To determine if something is a sucker, you need to find the scion (where the rootstock is grafted to the Kaffir var.). Usually nurseries paint a stripe around this, otherwise it looks like two plants have been "glued" together. Any growth that comes from below this point is a sucker.

AROMATIC YELLOW RICE

2 c. long grain rice
1 pt. water
1 1/4 tsp. salt
3/4 tsp. ground turmeric
3-4 whole cloves
1 stick of cinnamon (1 inch in length)
3 bay leaves
3 tbsp. unsalted butter, cut into sm. pats

Put the rice in a bowl and wash in several changes of water. Drain. Pour 2 pints of fresh water over the rice and allow to soak for half an hour. Drain the rice.
Combine the drained rice with one pint water, salt, turmeric, cloves, cinnamon stick, and bay leaves in a heavy pot and bring to boil. Cover with a tightly fitting lid, turn heat to very low, and cook for 25 minutes. After cooking, let the pot cool, while covered, for 10 minutes. Add pats of butter and mix well. Remove the whole spices and serve. Serves 6.

Lemon grass stock:
6 cups Water
1 Stalk lemon grass
4 Pieces dried galangal root
4 Kaffir lime leaves
1 Onion -- cut in half
1 large Carrot -- cut in half
1 Celery rib -- cut in half
Risotto:
3 tablespoons Olive oil
1 tablespoon Thai curry paste --
(panang)
1 tablespoon Chopped garlic
1¼ cup Thai jasmine rice -- rinsed
And drained
14 ounces Can
2 tablespoons Thai fish sauce
1 teaspoon Honey
½ cup Diced sweet red pepper
1 cup Diced tomato
1½ cup Diced oyster, shiitake,
Portobello or -- white
Mushrooms
2 tablespoons Pine nuts -- toasted
1 tablespoon Diced mozzarella cheese
½ cup Half and half -- OR
Evaporated skim
2 teaspoons Thin-sliced kaffir lime
Leaves
½ cup Thin-sliced Thai or --
Regular basil
4 Sprigs basil
Coconut milk

Place water, lemon grass, galangal root, lime leaves, onion, carrot and celery in large stock pot and bring to boil. Cook over medium high heat until stock is reduced to 1 quart and strain. Combine olive oil, curry paste and garlic in a large skillet and saute over high heat until mixture turns red. Add rice, stirring constantly for 1 minute. Add lemon grass stock and simmer 10 minutes, stirring every minute to keep rice from sticking to skillet. Add coconut milk, fish sauce, honey, red pepper, tomato and mushrooms, and cook 5 minutes, stirring every minute. Add pine nuts, mozzarella and half and half, and cook 3 minutes, stirring constantly. Add lime leaves and 1/2 cup basil, and cook 1 minute. Remove from heat. Serve in bowls garnished with basil

There is no perfect substitute for this unique item. You can substitute lime zest for the citrus taste or use dried Thai sweet basil or even dried bay leaves for a woodsy-leaf flavor. Also try lemon thyme, lemon verbena, bergamot powder, lemon or lime leaves.

Recipe for Sweet Potato & Kaffir lime Leaf Soup?

Sweet Potato!!!!


1 large can of candied yams
1 small can of crushed pineapple drained (or not drained)
1/2 cup orange juice (optional)
brown sugar
1 can evaporated milk or (1 cup) 1/2 & 1/2
Butter-1/2 stick or so
Pumpkin pie spice
Bag of marshmallows small or large, no matter

Boil the yams until soft. Drain and return to pan. Add butter, milk, brown sugar and pumpkin pie spice (to taste). If you add the orange or pineapple juices add less milk. This will make it less creamy, but sweeter (I've never done this). Mix with mixer until smooth, like batter. Put in a baking dish, and bake at 350°F for about 1/2 hour, until firm, NOT soupy.

Remove from oven and turn broiler on. Apply one layer of marshmallows on top of the sweet potato mixture, and broil (not too close) until tops of MM are browned--Careful! they'll burn very easily--this is only about three or four minutes, constant attention.

Of course Marshmallows are optional. You can also add any kind of tree nuts (chopped), walnuts, pecans, etc. If you have leftovers, remove the marshmallow meringue, this will make the sweet potatoes soggy, unless you blend them in.



Kaffir lime Leaf Soup!!!


4 peaches, halved and stoned
2 tablespoons dark muscovado sugar
1 teaspoon ground allspice
30 g butter, softened
For the ice
5 limes, kaffir if possible
2 small hot chili peppers, split and deseeded
190 g icing sugar, sieved
450 ml creme fraiche
3 tablespoons ice water

We Answered:

I am a former chef and while they are not all edible, with Kaffir LL they are used for flavouring in soups,sauces and in marinades for curry's, and sometime as bashed into Thai curry pastes, like lemon leaves they can be used to perfume things and in potpourris.

In Jamaica we used the lemon leaves when grilling fish, and I have seen Kaffir LL trees/bushes at garden centre, the fresh are way more better than the dried ones, I worked in Asia and used both and have both them here in Toronto Canada in my Asian grocery stores, in fresh and dried forms. And the freeze well if you get fresh one and use them a bit at a time.
