Hmm I do wonder... He's obviously a great chef but that ketchup business doesn't sit well with me.He's very fond of those three ingredients, isn't he? Very old school.
He says let the ingredients speak for themselves... Then chucks a whole bottle of reduced worcester sauce on them!

A classic tomato sauce is.. Finely diced onion, carrot and celery. Sweat them slwowly to release the flavour, not to colour them. Then add some flour, cook that out for a minute, then add passata. Cook until as thick as you want then season if you want, adding a little sugar will make all th difference. then strain. It'll keep in a steralised jar in the fridge for a week or so.If you want to make your own passata cut the flesh on about 10 tomatoes. Add them to boiling water and pull them out nearly strait away, leave to cool then peel and de-seed. put these in a pan and cook with some stock/water and puree. season with salt, pepper and some hervs (basil or oregano)

HOMEMADE KETCHUP1/2 peck (1 gal) tomatoes
1 lg. onion
1 tbsp. mixed pickle spice
1 c. sugar
1 c. vinegar
2 tbsp. salt
1/4 tsp. red pepper
Mix the first 3 items in a large saucepan and add 1/2 cup water to get the cooking started. Cook about one hour, stirring occasionally, until tender. Put in a cloth bag and drain one hour. Now put the cooked tomato mix in a ricer and process to get your pulp. Add the tomato pulp; sugar, vinegar, salt, and red pepper. Boil this final mix for 10 minutes. Preserve by bottling and capping. Alternatively, freeze it in 8 or 16 ounce packages; upon thawing you will need to beat it into a smooth homogenous mixture again. A unique, homemade taste in ketchup.
OR
HOMEMADE KETCHUP
4 qts. tomato pieces
2 tbsp. salt
3 c. sugar
1 pepper, cut up
2 onions, cut up
2 c. vinegar
1 tsp. mustard
2 tsp. cinnamon
1 tsp. whole cloves
1 tsp. mixed pickling spice
Boil 1 hour, then sieve. Add 10 tablespoons cornstarch (make paste with a little water). Boil until thick and constantly stir approximately 30 minutes and fill jars that will seal.
OR
HOMEMADE SWEET KETCHUP
7 (15 oz.) cans tomato sauce
3 c. sugar
1 1/4 c. dark vinegar
1 1/2 tbsp. whole cloves or allspice, tie in white cheese cloth & place in the ingredients above
Cook all ingredients at medium or low temperature stirring occasionally. Cook slow until thickness desired. Pour into canning jars which seal or place in containers to be refrigerated. Makes approximately 2 1/2 quarts.
OR
HOMEMADE KETCHUP
1 gallon tomato juice
3 to 4 c. vinegar
3 c. sugar
2 tbsp. salt
1 tsp. black pepper
1/4 tsp. red cayenne pepper
Place in large heavy kettle. Cook on high until it starts to boil. Lower heat, but keep boiling. Cook until consistency of ketchup. Place in jars and seal. Bring to boil in canner. Process about 15 minutes.

1 cup coke cola
brown sugar
salt and pepper
preheat oven 350 degrees. Place pork chops in a pan. Mix ketchup and coke cola together and pour over the porkchops. Then sprinkle brown sugar over each porkchop and then salt and pepper. Cook porkchops for 1 hour and then enjoy.
