Bean Soup with Kale
INGREDIENTS
1 tablespoon olive oil or canola oil
8 large garlic cloves, crushed or minced
1 medium yellow onion, chopped
4 cups chopped raw kale
4 cups low-fat, low-sodium chicken or vegetable broth
2 (15 ounce) cans white beans, such as cannellini or navy, undrained
4 plum tomatoes, chopped
2 teaspoons dried Italian herb seasoning
Salt and pepper to taste
1 cup chopped parsley

DIRECTIONS
In a large pot, heat olive oil. Add garlic and onion; saute until soft. Add kale and saute, stirring, until wilted. Add 3 cups of broth, 2 cups of beans, and all of the tomato, herbs, salt and pepper. Simmer 5 minutes. In a blender or food processor, mix the remaining beans and broth until smooth. Stir into soup to thicken. Simmer 15 minutes. Ladle into bowls; sprinkle with chopped parsley.

Whole-Wheat Pasta with Kale

2 tablespoons unsalted butter
2 garlic cloves
1 bunch kale (1 pound), thick stems removed, leaves coarsely chopped
Coarse salt and freshly ground black pepepr
2 cups homememade or canned reduced sodium chicken broth
1 pound whole-wheat spaghetti
1/2 cup finely grated Parmesan cheese, plus more for serving
1. Melt the butter in a large skillet over medium-low heat. Cook the garlic in the butter until golden, stirring frequently, about 2 minutes. Add half the kale to the skillet; cook, tossing the kale until it is just wilted, about 3 minutes. Add the remaining kale; season with salt and pepper. Cook, tossing until all of the kale has wilted, about 3 minutes. Add the chicken broth, and simmer until the kale is tender, about 15 minutes.

2. Meanwhile, cook the pasta in a large pot of boiling salted water, according to the package directions. Drain, reserving 1 cup of the pasta cooking water. Return the pasta to the pot. Add the kale and Parmesan cheese; toss to combine. Season with salt and pepper. Add the reserved cooking water, as desired. Divide the pasta among the plates; top with more cheese.

KALE AND BEAN

1 Tbsp. of olive or canola oil

4 cups of kale chopped if fresh ( you can use frozen 2 or 3 pkgs. or if canned use 2 to 3 cans )
4 cups of chicken or veggie broth
2-15 oz. cans of white beans,any kind
1 can of stewed tomatoes or chopped fresh tomatoes
1 tsp. dried thyme
1 tsp. rosemary
salt and pepper to taste
1 cup of chopped parsley

In a large pot, heat olive oil then add garlic and onion. Sauté these ingredients until soft.Add kale and sauté until wilted.Add 3 cups of the broth, 2 cups of beans, tomatoes, herbs,salt and pepper.Simmer 5 to 10 minutes. Use a blender, or what have you, mix the remaining beans and broth until smooth.I bet your asking why, its to thicken the soup. Mix into soup.Simmer for 15 to 20 minutes. Serve it up in bowls and dress with parsley.

FRESH KALE

1 or 2 packs of kale
1/2 c. barley
Potatoes
Smoked sausage

Preboil kale 3 times. Add barley, potatoes, smoked sausage, and salt and pepper to taste. Takes about 1 hour 45 minutes.

OR

KALE SOUTHERN STYLE

2 lbs. Kale
2 slices bacon, diced
1/2 c. finely chopped onion
1/2 c. water
1 bay leaf
1/4 tsp. ground pepper to taste
4 lemon wedges

Wash Kale thoroughly and strip leaves from the tough center ribs and cut out any blemished areas. In a heavy skillet, lightly brown the bacon. Add the onion, Kale, water, bay leaf, cumin, salt, and pepper. Cover and simmer for 15 minutes or until tender, stirring occasionally. Discard bay leaf and serve with lemon wedges. Yield: 4 servings.

OR

SPAGHETTI WITH ONIONS AND KALE

2 tsp. olive oil
1 onion, sliced and separated into rings
1 shallot, clides
1 clove garlic, crushed
3 c. shredded curly kale
1 c. chicken stock
2 c. cooked spaghetti
Freshly grated Parmesan cheese

Heat a large skillet over medium-high heat. Then add oil, onion, shallot, and garlic. Reduce heat to medium and saute until onion is just wilted, about 5 minutes (be careful not to burn garlic). Add kale and continue to saute until it is moist and has brightened a bit in color, about 1 minute. Then add stock and cover loosely with crumbled foil. Reduce heat to simmer and simmer until most of the stock has evaporated and kale is soft but still a lively green, about 7 to 10 minutes. Stir in paste and continue to simmer until heated through, about 1 minute. Serve hot, sprinkled with Parmesan. Makes 4 servings.

Kale is my absolute favorite green veggie.

Strip the leaves off the tough stems. Toss the stems.
Rinse the Kale leaves. Sometimes they are sandy. Give them a good shake to loose any excess water.
Put about two tablespoons of bacon grease, or butter in the bottom of your pan.
Toss in the Kale, stir to coat with the bacon fat or butter.
Add a little water or broth (1/4 cup) and cook on low until the kale it tender. This takes from 5 to 8 minutes depending on your on how tender you like it.

You can saute some onion in the pan and then add the Kale.
I sometimes throw in crumbled cooked bacon.

Kale is fine in soup and casseroles.

You can add small pieces to salads. But be careful. Raw kale does have a bit of a "bite" to it. I wouldn't use kale and spinach in the same salad.

You can wilt kale leaves and use them in place of cabbage to make Kale (instead of cabbage) rolls.
