To start with, it's a good idea to substitute up to half of the sugar in a given recipe. Once you've experimented more and have a better handle on how it works, you can try a higher percentage of honey. Here are the principles of substituting honey for sugar:

Up to one cup, honey can be substituted for sugar in equal amounts. For example, you can substitute 1/2 cup of honey for 1/2 cup of sugar called for in a recipe. Over one cup, use about 2/3-3/4 cup of honey for every cup of sugar. This is because honey is actually sweeter than sugar.

Honey is a liquid, so you'll need to reduce the liquid in the recipe a little. Do this at a rate of 1/4 cup less liquid for every cup of honey used in the recipe.

Honey is also a little acidic. To counter-act this, add 1/2 teaspoon of baking soda for every cup of honey used.

Honey causes baked good to brown more quickly, so reduce the oven temperature by 25 degrees F and watch carefully as the time gets close.

Each sweetener will change the texture of the cookie. For example White sugar makes a cookie crisp, substituting brown will make a soft cookie. I suspect your liquid ingredients will make mushy cookies. You may want to really think about what you want. Are you against using white sugar for a reason? If your goal is to make good cookies, use sugar. If you want to experiment with other sweeteners, have a ball, adjust your dry ingredients to try to keep texture/sweetness balance. If you have heard some strange rumor about sugar being bad... you are on your own. (it may help to do some real research on your own).. Just sayin. I could care care less. My goal is to make delicious food.

Honey Bars

* 1 1/3 cups all-purpose flour
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 4 eggs
* 1 cup honey
* 2 teaspoons almond extract
* 1 cup dates, pitted and chopped
* 1 cup chopped almonds
* 1/3 cup confectioners' sugar for decoration


1. Combine flour, baking powder and salt and set aside. Beat eggs in a large bowl until thick and lemon colored. Beat in honey and almond extract.
2. Gradually add in dry ingredients blending well. Stir in dates and almonds. Spread evenly in a 13 x 9 inch greased pan.
3. Bake at 350 degrees F (175 degrees C) 12-15 minutes until lightly brown on top. Cool 2 minutes in pan. Cut into bars. When cool, sprinkle with confectioners' sugar.


Honey Brownies

* 1 1/3 cups all-purpose flour
* 1/2 cup unsweetened cocoa powder
* 1 cup white sugar
* 1 1/2 teaspoons baking soda
* 1/4 cup vegetable oil
* 1/2 cup water
* 1/3 cup honey, warmed slightly
* 1 teaspoon vanilla extract
* 1 1/2 teaspoons distilled white vinegar
* 1/2 cup semisweet chocolate chips

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch pan.
2. In a medium bowl, stir together the flour, cocoa, sugar and baking soda. Make a well in the center and pour in the oil, water, honey, vanilla and vinegar; mix well. Fold in chocolate chips. Spread evenly into the prepared pan.
3. Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when lightly touched. Let cool in the pan for at least 10 minutes before cutting into squares.

Greek Honey Cake

* 1 cup all-purpose flour
* 1 1/2 teaspoons baking powder
* 1/4 teaspoon salt
* 1/2 teaspoon ground cinnamon
* 1 teaspoon orange zest
* 3/4 cup butter
* 3/4 cup white sugar
* 3 eggs
* 1/4 cup milk
* 1 cup chopped walnuts

Syrup

* 1 cup white sugar
* 1 cup honey
* 3/4 cup water
* 1 teaspoon lemon juice

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. Combine the flour, baking powder, salt, cinnamon and orange rind. Set aside.
2. In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the milk, mixing just until incorporated. Stir in the walnuts.
3. Pour batter into prepared pan. Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool for 15 minutes, then cut into diamond shapes. Pour honey syrup over the cake.
4. For the Honey Syrup: In a saucepan, combine honey, 1 cup sugar and water. Bring to a simmer and cook 5 minutes. Stir in lemon juice, bring to a boil and cook for 2 minutes.

You can use honey in place of lots of sweeteners. Use it to make homemade vinaigrette or in tea or add it to desserts. If your husband isn't allergic to nuts the easiest way to get him to eat honey is baklava. It is layers of filo dough with butter and honey and nuts...it's delicious! You can make cakes and cookies or even add it to savory dishes when you'd normally want a bit of sweetness like to cut the acidity of tomato sauces. I mix 4 tablespoons of honey with 1/2cups lemon juice and 1/4 cups melted butter and 2 tablespoons of lemon pepper seasoning and 1 tablespoon garlic powder then baste chicken breasts while roasting them in the oven. Serve it over rice cooked with chicken stock and lemon juice, about 2 tablespoons of lemon juice to every cup of chicken stock and I add about 3 tablespoons of honey to the rice as well to cut the acidity of lemon juice. It's terrific with green beans or steamed broccoli or sauteed spinach.
