowl with cling wrap and refrigerate until firm enough to roll, 3 hours or overnight.

4. Coat hands with powdered sugar and scoop balls of ganache with a spoon. Roll between hands and place on foil-lined baking tray. Continue until all truffles are formed. Return to the refrigerator and chill until firm enough to dip, at least 1 hour.

5. Temper the remaining pound of white chocolate. Add a few drops of green candy food coloring, if desired.

6. Dip the truffles in the melted chocolate one by one, using dipping tools or two dinner forks. Place the dipped chocolates back on the baking tray and, while chocolate is still wet, decorate with slivers of candied ginger. Once all are dipped, place them back in the refrigerator to set. Bring to room temperature to serve.

You can add some dried lavender to your loose tea for a really fragrant lavender tea. But be careful of adding too much lavender to your foods and drinks, it's like eating perfume....and will taste bitter.

Use lavender in place of rosemary in breads.

Use lavender to flavor fish like salmon.

Here's a great trick: put some of the lavender flowers into a zippy bag with white sugar and leave it for a couple of weeks. It flavors the sugar so you can substitute this flavored sugar for plain sugar in recipes for cakes, buns, custards, and cookies.

Put a sprig of lavender in a glass of Champagne or white wine.

Just be sure to NOT eat lavender from florists or nurseries...it's been treated with pesticides and is not safe for food use. It's best to get it from your own (or a friend's) garden, or from a market where it's labeled "food safe".
