Hi, I am from Kerala. The dish you are talking about is called Vendakka Thoran. Here is the recipe:

Lady's Finger Thoran

1) Okra/ Ladys finger - 200 grams
2) Mustard seeds - 1/2 tsp
3) Shallots - 1 Cup
4) Green chillies - 5 (Reduce as per taste)
5) Grated Coconut - 1/2 cup
6) Curry leaves - 8-10
7) Oil - 1 Tbsp
8) Salt - As required

Preparation:

Chop okra into small roundels. Add the chopped shallots, coconut, green chillies and salt to the Okra and mix well. In a pan, heat the oil. When the oil is hot, add mustard seeds. When they splutter, add the curry leaves and the okra mixture. Saute it on a low flame till done.

Lady Fingers
6 large eggs, separated
3/4 cup sugar
2 1/2 teaspoons vanilla
1 tablespoon water
1 1/2 cups sifted cake flour
3/4 teaspoon cream of tartar
1 cup powdered sugar, for dusting

Preheat oven to 400 degrees F.
Line two baking sheets with parchment or wax paper.
Beat the yolks and 1/2 cup sugar on high for 5 minutes until ribbons fall from beater.
Lower speed and beat in vanilla and water.
Increase speed and beat for 30 seconds to thicken.
Sift the flour over this and set aside, without mixing.
In another bowl, beat egg whites until foamy, then add cream of tartar.
Beat until soft peaks form.
Gradually beat in remaining 1/4 cup sugar.
Continue beating until stiff peaks form.
Add 1/3 of the whites to the yolk bowl and fold until all the flour is incorporated.
Gently fold in remaining whites.
Working quickly to avoid deflation, scoop 4 cups into a large pastry bag with a 3/4 tip.
Pipe 3 inch by 1 1/2 inch'fingers' 1/4 inch apart.
They will attach during baking.
Be sure and let the batter fall from the tip, rather than pressing onto the sheet.
If you are making a bottom for a cheesecake, pipe a spiral, ending at about 10 inches in diameter.
Sift the powdered sugar over- the batter will absorb some.
Bake for 8 to 10 minutes until springy to the touch.
Remove to racks and cool slightly.
Remove from parchment with long spatula while still warm.
Or invert disc onto towel-covered rack and reinvert back to plain rack.

3 Egg whites; stiffly beaten
2 Egg yolks, beaten until

1/3 c Cake flour
1/3 c Powdered sugar

1/4 ts Orange flavoring
1/4 ts Salt

Sift sugar. Measure. Fold gradually into egg whites. Carefully fold in
egg yolks which have been combined with flavorings and salt. Sift flour.
Measure and sift carefully. Fold into mixture. Cover a baking sheet with
un-oiled paper. Shape the lady fingers with a pastry tube having each
about 4 inches long, and 1 inch wide. Bake in moderate oven (375 F) 10 minutes. As soon as removed from oven slip from baking sheet, using a wide spatula. Place the bottom of one lady finger on the bottom of another. Lay on waxed paper. Cool. Dust with powdered sugar. 14 servings.

6 Egg yolks
1/4 c Sugar
4 Egg whites
1/2 c Sugar
1/2 c Sifted cake meal
1/4 c Sifted potato starch
Superfine sugar

In a large mixing bowl, beat the egg yolks with the
1/4 cup of sugar until light and creamy.

In a separate bowl, beat the egg whites until foamy,
then gradually add the 1/2 cup sugar beating well
after each addition until stiff. Fold the egg whites
into the yolk mixture.

On a piece of waxed paper sift the cake meal and the
potato starch. Sprinkle the sifted cake meal and
potato starch over the batter and fold in gently.
Line a large cookie sheet with brown paper. Using a
pastry bag fitted with a round tube, pipe the batter
onto the paper to form finger shapes about 1″ wide and
4″ long. Dust with superfine sugar shaken through a
small sieve

Bake for 10-12 minutes in a preheated 375 oven. Using
a wide spatula, loosen from the paper immediately.
Makes about 24.

1/4 teaspoon salt
1/3 cup sugar
1/2 cup sifted cake flour

Beat egg yolks until thick and lemon colored. Beat in almond extract.
Beat whites untill stiff but not dry and gradually beat in sugar until
whites are glossy and very stiff. Fold yolks gently into whites. Fold in
sifted dry ingredients. Drop batter by tablespoons onto ungreased cookie
sheet, forming into fingers 3″ long and 1″ wide. Bake at 350F 10 minutes,
until light brown. Remove from cookie sheet and cool on rack. Makes 3 dozen.
