My hubby and I LOVE these, in fact we just grilled some yesterday!Armadillo Eggs:
Simple ingredients-- just jalepenos (however many you'd like to make), bacon (thick or thin sliced), and cream cheese (either a spread or a block), and also some toothpicks.
Slice the tops off the peppers and scoop out the flesh and seeds from the inside using a steak knife. Rinse well, and be sure to wash your hands in between to be sure you're not getting jalepeno juice all over your kitchen (or rubbing it in your eyes!). Then with a small spoon, scoop spoonfulls of cream cheese into the jalepenos and pack it in as good as you can ( I use the other end of the spoon to press it in). Then depending on the thickness of the bacon, and how large your peppers are, use either one whole piece per pepper, or just half a piece. Starting at the bottom, wrap the bacon tightly around the pepper, stretching it at the top so that it folds over the top a little (this helps keep the cream cheese in, although it will still stay in alright even without the bacon over the top). Then take one or two toothpicks and stick it through the pepper to keep the bacon wrapped. When they're all ready to go, you can stick them in the fridge up to a couple days to cook later, or you can have the grill ready and cook now. When ready to cook, wrap up to 8 or 9 peppers in one large sheet of foil. Place them close together, but not overlapping, on one half, and then fold the other half over and pinch around the edges. This can be placed right on the grill! Cook for 10-15 minutes, flipping half way through and be sure the bacon is done. You can also place them directly on the grill after they are mostly done cooking, if you want to give them some grill marks on the outside. This recipe is so simple but absolutely delicious, and perfect as a side to any cookout meal!!

Hi there, you over cooked them and that is why the cheese was gone, also you need something else with that cheddar to emulsify it so its not so greasy as cheese has alot of milkfat in it. The best thing to coat the peppers with is cornflake crumbs!!!!!!!!!Sounds crazy, but that IS the secret ingredient to the coating of most crumb cover foods CHANGE FROM BREADCRUMBS TO CORNFLAKE CRUMBS, here in canada where i live i can go buy a box of cornflake crumbs but it is actually ALOT cheaper to buy a box of cornflakes cereal and squash them yourself. Also you can put whatever spices you wish in the cornflake crumbs, also coat the peppers with scrambled egg. dip the peppers in the egg, and then the cornflake crumbs. Now for the filling the best filling for the poppers is actually creamed cheese. Philli i find is the best and pack them full of it( before coating them of course!! So of course these can also be stuffed with some jalepeneo havarti, or a smoked gouda which is fabulous in the peppers! Be creative and put whatever cheese you like and the secret is not to over cook them, and cook them slowly not on a high oven ( like the store bought brands) that way your cheese gets nice warm and gooey without evaporating and being left with nothing, so i would say on about a 275 oven, i know it sounds kinds low, but do that to start then maybe if you can;t stand it lol, turn them up maybe to 300, but the slower the better cause that way the cheese melts NOT DISAPPEARSwell i hoped this helped , i use cornflake crumbs to bread chicken, pork, in my meatballs, and hamburgers, meatloaf, any meat you want to bread, try breading tomatoes with egg and cornflake crumbs and fry quickly in some oil, then, top with some parmesean cheese, and fresh ground pepper! absolutely wonderful with a barbequed steak Remember be creeative and try dipping the poppers with ranch dressing, or some salsa and guacamole, good luck

How can I make killer Jalapeno Poppers? Any easy recipes? We Answered:
Here is a couple of other recipes that don't call for those incredients.12 fresh jalapeños
3 ounces coarsely grated Cheddar (1 cup)
3 ounces coarsely grated Monterey Jack (1 cup)
1 teaspoon hot sauce
3 large eggs
1 cup plain fine dry bread crumbs
2 teaspoons dried oregano
About 4 cups vegetable oil
Equipment:
a deep-fat thermometer
PreparationCut a lengthwise slit from stem to bottom of each chile. Make a crosswise incision at stem end, forming a T.
Pry open enough to hold back long cuts (to expose ribs and seeds), then devein and seed using tip of a paring knife and kitchen shears.
Stir together cheeses, hot sauce, 1/4 teaspoon pepper, and 3/4 teaspoon salt.
Fill chiles with cheese mixture, pressing seams closed after filling, so that cheese is compacted and chile retains its shape.
Lightly beat eggs in a small shallow bowl. Stir together bread crumbs, oregano, and 1/4 teaspoon each of salt and pepper in another shallow bowl.
Dip chiles in egg, letting excess drip off, then coat with bread crumbs, transferring to a work surface. Repeat coating with egg and crumbs to form a second layer.
Heat 2 inches oil to 325°F in a medium saucepan. Fry chiles in 3 batches, stirring occasionally, until golden brown all over, 5 to 6 minutes per batch. Transfer to several layers of paper towels to drain. Return oil to 325°F between batches.

Grilled Jalapeno Poppers Recipe
These are delicious as appetizers or include them on your beef or chicken kabobs. The smokiness of the bacon and the smokiness of your grill's charcoal is a wonderful combination. The cheese chills out the heat of the jalapeños leaving them just slightly hot. Dip them in Ranch dressing to chill the heat even more. Cream cheese is a perfect substitute for neufchatel cheese.
50 min | 30 min prep
24 Poppers
12 fresh jalapenos
1 (8 ounce) package neufchatel cheese or cream cheese
12 slices bacon
Cut peppers in half.
Use a spoon to remove the seeds and white membranes.
Fill each half with the cheese.
Cut the bacon slices in half so that you have 24 shorter slices.
Wrap each cheese stuffed jalapeño with a bacon slice; secure with toothpicks if you need to or slide them on skewers.
Grill over hot coals until the bacon is crispy and browned, turning every few minutes (stay with them and watch for flare ups from the dripping bacon fat or they will burn); grill for about 15 or 20 minutes.
The bacon should be crisp, the jalapeño crisp tender and the cheese should be hot.

We do poppers similar to the girl above, but we bought a popper holder on line. We cut the tops off, and gut them. Then layer the insides with cream cheese, turkey bacon, and shredded cheese until they are full. poke small holes on the bottoms, then place in holder, and place on grill. Usually about ten to fifteen minutes, depending on hot the grill is. We opted to use the turkey bacon because the pork takes longer to cook, and it makes a mess. Turkey bacon even tastes better. You can also use shrimp or whatever your heart desires. You can goggle popper holders, I believe I got mine from a store in Texas. I found this site that has the same holder as I have. http://sammcgees.comLeslie Said:
