yes, I've done it many times. 1/4 cup water and then depends on how much coffee flavor you want and what you're making. I've used it for cookies and mousse. So a few teaspoons for light and a tablespoon + for more flavor.

I'd use a couple tsp of instant coffee granules, or abotu 3 Tbsp of cooled brewed coffee. I have never seen coffee extract, and would never buy it if I did!

Great question! Though it may not taste exactly the same, use the darkest roast of instant you can find and use double the amount . Do not increase the amount of liquid to compensate - this will give you the higher concentration of coffee oils that you would normally get with Espresso Powder. I think this will work just fine.

You can scale this down to use the coffee you have:

KAHLUA
1 pot coffee, preferably using an automatic coffee maker
1 bottle vodka
1/2 bottle brandy
2 cups sugar, to taste
1 vanilla bean
OR
4 tablespoons of good vanilla extract
1 teaspoon salt, to taste

Directions:

Brew the coffee very strong, and allow it to sit on the hotplate until about half of it has evaporated. If you do not have an automatic coffee maker, this can be done over the stove, but it is critically important to never let the coffee ever come near a simmer. if it does, it has burned, and you can basically toss it. After reducing by half add the sugar and vanilla bean, and let it sit for about an hour, until it has cooled to room temp. You may want to only add about half the sugar you think you will need, and add more, if it is needed, after it has aged.

Add the vodka, brandy, and salt, and stir well, and let it sit for another hour. Stir it briskly again, and put it in a glass bottle. I have found that, depending on the amount of sugar used, you should be able to fit it into a gallon bottle. Do not, however, put it in a bottle that is too big, as many of the volatile oils from the coffee and vanilla will evaporate, instead of suffusing into the Kahlua. Allow it to sit for about 2-3 months, and sample it. It is at this point you will want to add more sugar, if it is needed. If it tastes good, it is ready, if it needs more sugar, give it another week.

Some variations- Flavored coffee works fairly well, and you can try different sugars (white, cane, brown, tobago, corn syrup, and molasses). Try non dairy creamers, in different flavors, sucessfully

~ Coffee smoothie, throw the coffee into a blender with ice, and milk & sugar to taste.

~ COFFEE COOKIES
a.. 2 cups brown sugar
b.. 1 cup shortening
c.. 2 eggs
d.. 1 cup cold coffee
e.. 1 tsp. baking soda
f.. 2 tsp. baking powder
g.. 4 cups flour
h.. 1 tsp. vanilla
Directions

Bake at 350 degrees F for 10-12 minutes. Let cool and frost.

Frosting: Heat to a boil 1/4 cup milk and 1 Tbs.. margarine or butter. Remove from heat and stir in 1 lb. powdered sugar, 2 Tbs.. peanut butter and 1 tsp. vanilla.

If frosting starts to set up while you are frosting the cookies, add just a touch of milk until you get the consistency again. The frosting is what really makes these cookies. And don't forget to have one with that next cup of coffee or big glass of milk. Betcha can't eat just one!



COFFEE ICING
2 cups confectioners' sugar
1/4 cup butter, softened
3 tablespoons strong brewed coffee
1 teaspoon vanilla extract

DIRECTIONS
Beat together confectioners' sugar, butter or margarine, coffee, and vanilla until smooth. Add more liquid or confectioners' sugar as needed.

Cappuccino Smoothie Recipe

One Scoop of Vanilla Protein Powder
2/3 cup water
1 1/2 teaspoon instant coffee
2 drops brand or rum extract
Dash cinnamon
4-6 ice cubes

Combine all ingredients and blend until smooth.


Iced Chai Recipe

One Scoop of Natural Flavor Protein Powder
1/2 cup Chai Tea Concentrate
1/2 cup cold vanilla soy milk
4-6 ice cubes

Combine soy milk, Chai tea concentrate and protein powder and blend until smooth. Place ice cubes in a glass and pour Chai tea blend over top.


Orange Cappuccino Dessert Smoothie

Try this one for dessert!

One scoop of orange fiber shake
2/3 cup of water or milk
1 tablespoon of instant espresso powder
3 tablespoons unsweetened cocoa powder
One scoop low fat vanilla ice cream


Combine all ingredients and blend until smooth.


Choco Mint Smoothie

One scoop chocolate protein powder
8 ounces ice cold water
2-3 drops of peppermint extract
1/2 teaspoon instant coffee
3-4 ice cubes


Blend until smooth.



Mocha Smoothie

One scoop chocolate protein powder
2/3 cup water
1 teaspoon instant coffee
4-6 icecubes


Blend until smooth.

We Answered:

You can but....instant coffee will dissolve, and the regular coffee grounds won't. If you don't want the grounds in your recipe, you could strain them through a fine mesh sieve. Or you could make some coffee and reduce it by boiling it for a while.
