there are as many salsa recipes as there are cooks, but i'll share mine with you! it can be adjusted according to what you have on hand, or your personal preferences.

1 can rotel tomatoes & chilies, drained
1 can diced tomatoes, drained
2-3 cloves fresh garlic, or to taste
2 jalapeno peppers, seeded and chopped
1 small yellow onion, diced
1/3 bunch fresh cilantro
1/2 tsp salt
fresh ground pepper, to taste
red pepper flakes, chili powder, and cumin, to taste

pulse all ingredients in food processor or blender until you reach the desired consistency. taste and adjust seasoning. store in an airtight container in the fridge, will last several days. flavor improves after a few hours.

hot sauce is your friend. don't be afraid of it. use it on everything.

If you use original franks red hot they wont be too hot.

How about vegetarian burritos or enchiladas?

Cook the brown rice, after it's cooked add the salsa, green peppers (chopped) and corn. Just let the heat from the rice cook the veggies. Cook the refried beans separately.

You can put these items in the tortillas as a burrito filling.

OR

Don't add all the salsa to the rice just some of it. Fill the tortillas like burritos, lay the burritos in a pan side by side, pour the rest of the salsa over them and put the pan in a pre-heated oven for 15-20 minutes at 350 degrees. Or put them on a plate, cover with the salsa and put in microwave on high for 3-4 minutes.

Cayenne is better. It is essentially super fine red pepper flakes. But don't saute it in oil (most recipes call for pepper flakes to be sauted), add it to taste at the end of the dish.

You don't want to use chili powder because it isn't made of chiles. It's a blend of spices meant for making chili...

Please don't listen to devil dogs...the second name for cayenne pepper is ground pepper. And chile flakes are often called crushed red pepper...It all comes down to how you use it rather than what it is. You'll be fine as long as you taste test.
