Kumquat Wine2-1/2 lbs kumquats
2-1/2 lbs ripe bananas
3-1/3 lbs granulated sugar
1 tsp pectic enzyme
1 tsp yeast nutrient
1/8 tsp tannin
7 qts water
Lalvin AC or 71B-1122 wine yeast
The bananas should be very ripe. Slice the bananas, peels and all, into 1/2-inch slices in a 3-qt pot. Add half the water and bring to a boil. Reduce heat and simmer for 30 minutes. Remove scum from surface and set aside to cool some. Put remaining water in another pot and bring to boil. Stir in sugar until dissolved. Meanwhile, cut kumquats in half crosswise and put in nylon straining bag, removing any seeds cut during halving. Save juice released during cutting and put in primary. Tie bag and squeeze in primary to release as much juice as you can. Leave bag in primary and pour sugar-water over it. Strain bananas through nylon sieve, adding the water to primary. When cool, add pectic enzyme, yeast nutrient and tannin and stir to dissolve. Cover primary and wait 12 hours. Add activated yeast and recover. Squeeze bag twice daily for 5 days. Remove bag and squeeze well, adding drained juice to primary. Recover and set aside 5 additional days. Rack into sterilized secondary and fit airlock. Rack after 60 days, top up and refit airlock. Rack again after additional 60 days, stabilize, sweeten to taste, top up and refit airlock. After 10 days, rack into bottles and allow to age 6-12 months. Will continue mellowing with additional aging.

Kumquat Oatmeal Cookies2/3 cups margarine
2/3 cups brown sugar
2 large eggs
1-1/2 cups oatmeal
2/3 cup white chocolate chips
2 cups flour
1 tsp. baking soda
1 tsp. salt
2/3 cup chopped kumquats (pureed)
Beat margarine and sugar until fluffy. Add eggs to the mixture and mix well. Combine oatmeal, flour, baking soda and salt. Mixing well. Add chopped kumquats and chocolate chips. Drop by large teaspoon onto ungreased cookie sheets. Bake 10-15 minutes at 375 degrees or until golden brown. 2-1/2 dozen.

Kumquat Cake
1 lemon cake mix
1 small package of lemon instant pudding
3/4 cup oil
1/2 cup chopped kumquats (pureed)
1/4 cup milk
4 eggs
1 tsp lemon juice
In a bowl, combine the first 5 ingredients and beat well. Add eggs one at a time beating well. Add lemon juice. Pour into greased and floured bunt pan and bake at 325 degrees for 45-50 minutes. Remove from pan and add glaze.

Kumquat Nut Bread
2/3 cup milk
2 beaten eggs
2 tbsp oil
2 cups flour
1-1/2 tsp baking powder
1 tsp salt
1/2 tsp soda
3/4 cup pureed kumquats
3/4 cup chopped nuts
3/4 cup sugar
In a mixing bowl, combine milk, eggs and oil. In another bowl, mix the dry ingredients. Add liquid mixture and stir until moistened. Fold in pureed kumquats and nuts. Bake in a greased 8" x 4" x 2" loaf pan in 350 degree oven for 50-60 minutes. Cool and remove from pan.

Though they are mediterranean countries.The study which ended with the publication of an article proposing the " Mediterranean diet" was based on researches made in South Italy and Crete island . It showed the beneficial influence of olive oil associated with the consumption of a lot of vegetables and fruits, cereals, cheese and only some meat.

i don't know about its uses for cooking, but i've been to my uncle in houston's house many times and they have bunches of kumquat trees...and i've watched everyone pop them in whole. so you don't have to eat them whole.Tony Said:

make kumquat jam.......you can find in the Internet..or kumquat syrup
-> kumquat cut into small pieces. try to remove the cut up seed ( cause the syrup to be bitter).. waste it clean..

-> sugar.
add enough water to cover it boil till everything is soft( about 1/2 hour) .add 1/2 amount of sugar ( boil till the water is thicken...... filter the flesh and keep the liquid ...
Great with soda water, cocktails and etc..
